Day 1 Week 2 For BM #54 -
This week, I shall showcase some easy to make recipes suitable for students in Dorms/Hostels who have limited access to various gadgets. I am assuming they have access to a refrigerator and a microwave.
I have never been in a hostel or dorm in my life. But I used to envy my brother when he was sent to a hostel for his high school studies. Though he never faced any difficulties with the quality or quantity of food, I cannot say so about some of my cousins and friends who had a tough time getting through their time in hostels.
I know many of them used to stealthily make Maggi using an immersion heater as that was the only type of electrical device allowed in their rooms. Now Maggi being out of shelves, I can only imagine the plight of students in such situations.
I had the liberty to serve these stewed apples on top of Tortilla chips as well as on ice cream as a topping. Trust me - it makes an interesting variation to the mundane chips and ice cream :)
These stewed apples can be made on stove top also except the time needed will have to be checked out. I shall update if I ever make it on stove top. This microwave preparation took me less time than taking these pictures :).

Ingredients -
Apple 1 peeled, cored and chopped to bite size
Water 1 Tbsp
Sugar 1 tsp (I felt I could have omitted the sugar as the apple was sweet by itself but was skeptical if the syrup would be the right consistency without the sugar)
Cinnamon Powder 1/4 tsp
Cornstarch 1/4 tsp
Lime/Lemon Zest as needed (Optional but recommended)
Almonds Chopped/Cashews Chopped/Raisins 1 tsp (Optional but recommended)
Method Of Preparation -
In a microwave safe bowl, add water, cornstarch, cinnamon powder, lime zest and sugar and mix well. (Add in the raisins if using)
Toss the chopped apples in the mixture making sure that all the pieces are coated with the sugar-cinnamon mixture.
Cover the bowl with a paper towel and microwave it for 2 minutes on high.
If needed microwave it for a few more seconds if the sugar syrup is not thick enough.
Sprinkle chopped nuts and serve it as is or
- On top of tortilla chips for an interesting snack.
- With ice cream to make a delightful dessert.
- On top of oatmeal.
