BM #118 Week 2 Day 1 - 

This week I shall be showcasing dishes from three different states. Today's kadhi is from the state of Rajasthan.

We are great fans of yogurt based dishes and so kadhis in all their variations are welcome. This version has become our new favorite kadhi until we taste another variation. :)

Ingredients - 

Kala Chana washed, soaked and boiled 1/4 cup
Yogurt 1/2 cup
Besan/Gram Flour 1 Tbsp
Turmeric powder 1/4 tsp
Red Chilli Powder  1/8 tsp ( adjust to your taste)
Green Chilies, slit 1-2 
Salt to taste
Seasoning (Ghee 2 tsp, Mustard seeds 1/4 tsp, Cumin seeds 1/4 tsp, Curry Leaves few)
Coriander leaves finely chopped for garnish


Here in the Rajasthani thali we have 1.Lahsun ki Chutney, 2.Boondi - Kakdi Raitha, 3.Gatte Ki Sabji, 4.Kala Chane Ki Kadhi, 5. Sabz Jaipuri, 6.Papad Ki Sabji, 7.Dal Tadka, 8.Rice, 9.Poori, 10.Phulka, 11.Tawa Pudi, 12.Chaas, 13.Moong dal Vada, 14.Churma Laddu, 15. Onion-Tomato Salad

Method Of Preparation -

Wash and soak Kala Chana for 6-8 hours.

Cook the kala chana in a pressure cooker for 2-3 whistles. [I cooked in the Instant Pot for 9 minutes on pressure cook mode and NPR]. 

In a bowl whisk the yogurt with 1/2 cup of water, salt, turmeric, and besan. Keep it aside.

In a heated pan add ghee. Add mustard , cumin seeds and curry leaves. Add green chilli and saute for a few seconds.

Now add the pressure cooked and drained kala chana and saute.

Add red chilli powder and mix them well.

Now pour in the curd mixture and simmer the flame .

Let the kadhi boil for a few minutes.

Once the kadhi thickens a bit, garnish with coriander leaves and remove from heat.

Serve it as part of a meal.

  5. The thali looks so delicious Harini and this kadhi is something I would like to add to our lunch menu.
