This week I shall post some lentil based dishes which are popular at home. I was going through all my drafts and realized that I hadn't posted this popular dal from my home state. 

Growing up in rural, drought hit areas in Andhra Pradesh, we had limited access to a variety of vegetables. So we had to rely on some veggies like the yellow cucumber, spinach and such vegetables. That was when I remember we used to have this dal every other day. I got so fed up of this vegetable that I had forsaken this dal as well. :)

Now living in this country, we fondly consume this vegetable in its variety and enjoy it as well.
Ingredients - 

Toor Dal 1 cup
Dosakaya/Yellow Cucumber peeled, seeded and diced 1 cup
Salt, Turmeric, Red chili powder, Green chilies as needed
Coriander leaves finely chopped
Seasoning (Oil 2 tsp, mustard seeds 1/2 tsp, Urad Dal 1/2 tsp, Curry leaves few, Asafoetida 2 pinches)

Optional - Roasted Methi Powder 1/2 tsp, Dhania Powder 1/2 tsp

Method Of Preparation -

In a pressure cooker, add the washed toor dal, chopped yellow cucumber, salt, green chilies, turmeric and about 3 cups of water.

Cook for about 2 hisses of the pressure cooker. 

After the cooker cools down, add in the remaining spices if using, prepare the seasoning and add it to the cooked dal.

Garnish with chopped coriander leaves and serve it with steaming rice and ghee. A side with a pickle will make it a delightful meal.
