Sometime back, my parents and parents-in-law were used to eating 'amrutaaharam' for dinner as part of a special diet. It is basically all raw vegetables with a little honey and a little Jaggery. It is supposed to be a cleanser for our body when combined with a particular regimen. Anyways, this vegetable salad is made on similar lines but a savory version and much more palatable to many folks!


This salad was introduced to us by Jaya on her husband's insistence. Since then, we have been hooked on it. I should say addicted to it. This can be prepared with any vegetables on hand and tastes just as interesting! Here is how we eat it as an accompaniment to rotis.




Ingredients - 


Carrot Grated 1 cup
Zucchini Grated 1/4 cup
Cabbage Grated 1/4 cup
Lettuce Grated 1/2 cup
Cucumber finely chopped 1 cup
Tomato finely chopped 1 cup
Onion finely chopped 1/2 cup (Optional)
Coriander leaves chopped 3 Tbsp
Green Chillies 2  (or as needed) 
Mint leaves 1 Tbsp
Curd/Yogurt 1 cup
Salt as needed


Method Of Preparation - 


In a big mixing bowl, add all the grated vegetables and add salt.


Make a paste of Mint leaves, Coriander leaves and Green Chillies adding a little yogurt if required.


Just before serving mix this green paste to the grated vegetables and mix well. 


Enjoy with Rotis or just as salad!! Easy wasn't it?
