Cabbage-Palak Curry

After yesterday's Orange Cupcakes, I was wondering what I can post for the last day of this edition of the blogging marathon. This curry piqued my interest when I was skimming through Raghavan Iyer's '660 Curries' and I also had to cook something for lunch to go with Dal. Don't you think this combination of Cabbage and Spinach is very unique? I did and so wanted to give it a try.

The flavors blended in perfectly and most importantly mustard seed powder was a very new addition to this kind of a curry for me. My kids liked the combo very much which means this would be made often in my kitchen!

cabbage-palak curry

Ingredients -

Cabbage, shredded 2 cups
Palak/Spinach, shredded 2 cups
Peanuts, roasted handful
Coriander Seeds, Cumin, Mustard Seeds, powdered 1/2 tsp each
Ginger, chopped 1 Tbsp
Green Chillies 2-3 (Or as needed)
Lime Juice 1-2 Tbsp (or as needed)
Turmeric 1/4 tsp
Salt 1 1/2 tsp (or as needed)
Oil  Tbsp

Method Of Preparation -

Coarsely pulse the peanuts in a food processor or using mortar-pestle and set aside.

Also make a coarse paste of ginger and green chillies.

Heat oil in a medium saucepan, add the coarse peanuts, ginger-chilli paste and saute adding in the coriander seeds-cumin-mustard powders. Stir for a few seconds and pile in the cabbage.

Mix well so the spices coat the cabbage. Add 1/2 cup of water and cover. After the cabbage is fork-tender (in about 10 min), add the shredded palak, cover and cook for 7-8 min.

Remove from fire and squeeze in some lime juice.

Serve with Rice/Roti.
