BM #116 Day 1 -

We, the BM group have embarked on yet another Mega Marathon with 26 posts in the month of september. This was postponed from April 2020 owing to the Pandemic. We are glad to be resuming our Mega Marathon. 

In this edition we are off on saturdays and each week there will be a different theme. So we have the first and last weeks of September with 4 days each and the remaining 3 weeks with 6 days each.

This week I will be posting different types of platters. Today it is the High Tea Platter with Irani Samosa, Eggless Whole Wheat Custard Powder Cookies, Eggless Marble Cake, Smashed Baby Potatoes, Crunchy Puri and Masala Chai.

Ingredients - 

Whole Wheat Flour 2 1/2 cups (I used Royal Whole Wheat Flour)
Custard Powder 1/2 cup (I used Vanilla flavored)
Coconut Oil 2/3 cup + 1 Tbsp
Coconut Powder 1/2 cup
Powdered Sugar 3/4 cup (I powdered the raw cane sugar)
Salt 1/8 tsp
Baking Powder 1 1/2 tsp
Baking Soda 1/2 tsp
Milk if needed for binding (I had to use upto 1/4 cup of milk)



Method Of Preparation -


Whisk the flour, custard powder, coconut powder, salt, baking powder and baking soda.

Add the powdered sugar and mix well.

Pour in the oil and combine to make a stiff dough sprinkling as much milk as needed.

Set aside the dough for a few minutes.

Pinch 36-38 equal portions of dough, roll them into thick discs, flatten with a fork and arrange in a lined baking tray.

Preheat the oven to 350 °F.

Bake the cookies for about 15-18 minutes and remove from the oven. Allow them to cool and enjoy them.

Eggless Bread And Butter Pudding

U for United Kingdom. I don't think UK needs any introduction. 

Once upon a time, I had a dream to go on the time machine and visit London during the 1800s. Subsequently, I used to read some Historical fiction set during that time period. I used to read up on any historical fiction/non fiction books which depicted the lifestyle of Britishers during that era, be it in India or in England. I used to watch movies set in that time period as well.

In those narratives, there used to be a reference to Bread and Butter Pudding and since then I wondered how it would taste but never did I imagine that I would be a food blogger and that I would try this out!! I made this twice (back to back in two days) to satisfy the cravings of my older one and mine too!!


Eggless Bread And Butter Pudding

Ingredients - 

Bread Slices 6 
Butter as needed to butter the slices on one side
Milk 2 cups + 2 Tbsp
Custard Powder 2 Tbsp
Sugar 5-6 Tbsp
Cinnamon Powder 1/2 tsp
Nutmeg Powder (or grated nutmeg) 1/4 tsp
Dried Cranberries, Raisins, Tutti Frutti as needed


Eggless Bread And Butter Pudding
My older one was restless while I was clicking so she was sneaking in a bite or two while I was rearranging my camera angle :)

Method Of Preparation -


Remove the crusts of the bread slices and butter them on one side.

Cut the slices into 2 triangles each and layer them in a rectangular baking dish which has been greased well.

Sprinkle the raisins, and other dried fruits and arrange the bread slices evenly. Sprinkle cinnamon and nutmeg and set aside.

To prepare the custard, heat milk and add sugar. Separately mix 2 tablespoons of milk with custard powder and gently pour into the boiling milk.

Pour the prepared custard mixture onto the layered bread slices. Set aside for a few minutes.

Preheat the oven to 350 °F.

Bake the bread slices for about 40-45 minutes until the custard sets properly and the tops brown.

Serve warm or cold as per your preference.

Jam Biscuits - Eggless

J for Jam Biscuits! When I showed my husband that I had chosen to bake these biscuits so they can form part of this A-Z series of BM #32, he was skeptical if it could beat his expectations. Though he did not say anything openly, I sensed his hesitation. 

After I baked these, he couldn't have enough of them. He said they tasted just like the bakery ones he used to eat in his childhood. I couldn't agree with him more!! And the kids fought with the Dad to finish them off. They all liked Strawberry jam better.


Jam Biscuits - Eggless

Ingredients - 

Maida / All Purpose Flour 3/4 cup
Custard Powder (I used Vanilla flavor) 3/4 cup
Corn starch / Fine Corn Flour (White) 4 Tbsp
Butter, at room temperature 1/2 cup
Sugar, Powdered 1/2 cup
Curds/Yogurt 3-4 Tbsp
Jam of your choice (I used Strawberry and Grape) as needed
Vanilla essence 1 tsp (I didn't use as the custard powder had vanilla flavor)


Jam Biscuits - Eggless

Method Of Preparation -

Whisk the butter and powdered sugar until it becomes frothy. (Add vanilla essence as well if using).

Add the flours and curd and knead into a smooth and soft dough.


Divide the dough into manageable portions and roll them out flat approximately 5 mm thick.

Cut out desired shapes (using a cookie cutter) and continue rolling the dough and cutting out the shapes until the dough is used up.

Arrange these cut out shapes on a foil or parchment lined cookie tray.

Use a small bottle cap or your thumb to make a small depression on the surface of the cookies. Put in a little jam of your preference to fill the depression.

Preheat the oven to 375 °F. Bake for 12-15 min or until the undersides are lightly browned.

Cool them and store in air tight containers.
