Sweet Potato Poori

I had too many things on my mind and was in a state of confusion as to what I should be posting for Day 3. Here again a friend of mine, Shalaka, helped me out and suggested that I should try out these pooris.

They turned out very good and my older one enjoyed them for an after school snack. I made some crunchy for the little one and she was immensely pleased! So my entry for Day 3 Week 2 of BM #34 is here..


Ingredients - 

Sweet Potato boiled and mashed 3/4 cup 
Jaggery 1/4 cup
Wheat Flour 1 cup
Salt as needed
Cardamom Powder 1/4 tsp
Warm water to knead the flourOil to deep fry

Method Of Preparation -

Melt the jaggery in a teaspoon of water and strain for impurities if needed.

In a mixing bowl, add the mashed sweet potato, the melted jaggery, salt, cardamom powder, wheat flour and knead into a soft dough adding as much water as needed. Cover and set aside for 15-20 min

Divide the dough into 18-20 equal portions.

Roll each portion into a thin 3 inch disc and cover. [If you have help the rolling and frying can be done simultaneously else roll a batch of pooris and cover. And fry them all later.]

Heat the oil and gently slide each of the prepared discs, one at a time and cook on both sides. Remove onto paper towels to drain excess oil.

Continue till all the pooris are done.

Serve them warm.
