Red Thai Curry Noodle Soup

For Day 3, Week 2 of BM #37, we travel from Valencia (Vegetarian Paella) to South America (Tortas Fritas) to the east in Thailand. I gather that in many countries of the South East, noodles in many forms are part of the street food culture. 

Here I showcase this ever so popular Red Thai Curry Noodle Soup. I have chosen the short cut by using the store bought red thai curry paste. I am sure it is pretty easy to make the paste at home if we have the ingredients handy. 

I made this on my husband's whim when he handed me the store bought paste and asked if I could make the soup. In fact he looked up the soup recipe online and made my job easy. :)

Ingredients - 

Vegetable/Peanut oil 1 Tbsp
Stir Fry Vegetables 3 cups (I used pea pods, cabbage and carrots)
Red Thai Curry Paste 2 Tbsp (Store bought Veggie Version) (adjust according to spice level desired)Coconut Milk 400 ml (1 can)
*Noodles 300 gms (I used chow mein noodles)
Salt, Pepper to taste
Cilantro for garnish
Water approximately 2 cups

* I felt the noodles were a little too many. Next time I would reduce the amount of noodles. My older one scooped out the noodles and enjoyed. :)

Method Of Preparation -

Heat the oil in a wok / kadai and stir fry the veggies until they are cooked through but still retain the crunch (typically 6-7 min).

In a separate pan, boil water and cook the noodles al dente as per the instructions in the packet. Drain the noodles and set aside.

To the stir fried veggies, add the red thai curry paste and coconut milk. Mix well. 

Add the drained noodles to the simmering soup.

Add water to adjust the consistency. Season with salt and pepper to taste.

Remove from fire and garnish with chopped cilantro.

  13. Mouthwatering soup! As for the curry paste, it is better to use store bought paste when we do not have all the ingredients on hand. Even I bought a few cans of red and green curry paste. Yet to try

     
  14. Such a tempting soup! I also end up adding more noodles for the sake of my kids. they love scooping out the noodles and I make it a meal for them that way :)
