I had an idea of making broccoli soup for a long time now and the weather suited us just in time! I made this today just when the heavens opened up and so it was 'heavenly' sipping the hot soup and watching the rain!! The kids preferred it cold, though.
Check this soup as part of Day 3 Week 2 of BM #29 under the 'Green' colored entry!
Ingredients -
Onion, finely chopped 1/2 cup
Broccoli florets about 3/4 lb
Milk 1 cup
Garlic Salt or regular Salt to taste
Pepper to taste
Butter 2 tsp
Method Of Preparation -
In a heated pan add butter, saute onions until they are translucent.
Add in the broccoli florets and a cup of water or vegetable broth. Cover and let the florets cook for about 5 minutes.
Using a stick blender (or transfer into a regular blender), puree the mixture and add milk to it. Sprinkle garlic salt and pepper to taste. Let it simmer for a couple of minutes.
Remove from fire. Serve it warm.
