Day 2 Week 1 of BM# 54 -
Check out these hearty and nutritious Quesadillas which are very popular at home both with the kids and adults.
Ingredients -
*Red Kidney Beans / Rajma soaked and boiled 1 cup
Taco Seasoning 2 tsp
Tortillas 7-8
Guacamole 1/2 cup
Corn, steamed 1 cup
Cheese, Shredded as needed
*Canned beans can also be used.
Method Of Preparation -
In a heated pan, add the boiled red kidney beans and sprinkle the taco seasoning, and gently mash the beans. Remove from heat.
To assemble the quesadilla, heat a griddle/grill pan, place a tortilla on the griddle/grill pan, apply guacamole as needed, place some red bean filling, and corn on one half of the tortilla. Sprinkle some cheese and fold it into half.
The heat will melt the cheese and hold the tortilla together. But I found that cutting the quesadilla into a smaller piece makes it easier to flip it over and cook on the other side.
Remove and serve it warm.
