Coconut-Mint Rice

Week 3 Day 3 of BM #62 - 

Check out this super easy coconut-mint rice. It qualifies for the lunch box as well.

Ingredients - 

Fresh Coconut, shredded 1 cup + more if preferred
Sona Masoori Rice 2 cups 
Salt and Green Chilies as needed
Mint leaves 1/2 cup or more
Sesame Seeds 1 Tbsp (Optional)
Turmeric 1/4 tsp
Lime/Lemon Juice 1 Tbsp or as needed

Seasoning (Oil 1 Tbsp, Mustard seeds 1/2 tsp, Chana Dal 1 tsp, Urad Dal 1 tsp, Cumin Seeds 1/2 tsp, Peanuts few, cashews few, Asafotida 2 pinches, Curry leaves few)


Method Of Preparation -

Cook rice separately and spread out the rice in a wide pan/tray to let the rice cool a little.

Grind together coconut, mint leaves, sesame seeds, salt and green chilies into a fine paste.

In a pan, heat oil and add the rest of the seasoning ingredients. After the dals and nuts are evenly browned, add the coconut paste and saute for a minute (just to warm the coconut a little). Remove from heat.

Mix in the coconut and seasoning mixture into the rice and mix well. Squeeze in lemon/lime juice as needed.


Adjust the flavors and the coconut-mint rice is ready to be served.

Vegan Coconut Milk Mug Cake

Week 3 Day 2 of BM #62 - 

This mug cake was an instant hit at our place. The chocolate frosting with the rainbow sprinkles made this a winner for my little one. I encouraged the kids to enjoy this super fluffy mug cake and also keep a healthy portion size for each of them :).

Vegan Coconut Milk Mug Cake

Ingredients - 

All Purpose Flour 2 Tbsp
Whole Wheat Flour 2 Tbsp
Brown Sugar 2 Tbsp
Salt a pinch
Baking Powder 1/2 tsp
Coconut Milk 4 Tbsp
Olive Oil 1 1/2 Tbsp
Chocolate Sauce / Nutella / Sprinkles for topping [Check for Vegan options if preferred]


Vegan Coconut Milk Mug Cake

Method Of Preparation -


In an 8 oz mug, whisk the flours, sugar, salt and baking powder.

Pour the coconut milk and olive oil. Gently mix until the batter is lump free.

Cook in the Microwave for 1 minute. Remove and cook for 30 seconds more.

Check to see if the cake is done.

Spread the Chocolate sauce/Nutella. Decorate with sprinkles and enjoy it warm!

Thai Red Curry with Tofu and Vegetables

Week 3 Day 1 of BM #62 - 

This week it is all about coconut. I am sure most of the south Indian families use coconut in their everyday cooking. So it is easy for us to cook under this category. 

The first one under this theme is from Thailand. I remember having first seen this curry online made with chicken. I veganised by using Tofu. This is one of my husband's favorite Tofu curries.

Thai Red Curry with Tofu and Vegetables

Ingredients - 

Onion, chopped 1/2 cup
Ginger, grated 1 tsp
Garlic, grated 1 tsp
Assortment of Vegetables (Kale, Green Beans, Carrots, Peas, Lima Beans) 2 cups
Extra Firm Tofu, cubed 1 cup
*Coconut Milk 2 cups
Thai Red Curry Paste 1 Tbsp
Salt and Red Chili Flakes as needed
Seasoning (Sesame Oil 1 Tbsp, Cumin Seeds 1/4 tsp)
Chopped Coriander leaves for garnish
* I used Coconut Milk Powder to make 2 cups of coconut milk


Thai Red Curry with Tofu and Vegetables

Method Of Preparation -


In a heated pan, add oil and cumin seeds. After they pop, saute the onions ginger and garlic.

After the onions turn golden brown, add all the vegetables and a little water and let them cook under cover.

Meanwhile, saute/grill the cubed tofu and set aside.

After the vegetables are tender, add the red thai curry paste and coconut milk.

Add salt and red chili flakes to taste and let the sauce simmer.

Adjust the flavors if needed and remove from heat.

Serve with steamed rice for a complete meal.

Naan Pizza

Week 2 Day 3 of BM #62 - 

There are always days when a meal needs to be fixed at moments' notice and on such days, Naan Pizza is a God send. It is fit for a brunch, snack or dinner. Each person can have a small personal pizza, so try it out and enjoy the smiles all around!

Ingredients - 

Naan 2 [I used frozen masala naans ; Pita Bread also is an option here] 
Pizza Sauce as needed
Vegetables for toppings (I used only olives and Jalapenos)
Shredded Cheese as needed
Pepper flakes as needed



Naan Pizza

Method Of Preparation -

Thaw a naan and apply the Pizza sauce evenly. 

Arrange the vegetables of your choice.

Sprinkle the shredded cheese on top. Sprinkle pepper flakes as needed.

I baked it in my counter top oven for 6 min at 400°F. It can be baked in the regular oven as well. Just bake it until the cheese turns a light shade of brown.


Serve warm.

Vegetarian Taco Salad

Week 2 Day 2 of BM #62 - 

This salad has become a hot favorite at home ever since I saw this at Pavani's space and made it the very next day. I made some minor changes to the original to suit our taste buds and pantry :).

I love this salad as it is a complete meal and the ingredients are totally customizable so is the spice level. It can be put together in a jiffy. Canned beans come in very handy here. Though I prefer the home cooked beans. So plan ahead to make this delightful salad.


Vegetarian Taco Salad

Ingredients - 

Tortilla Chips 2-3 cups crushed into bite size pieces
Lettuce, chopped 3 cups
Grape Tomatoes few
Onion Chopped 1/2 cup
Olives [Optional]
Red Kidney Beans, washed, soaked and boiled 1 cup [Canned Beans works very well here]
Cheese, shredded as needed for garnish
For the Dressing - 
Sour Cream / Thick Yogurt 1/4 cup
Onion Powder 1/4 tsp
Garlic Powder a couple pinches
Salsa 3-4 Tbsp
Taco Sauce 2-3 Tbsp


Vegetarian Taco Salad

Method Of Preparation -


Prepare the dressing and adjust the flavor as needed and set aside.

In a serving bowl add the remaining ingredients except cheese. Toss them with dressing, garnish with cheese and serve immediately.

Avocado Mac And Cheese

Week 2 Day 1 of BM #62 - 

This week it is all about quick fix meal ideas. I shall showcase some meal ideas which are popular with our kids.

This genius of an idea was dished out by my older one. She looked up for the recipe and assembled the whole thing. I only helped her a bit in making the Guacamole.

Needless to say, the kids took an instant liking to it. It was very good except it was bland for our Indian taste buds but that can be fixed by using a spicier guacamole or just a sprinkle of crushed red pepper might do the trick.

The picture doesn't show a side of steamed broccoli which is a typical side for pastas at our place.

We have subsequently made this many times with slight variations by adding a few vegetables in the pasta. A side including sauteed tofu, stir fried or steamed vegetables made this a complete meal.

Ingredients - 

Pasta 8 oz (any shape is okay)
Alfredo Sauce about 1 cup
Guacamole about 1 cup


Avocado Mac And Cheese

Method Of Preparation -


Cook the pasta in enough water al dente as per the instructions on the package.

Drain the water and transfer the pasta into a wide dish.

Mix in the Alfredo Sauce as much as is needed.

And mix in the Guacamole. Adjust the flavors if needed and it is ready to be served!!

Strawberry-Nutella Milkshake

Week 1 Day 3 of BM #62 - 

A few days back, my little one came back from school all excited to tell me about Strawberry milkshake. Apparently her friend told her about this and like kids usually are, my little one was after me to make it for her as well. 

It so happened that we ended up getting a huge box of Strawberries over a weekend and were pleasantly surprised to find them very sweet. That was when my little one reminded me of the strawberry milkshake. I added a little bit of Nutella and the kids loved it!


Strawberry-Nutella Milkshake

Ingredients - 

Strawberries 7-8
Nutella 1 -2 Tbsp (or as needed)
Milk 2 cups
Almonds 7-8

Method Of Preparation -


Blend all the ingredients in a high power blender and serve it for a refreshing drink!

Eggless Honey Chocolate Cake

Week 1 Day 2 of BM #62 - 

The cake I am posting today was originally the one I planned for Srivalli's Virtual Birthday Party. Incidentally I planned to take this cake for an impromptu birthday celebration. 

My older one baked it for me and all went well until it was time to pack it for the party. That was when the cake cracked in the middle because of careless handling by me :(. So I just sliced the cake into small slices and carried it to the party.

Though the taste of the cake was awesome, I was personally disappointed that I couldn't take the cake as is to the party. But my friends were so nice that they refused to dampen my spirits and made sure to uplift my mood! 

So the next time I bake this cake, I might cake in a square of a circular pan to avoid this kind of accidents.

Ingredients - 

All Purpose Flour/Maida  1 1/2 cups
Cocoa powder 3 tsp
Sugar 1 cup (I used Brown Sugar)
Baking powder 1 1/4 tsp
Baking soda 1/2 tsp
Salt a pinch 
Thick Yogurt/Curds 1 cup
Olive Oil 1/2 cup
Milk approx 3/4 cup 
Honey 2 Tbsp
Vanilla essence few drops (Optional)
The cake can be topped with chocolate chips which I omitted.

Eggless Honey Chocolate Cake

Method Of Preparation -


In a mixing bowl, whisk flour, cocoa powder, sugar, baking powder, baking soda and salt.

Blend Olive oil, Yogurt, milk, honey and vanilla essence (if using) and gently pour into the flour mixture. Mix gently to make a thick batter.

Preheat the oven to 350 °F. Grease a 13 X 7 baking tin and pour the batter.

Bake for about 25-30 min and check to see if the cake is done. [The original recipe calls for less baking time].


Remove and invert the cake upon cooling. Slice and enjoy!

Grilled Chocolate Sandwich

Week 1 Day 1 of BM #62 - 

The first week of this edition will be all about kid friendly chocolate dishes. There are multiple versions of these sandwiches all over the internet. But these are the ones I found that our kids loved the best. A lot of versions use Nutella as well. So go with what the kids like and make them happy!!

Ingredients - 

Bread Slices 4
Chocolate Chips 2 Tbsp
Butter as needed
Chopped Nuts (I used Almonds and Cashews)


Grilled Chocolate Sandwich

Method Of Preparation -


In a microwave safe bowl, add 1/2 teaspoon of butter and the chocolate chips. Nuke them in increments of 30 seconds whisking them in between until all the chocolate melts.

Spread butter on one side of the bread slices and set aside.

Place 2 slices of bread, buttered side down on a heated grill pan. 

Spread the molten chocolate on the bread slices and sprinkle the chopped nuts. 

Spread the chocolate sauce on the remaining slices and place on top of the chopped nuts. 

Grill them until they are golden brown on both sides.

Slice them and enjoy!
