Fattoush Salad

I chose to make Soups and Salads for the 3rd week of BM #26. I have had this tempting recipe in my email from a dear friend for a while now. So when this theme was amongst the ones I planned to choose, I got a chance to try it out much to our delight!

I have seen multiple variations of this Lebanese Salad on the web and it has been referred to as a wet bread salad! I guess it can be fine tuned as per individual preferences. So check out my version for Day 1 Week 3 of BM #26.

Ingredients -

Tomatoes, cubed 3/4 cup
Cucumbers, cubed 1 cup
Lettuce, chopped 2 cups
Spring Onion, chopped 3 Tbsp
Coriander leaves/Cilantro, chopped 2 Tbsp
Pita bread, crushed into bite size pieces 1 cup (I used the baked Pita Bites commercially available)
Optional Vegetables (Olives, Red Cabbage, Red Radish etc)
Dressing -
Sumac 1/2 tsp (An authentic Middle Eastern Spice)
Salt as needed
Lime/Lemon Juice 2 tsp
Olive Oil 2 tsp
Dried Mint Powder 1/2 tsp

Fattoush Salad

Method Of Preparation -

In a mixing bowl, add all the chopped vegetables, putting the tomatoes and cucumbers first.

Sprinkle the crushed pita bread pieces on the top.

In a separate bowl, add all the dressing ingredients and mix until the salt is dissolved.

Drizzle the dressing on to the salad and toss the salad until the dressing is mixed well.

Serve immediately. If the salad needs to be prepared in advance, then just sprinkle the mint and sumac on the vegetables and mix in salt, Olive oil and lemon  juice just before serving.

  2. That bowl of salad looks really refreshing. I haven't tried the sumac yet. Didn't dare to buy the packet at my local grocery store as my husband acts unpredictably averse to spice concoctions sometimes. :)
