BM #65 Week 1 Day 1 -

Welcome to another edition of Blogging Marathon. This first week I have chosen to showcase some pull apart breads which have been popular with my folks at home.

So here is this bread for all the pizza lovers out there..

Ingredients -

Wheat Flour 1 cup
All Purpose Flour 1 cup
Butter 1 Tbsp
Warm Milk 1/2 cup + 1/4 cup
Sugar 1 tsp
Active Dry Yeast 2 tsp
Salt 1 tsp
For the Filling -
Pasta Sauce 1/4 cup + more if needed

Olives as needed (or any other veggies of your preferene)
Red pepper flakes as needed
Cheese, shredded 1/2 cup [I used Cheddar cheese]

Method Of Preparation -

In 1/2 cup of warm milk, dissolve sugar and sprinkle yeast. Set aside in a warm place to activate the yeast.

In a stand mixer bowl or a mixing bowl, sift the flour, salt and melted butter.

Add in the yeast solution to the flour and knead adding more warm milk as needed to form a soft and pliable dough.

Oil a bowl and roll the dough in the oiled bowl, cover and set aside until the dough is doubled [about 1 1/2 hours].

Dust a work surface with a little flour. Punch down the doubled dough and stretch and roll it into a square about 11 x 11 or 12 x 12.

Brush with butter all over the square dough surface. Spread the pizza sauce as needed all over. Sprinkle olives or any other toppings, cheese and red pepper flakes as needed. (I forgot to sprinkle the red pepper flakes here instead I topped the flakes while I was serving to the adults at home :) )

Make about 2 inch strips of the square dough. I used a pizza cutter to do the job.

Layer each of the strips, one on top of another. Now slice the pile into 2-3 inch squares.

Place the slices, cut side down in a greased (I lined with parchment paper) loaf pan (I used a 10 x 5).

Cover and set aside in a warm place for a second rise. I left it for an hour. Brush the top with milk. Sprinkle some more cheese on top.

Preheat the oven to 375 °F. Bake it in the center rack for about 35 minutes or until the top is golden brown.

Brush with melted butter (Optional), pull apart the slices and enjoy with more pizza sauce!

Herbed Fougasse

Day 8 BM #51 -

Fougasse is a French Bread which is a market specialty in the south of France. It is known for its unique shape of slashing the dough and stretching it to resemble a tree.

The first time I came across Fougasse (pronounced as Foo-Gaas) was at Varada's space. I later on found various versions with different combinations of spices and herbs. Since my kids are fond of olives, I tried this bread with chopped olives and the result was a super hit with my family and friends.

Ingredients -

All Purpose Flour 1 cup
Whole Wheat Flour 1 1/4 cup
Salt 3/4 tsp
Herbes de Provence 2 tsp
Olive Oil 3 Tbsp (divided use)
Olives, finely chopped 1/4 cup
Sugar 1 tsp
Active Dry Yeast 2 tsp
Warm Water 1/2 cup + 2 Tbsp
Milk 1 Tbsp for Brushing

Method Of Preparation -

In half a cup of warm water, add sugar and yeast. and set aside in a warm place for the yeast solution to froth up.

In a mixing bowl, add the flours, salt, 1 tablespoon of olive oil, chopped olives and mix well.

After the yeast solution has frothed up, add it to the flour mixture and mix to get a sticky and elastic dough. (I used the stand mixer and worked for about 10 minutes to get the sticky dough).

Oil a bowl, and place the dough in a warm place for about 2 hours, so the yeast can work its magic.

After the dough has doubled, place it on a floured surface and stretch it using your hands. Make a rectangle which is about 1 cm thick and place it on a parchment paper lined baking tray.

Imagine a center vein like that of a leaf and slash 3-4 diagonal cuts on either side of the center vein. (See picture for clarity). Brush it with milk and let it rest for about 10-15 minutes while the oven gets preheated.

Preheat the oven to 375 °F.

Place the baking tray with prepared dough in the oven and bake for 18 minutes. I broiled for a couple of minutes for a darker hue.

Remove and slice it as needed. Dip it in melted butter and enjoy.

Basic Pizza

For Week 2, Day 2, of BM #47, here is a basic version of Pizza which was loved at home.

Please free to add as many toppings as preferred.
I told my husband that I would be baking a pizza for dinner, and that he should let me know when he would come home so the pizza can be ready. Later in the evening, he messaged me 'One large veggie pizza, light on cheese with olives and onions,  and a side of crushed peppers please'. :)

I baked 3 personal pizzas and a large one. I don't need to say that the kids loved their personal pizzas, right?

Ingredients -

All Purpose Flour 4 cups
Sugar 1 tsp
Salt as needed
Active Dry Yeast 3 1/2 tsp
Olive Oil 2 Tbsp
Toppings -
Pizza Sauce as needed
Onions and Olives as needed
Cheese, shredded as needed

Basic Pizza

Method Of Preparation -
To Prepare the Dough -
Dissolve sugar and yeast in a cup of warm water and set aside in a warm place for the yeast to 'wake up'. After about 8-10 minutes, the solution must appear frothy.

In a mixing bowl, measure 4 cups of flour and add the yeast solution. Drizzle oil and knead into a soft and sticky dough.

Oil a deep bowl, cover with a cling wrap and set aside in a warm place undisturbed for the dough to rise.
[In cold places like ours, I would heat the conventional oven for about 5 minutes, switch the oven off, switch the light on and place the bowl with the dough in there for about 1-2 hrs until the dough doubles.]

To prepare the Pizza -
Divide the dough into manageable portions and roll out into required size on a floured baking pan.

Leave about 1/2 an inch towards the edges and poke the entire surface of the circle with a fork to bust any bubbles which might form when baked.

Preheat the oven to 425 F.

Apply the pizza sauce all over the circle and layer the toppings.

Sprinkle the pizza / Italian seasoning. (Totally Optional)

Sprinkle the cheese as needed.

Bake in the center rack for about 18 min or until the cheese browns a little.

Preparation Time 2 hrs for the dough + 10 min for prep work + 18 baking time
Makes 1 large and 3 personal pizzas

Seven Layered Bean Dip

M for Mexico. I have heard such raving reviews about this bean dip but never had the opportunity to taste or make. The scene changed when we had a taste of this dip at my friend's place. We were totally sold on this.

This is such a versatile dip that we can add any vegetables as per our preference and enjoy it. I have since been making this at least once or twice a week.

I found that this is a very good way to ensure the kids get their share of salad and beans :).

Seven Layered Bean Dip

Recipe Source Amsa
Ingredients -

Red Kidney Beans(Rajma) 1 cup (Canned beans work well too)
Avocados, coarsely mashed 1 1/2 cups
Sour Cream 6 oz
Cheese, shredded upto 3/4 cup
Lettuce, chopped, upto 3/4 cup
Tomato + Red Bell Pepper, chopped 1/2 cup
Olives/Corn (Optional) 1/2 cup each
Spring Onion, chopped 1/2 cup

Seven Layered Bean Dip

Method Of Preparation -

I used Red Kidney Beans, soaked overnight and pressure cooked until soft. I also seasoned the cooked beans with Taco seasoning. Let it cool.

While the bean mixture is cooling, make the avocado paste. I seasoned it with garlic and salt (seasoning is totally optional).

In a glass bowl, spread the bean mixture evenly to make the bottom most layer.

Then spread the mashed avocado , sour cream, cheese, lettuce, tomato + Red bell pepper, Olive/corn and lastly spring onion in that order.

Cling wrap the glass bowl and refrigerate. It is recommended that it be refrigerated atleast for 6-8 hrs. But we used it up in 2 hrs and it was just fine.

Serve it with tortilla chips. I tried it as a filling in a hard shell taco, roti and it tasted just as delightful. My husband who wanted to spice it up a little added Sriracha hot sauce and enjoyed it as a salad! So the options are numerous.

I had a huge pack of Bisquick Pancake Mix in my pantry and I wanted to finish it before it got rancid. So I thought the best place to look for ideas to use it up would be at the Betty Crocker website itself. And I landed up with this recipe which was truly a kid's delight!

If serving these to adults I would recommend adding in some crushed red pepper or crushed green chillies to add some kick.

This week look forward to some kid approved baked snacks as part of BM #36, Week 3, Day 1 check out these cheesy bread sticks.

Recipe Source here
Ingredients -

Bisquick Pancake and Baking Mix 2 cups
Milk 1/2 cup (or a little more)
Olives, finely chopped 3 Tbsp
Shredded Cheese 1/2 cup (I used a 5 cheese blend I had on hand)
Butter for brushing

Method Of Preparation -

In a mixing bowl, add the baking mix, olives, cheese and knead the mixture into a soft dough adding milk as needed.

Knead for about 2-3 minutes. Divide the dough into 12 equal portions.

Roll each portion into thin logs. Make sure they are not thicker than your thumb.

Place them on a parchment lined baking tray.

Bake them for about 22 min until they are evenly brown.

Remove from the oven and brush them lightly with melted butter.

Serve them warm with marinara sauce.

Passing them on to Srivalli's "Kid's Delight - Baked Sweet/Savory Treats" hosted by PJ.
