Pineapple Mint Mojito

Day 3 Week 2 of BM #54 - 

Here is a fantastic cooler appropriate for all ages on a hot summer day. This Mojito is so versatile that the ingredients can be altered as needed or as per availability.

Instead of Pineapple Juice, Mango, Orange and/or Strawberry juices can be substituted. Spinach Juice can be added as well. Each of the above juices gives a different flavor and makes a delightful drink. Even the sodas can be adjusted/substituted as needed.

My personal favorite happens to be mango-orange-spinach :). Thanks to Pooja for treating us to this fantastic coolant and also letting me take pictures.

Recipe Source Pooja
Ingredients - 

Pineapple Juice 1 cup
Lemonade 3 Cups
Ginger Ale 1 12 oz can
Lime/Lemon flavored Soda 1 12 oz can
Mint Leaves coarsely crushed few
Lemon Wedges few
Lime/Lemon Zest 1 tsp
Ice Cubes few


Pineapple Mint Mojito

Method Of Preparation -

Mix all the ingredients in a pitcher and let it sit for a few minutes. Taste and adjust the flavors as preferred.

While serving, wet the rims of the glasses and dip the wet rims in salt. 

Pour in the Mojito making sure there are some crushed mint leaves and lemon wedges in each glass.
