Sindhi Sai Bhaji

Here is yet another delightful vegetable-lentil medley which has already become a family favorite. 
This is supposed to be a traditional Sindhi Variety which we have since adopted :).

There are so many Sindhi Dishes which I have bookmarked and made some too. I am sure I will get another opportunity to post those !

Ingredients - 

Mixed Vegetables (I added Chow Chow, Carrot and Potatoes) 2 cups
Spinach, chopped 1 cup
Tomatoes , chopped 1/4 cup
Onion, chopped 1/2 cup (I didn't use)
Spring Onion, chopped 2-3 Tbsp
Kasoori Methi 1 tsp
Chana Dal 1/2 cup
Green Chillies-Ginger-Garlic paste 2 tsp (or to taste)
Salt and Red Chilli Powder to taste
Seasoning (Oil 2 tsp, Cumin seeds 1/2 tsp and Minced Garlic)

Method Of Preparation -

Pressure cook all the vegetables (Chow Chow, Carrot, Potatoes, Tomatoes, Spinach, Spring Onions and onions if using), Chana Dal, Kasoori Methi, Salt, Turmeric and Green Chilli-Ginger-Garlic paste.

Mash the dal mixture if preferred. I opted to leave it as is.

In a heated pan, add oil and cumin seeds. Saute minced garlic and season the dal. I opted to transfer the dal into the seasoning and simmer it for a few more minutes.

Serve it with Rice and enjoy!
