Quinoa - Chickpea Veggie Burger

I have chosen to share some combo dishes using some kind of patties or tikkis this week as part of BM 33. So for day 1 of week 3, here are some healthy patties which my family loved to have in burgers for dinner.

I read in an online magazine that the combo of quinoa and pinto beans in a patty makes a for very healthy and filling burger. I adapted that idea and made these. Please feel free to customize as per preference and enjoy the goodness of quinoa. My husband who is virtually a quinoa hater has come to love these patties as well.

Ingredients - 

Burger Buns as needed
Lettuce, Tomato, Olives, Onions, Spring Onions as needed
Avocado, mashed and seasoned with salt, lime and pepper to spread
Any other sauces as per preference for the burger
For the Patty - 
Quinoa 1/2 cup
Chickpeas/Garbanzo beans/Kabuli chana soaked over night and boiled 1/2 cup
Black Peas (Kala Chana), soaked over night 1/2 cup
Potatoes boiled and mashed 1/4 cup
Tomato Puree 3 Tbsp
Onion finely chopped 1/4 cup
Carrots grated 1/2 cup
Garlic, minced 1-2 cloves
Bread crumbs
Salt, Red Chilli Powder and lime juice to taste
Curry Powder or Garam Masala to taste
Oil to spray while cooking


Quinoa - Chickpea Veggie Burger

Method Of Preparation -
To Prepare the patty - 
Cook quinoa in 1 cup of water as per the instructions on the packet. Set aside to cool.

In a blender/mixer/food processor add the carrots, potatoes, onions, tomato puree, garlic, chickpeas, blackpeas and the cooked quinoa and blend until coarsely processed.

The mixture needs to be just about moist. Mix in the flavor enhancers (Salt, Red Chilli Powder, lime juice and Curry Powder or Garam Masala to taste).

If needed add in the bread crumbs and mix them well.

Divide the mixture equally into 10  portions.

Pat each of them into a 1/4 inch disc and cook them on a hot griddle/tawa until both sides are golden brown, crispy and are cooked through.

Remove onto a wire rack. Upon cooling, the patties can be frozen in ziploc covers for later use.

To Assemble a Burger - 
Toast the burger buns and apply the avocado mixture on both sides.

Layer the vegetables and the patty as per preference and sprinkle the sauces. Serve immediately.
