Malpua With Rabdi

Day 2 of BM 56 - 
The ever popular Malpua had been in my list for a long time. It is a very popular dessert from the Eastern region of India. I had some disasters with it couple of times a few years back and it just eluded me..

Then came the post at Rak's Kitchen about the Malpua with Wheat Flour which inspired me to try it again as it sounded pretty straight forward and so here it is.

Moreover, due to a mix up in the order of the themes, I had a last minute panic attack. I had none of the posts for week 1 ready and I had only about 36 hours before I could cook, click, draft and publish. So I had to make huge changes to the incomplete list I had noted down earlier. 

But I am so glad I made the changes as we all loved this dessert.

Ingredients - 
For Malpua - 
Wheat Flour 1/2 cup
Sugar 1/4 cup
Cardamom Powder 1/8 tsp
Saffron a pinch
Salt a pinch
Baking Soda or ENO fruit salt a pinch 
Oil/Ghee to shallow fry (I used 2-3 Tbsp)
For Low Fat Rabdi - 
Milk Powder 1 cup (Low fat)
Milk 1 1/2  cups (divided use)
Sugar 2-3 Tbsp (I felt 3 Tbsp was overly sweet)
MTR Badam Powder 1 Tbsp (Optional)

Saffron a pinch 
Cardamom Powder 1/4 tsp (Optional - I didn't use)
Nuts of your choice for garnish



Malpua With Rabdi

Method Of Preparation -
For Malpua - 
In a mixing bowl, add all the ingredients for Malpua and slowly add water to make a thick batter. (Add the ENO fruit salt in the end)

In a pan, add a little oil and pour a big spoonful of batter. Let it cook like a pancake, flip it and make sure there is adequate oil to cook it.

Remove of paper towels. Continue with the rest of the batter to make more malpuas.

Make sure that the heat is constantly in medium. I found that the pan gets smoky hot in a while when I had to reduce it a little to avoid burnt Malpuas.

For Low Fat Rabdi - 
In a microwave safe bowl, add the milk powder and about 1 cup of milk and whisk well.

Cook in the microwave in 30 sec intervals until it resembles khoya. It took me about 6-7 min.

Add sugar, cardamom powder, badam powder (if using), and the remaining milk. Cook for 4-5 min and blend it into a smooth mixture.


In a serving plate, arrange the malpuas and pour the hot/warm rabdi over them and devour!!
