Bhendi Fry With Nuts

I recently discovered that both of my kids have grown to like Okra/Bhendi in all its variety. This simple fry is another attempt to let them have their favorite vegetable with nuts. I find that adding powdered nuts enhances the flavor. 


Bhendi Fry With Nuts



Ingredients -


Okra / Bhendi chopped 3-4 cups
Peanuts roasted handful
Almonds 4-5
Coconut grated 1 Tbsp
Coriander leaves chopped 2 Tbsp
Turmeric 1/4 tsp
Salt as needed
Red Chilli Powder as needed
Amchur Powder (Dry Mango Powder) as needed
Oil 1 Tbsp


Bhendi Fry With Nuts


Method Of Preparation -


In a heated wok/kadai, add Oil and the chopped Okra and Turmeric and fry until they are partially cooked.


Meanwhile powder roasted peanuts, almonds, coconut and coriander leaves.


Sprinkle the powder along with some salt, amchur powder and red chilli powder.


Fry until the okra is tender and the stickiness is gone.


Remove from fire and serve hot.


Preparation Time 20 min 
Serves 3-4

  12. Its really wonderful that the green color of bindi remains yet it's cooked and crispy:) i do add peanuts, but powdering them is a new idea:) almonds wud b a wonderful addition!
