BM #119 Week 1 Day 1 - 

This week I shall highlight some sweets which can be made at home to cheer us all.

This is a very easy to make sweet and a good way to get some smiles out of our loved ones. Leftover bread works well too.

Ingredients - 

Bread slices 4-5
Ghee 2 Tbsp
Sugar 5-6 Tbsp
Milk 1 cup
Almonds Flour 2 Tbsp
Cashews and Raisins 2 Tbsp
Saffron strands few soaked in 1 tablespoon of warm milk



Method Of Preparation -

Tear the bread slices and coarsely pulse the bread in a processor. Set aside.

In a heavy heated pan, add a teaspoon of ghee and fry the cashews and raisins (I didn't add raisins). Remove with a slotted spoon and set aside. 

Add the remaining ghee and toss the coarsely crushed bread and fry for a few minutes.

Sprinkle sugar and milk and let it cook. Sprinkle almond flour and continue to mix continuously until it comes together as a single mass.

Pour in the saffron milk and cashews and gently mix them in and remove from heat.

Transfer the halwa into any decorative container like a tart cup. Press the halwa and de-mould it after a while.

Serve it warm and enjoy.

BM #107 Week 3 Day 1 - 

This week I have opted to showcase some easy kid friendly breakfast recipes.

The first one is this Eggless Bread Omelette which can be made in a few minutes and is nutritious and filling.

This can be made as a snack as well.

Recipe Source Pooja
Ingredients - 

Bread Slices 3-4
Besan / Gram Flour / Senagapindi 1/4 cup
Buttermilk 1/2 cup (or as needed)
Onions finely chopped 1/4 cup
Coriander leaves, finely chopped 1-2 Tbsp
Ginger-Green chili paste 1 tsp or as needed
Salt, Turmeric, Red Chili Powder as needed
Garam Masala, Chaat Masala, Asafotida as needed
Cumin Seeds, coarsely crushed 1/4 tsp
Ajwain / Vaamu, coarsely crushed 1/4 tsp
Butter/Oil to shallow fry



Method Of Preparation -


In a mixing bowl, add Besan, finely chopped onions, finely chopped coriander leaves, ginger-green chili paste, salt, turmeric, red chili powder, garam masala, chaat masala, asafotida, coarsely crushed cumin and ajwain seeds.

Mix well and make a thin batter adding as much buttermilk as needed. It should be slightly thinner than bajji batter.

Heat a griddle and spread some oil/butter. 

Slice each bread into two triangles, dip each triangle into the besan batter making sure both sides are soaked, transfer the soaked slices onto the heated griddle.

Cook on both sides and remove. Continue with the rest of the slices.

Serve warm with Ketchup or any spicy sauce.

BM #97 Week 4 Day 3 - 

Loaded with the goodness of broccoli and the cheesy tater tots, these are a major hit with the kids.

Earlier, tater tots meant only the potato tater tots. But we have Sweet Potato Tater TotsZucchini Tater tots and now these Broccoli tater tots as well.

My kids are fond of broccoli in any form but now these tots are their new favorite.

Ingredients - 

Broccoli florets 2-3 cups
Almonds handful
Bread Crumbs 1 cup (2 bread slices)
Cheese 1/4 cup
Salt as needed
Sriracha Sauce or Tomato Chili Sauce or Hot Chili Sauce as needed


Method Of Preparation -


Steam the chopped broccoli. Pulse the steamed broccoli.

Coarsely crush almonds. 

In a mixing bowl, add the shredded broccoli, crushed almonds, bread crumbs, shredded cheese, salt and any sauce of your choice.

Pinch two teaspoons of the material and make oblong shaped tater tots.

Place on a baking tray lined with parchment paper. Preheat to 425 °F.

Bake for about 30 minutes turning them half way through so they brown evenly.


Serve with Ketchup of any dipping sauce of your choice.

BM #97 Week 3 Day 1 - 

This week I shall highlight some easy to make dishes which are good to eat on the go and are also kid approved.

With kids and their activities, I am sure many parents understand and appreciate the need to carry food in their vehicles at all times. It is true for me as the kids are always hungry when they are in the car going from one activity to another. 

It is always a challenge to carry food in the car as inevitably the car gets messy with the spills, crumbs..you get the idea, right? So there is always a box of tissues, wet wipes, paper towels and there is also a trip planned to get the car cleaned anyways, right? 

I hope to exchange some ideas. Please feel free to leave your thoughts and ideas in the comment section.

Ingredients - 

Any Type of Leftover Pasta as needed
Bread Slices 4
Zucchini slices few
Salt and Pepper as needed
Cheese as needed



Method Of Preparation -


Toast the slices of bread and set aside.

Pan fry the zucchini slices as needed. Sprinkle salt and pepper and set aside.

On a slice of bread, spread the leftover pasta as a single layer, arrange the zucchini slices and sprinkle cheese as needed. 

Top it with another slice and grill the sandwich until the grill marks are visible.

Continue with the other set of slices. Allow them to cool down before packing it for the road.

BM #90 Week 2 Day 2 - 

We are all fond of masala vada dunked in sambar, right? Imagine you have a craving to eat masala vada on a rainy day, but there is no readymade batter available on hand. Then this instant version is a life saver.

These vadas turn out crispy and are very addictive. I am always skeptical about using bread in a deep fried dish and have an inherent fear that the dish would absorb excess oil. But in this case I didn't observe anything of that kind.

Ingredients - 

Bread Slices 4-6
Semolina/Sooji 1/4 cup
Rice flour-1/2 cup
Medium Onion 1
Ginger-1 inch piece
Green Chilies, finely chopped 1 tsp (or as needed)
Coriander Leaves,chopped 2 tbsp
Chilli Powder 1/2 tsp (or as needed)
Cumin Seeds 1 tsp
Salt to taste
Curd 1/2 cup 
Oil For Deep Frying & greasing


Method Of Preparation -


Roughly tear up the bread slices and pulse to make a coarse powder.

In a mixing bowl, add the powdered bread, sooji, rice flour, onion, ginger, green chilies, coriander leaves, cumin seeds, chili powder and salt.

Mix well and knead into a stiff dough slowly adding curd as much as needed.

Pinch lime sized portions and shape them like a donut/vada and gently slide in a pan of hot oil.

Let them fry until they are golden brown all over.

Remove them onto paper towels to drain excess oil and continue with the rest of the dough.

Serve hot as is or with any chutney.

BM #88 Week 4 Day 1 -

My brain was working hard to come up with something healthy for a snack when this idea of making Bajra cutlets struck! Actually it all started with me soaking bajra one night confident that I could come up with something  the next day. 

I typically think about making cutlets as they are very forgiving. Anything (?) can be mixed with Potato and bread and the usual masala to make cutlets and they surely turn out good! So my first choice for a healthy snack is to make cutlets. Moreover they are very much favored by kids at home! So here we are with these delicious and healthy cutlets..

Edited - In an attempt to update some old posts which are close to my heart, I am here with some better pictures.




Ingredients - 


Whole Bajra/Sajjalu/Pearl Millet 1/2 cup
Potatoes boiled and mashed 1 cup
Mixed Vegetables (Carrots, Corn, Peas and Beans) boiled 1/2 cup
Bread Slices 3-4
Salt as needed
Mirchi Powder 1/2 tsp or as needed
Garam Masala 1/4 tsp or as needed
Amchur Powder 1 tsp
Coriander leaves finely chopped 2 Tbsp


Method Of Preparation - 


Soak the Bajra over night and pressure cook. Please note that Bajra takes a lot more time to get cooked.  (About 5-7 whistles in the pressure cooker I use).


Gently mash the cooked bajra in a food processor. 


Make a powder of the bread slices. Usually bread is dipped in water and the water is squeezed. The wet bread is then added to the cutlet mixture. In this recipe, it needs to be powdered because the mashed bajra has water in it.


Add mashed potato, powdered bread slices and mashed mixed vegetables in a mixing bowl. Pour the mashed bajra and the rest of the flavorings as needed. Adjust taste as desired. 


Make a stiff dough and pinch a portion of the dough and make a disc (about 2 inches diameter) and set aside. Continue making the discs with the rest of the dough. 


On a hot tava, spray a little oil and spread these discs and cook on both sides until they get golden brown on both the sides.


Serve hot with ketchup or chutney of your choice or as we prefer make a chaat out of these cutlets!

BM #87 Day 17  - 

This sandwich was an accidental find when my older one was looking for vegetable based sandwiches. As far as I understand she saw some ideas on her social media page and was confirming with me if she might like something like this. 

It has been since a favorite of hers and the husband wouldn't mind a sandwich or two as well. 

The key is to lightly toast the bread slices. I have learnt with experience that the zucchini when placed on the bread slices, will make it soggy. Toasting the bread makes it slightly immune to that.

When it comes to packing for the lunch box, wrap the cooled sandwich in a wax paper and then wrap it in a foil.

Ingredients - 

Bread Slices 4
Zucchini , sliced 1 small
Salt, Garlic Powder, Red Chili Powder as needed
Cheese, shredded or sliced as needed
Butter as needed (Optional)




Method Of Preparation -


In a hot, greased grill pan, arrange the zucchini slices and grill them until the grill marks are visible.

Remove onto a bowl, sprinkle salt, garlic powder and red chili powder and toss them so the slices are evenly coated with the spices.

Lightly toast the bread slices and set aside. [To ensure the sandwich doesn't get soggy.]

Arrange these seasoned zucchini slices on two bread slices, sprinkle cheese, cover with another bread slice, grill it until the grill marks are visible. Repeat for the other set of bread slices.

Allow it to cool on a wire rack, wrap it in a wax paper and foil wrap it to pack it for lunch.

BM #87 Day 14 -

My older one is a super fan of Schezwan sauce. So to accommodate her taste buds, I made this sandwich. She loves Tofu and Schezwan sauce and so the combination cannot go wrong. Since it was a spicy sandwich my little one was happy to enjoy her Carrot Lemon Sevai.

It is a very quick and no-nonsense sandwich. The only time taken is to marinate the tofu and then grill it. I usually marinate it overnight thus reducing the active time required to make this in the morning rush hour.

I had to quickly take a picture before it went into her box and hence 
Ingredients - 

Tofu 2 Slices (3 X 2 inch slice)
Bread 2 slices
Cheese as needed (I didn't add)
Salt and Schezwan Sauce as needed



Method Of Preparation -


Marinate the tofu slices in schezwan sauce and sprinkle salt to taste. Set aside for 15 minutes.

Meanwhile apply schezwan sauce to the bread slices and set aside.

Grill the Tofu slices until the grill marks are visible.

Arrange them on one bread slice, cover it with the other bread slice and grill until done.

Remove and serve for a spicy treat.

BM #82 Week 4 Day 1 -

This 2-ingredient dough is a multipurpose dough. It can be used as a pizza base as well. 

In one of our group chats, there was a discussion of no yeast garlic bread. All the while I was flipping through my memory folders to figure out where in my notes I had written down such a recipe. 

When I found my notes, I immediately set out baking these garlic bread sticks for a quick after school snack for the kids.




Ingredients - 

*Self Rising Flour 2 cups
Yogurt / Greek Yogurt/Sour Cream 1/2 cup + more if needed
For the topping - 
Butter at room temperature 2 Tbsp
Garlic, grated/minced 1 Tbsp
Crushed Red Pepper Flakes as needed
Basil fresh or dried as needed (I used 3/4 tsp of dried basil)

* I used 2 cups of All Purpose Flour + 2 tsp of baking powder + 1/2 tsp of salt as I ran out of self rising flour



Method Of Preparation -
For the dough - 
Dump the flour and yogurt in a stand mixer with the dough hook and let the mixer do the job of turning out the pliable dough.  
(or)
Knead the flour in a mixing bowl with your hands and exercise your arms until it results in a pliable dough.

For the Garlic Bread - 
Mix in the butter, grated garlic and dried basil and set aside.

Roll out the dough into desired shape (oval) of about 1/4 inch thickness.

Spread the garlic butter evenly all over the rolled out dough. Fold the dough to resemble half of the oval shape as in the picture.

Spread the garlic butter on the top and make markings on the dough at 1 inch intervals so it is easy to pull the bread sticks out.

Preheat the oven to 425 °F. Bake for about 18-19 minutes or until the top is golden brown.

Serve warm with marinara sauce.

Grilled Caprese Sandwich

After a month long Baking Marathon, I took a much needed break and back to the regular posting schedule. Here I am with a new series this week, 'The Picnic Hamper'. 

Now that the weather is improving, my little one has started pestering me for Popsicles , ice creams and the like. In no time she will start asking for picnic hampers for her and her friends. I made these sandwiches without any pepper flakes and she loved it. I think it is a great idea for the picnic hamper, is it not?

Ingredients - 

Bread Slices 4 (I used Honey wheat Bread)
Fresh Mozzarella Cheese 4-5 (1/4 inch) slices
Tomato Slices 4-5
Basil (paste, dried or fresh) as needed
Garlic Salt, Pepper and Red Pepper Flakes as needed
Butter to spread on all the slices


Grilled Caprese Sandwich

Method Of Preparation -


Apply butter to both sides of the bread slices.

On two of the slices, arrange the cheese and tomato slices as needed.

Sprinkle basil, garlic salt, pepper and red pepper flakes. Top with the plain buttered slice.

Heat a grill pan/panini press or sandwich maker. Grill the sandwiches and serve them hot.
