BM #131 Week 2 Day 3 - 

The third recipe in this Biryani/Pulao series is here. I have been hearing a variety of reviews regarding the Raw Jackfruit Biryani. But it is not an understatement to say that the texture of raw jackfruit is a matter of preference.

The flavor of all the spices shines through all the jackfruit cubes. I have also heard from multiple chefs never to skimp on fresh mint leaves in any kind of biryani. This biryani is not an exception either to the mint leaves.

Ingredients - 

For Boiling Basmati Rice - 
Boiling Water 8-10 cups 
Oil 1/2 tsp
Cloves 3-4
Cinnamon 1 inch piece
Cardamom 2-3
Salt 2 tsp
Basmati rice 2 cups
For Boiling Raw Jackfruit - 
Raw Jackfruit 300 grams (I used a frozen pack)
Salt 1 tsp
Turmeric 1/4 tsp
For the Biryani - 
Oil 2 Tbsp + 1 tsp of Ghee
Onions sliced 1/2 cup
Ginger-Garlic Paste 2 tsp
Cloves 4-5
Cinnamon 2 inches
Cardamom/Elaichi 3-4
Star Anise 1 
Marathi Mogga 2-3
Shahjeera 1 tsp
Japatri / Mace 1 strand
Salt as needed
Turmeric 1/2 tsp
Mint and Coriander leaves 2-3 handfuls
Yogurt 1/2 cup
Biryani Masala Powder 1 tsp
Fried Onions handful (Store Bought)
Rose Water 1 Tbsp (Optional)
Few Saffron strands soaked in 1/4 cup of warm milk (Optional)


Method Of Preparation -

Pressure cook for about 1-2 whistles (or approximately 15 minutes) the raw jackfruit cubes adding a little salt and turmeric. Set it aside.

Wash and soak basmati rice and set aside for 30 minutes.

In a heated pan add 2 tbsp of oil + 1 tsp of ghee, sauté sliced onions, ginger-garlic paste, cloves, cinnamon, elaichi, star anise, shajeera, marathi mogga, japatri, salt, and turmeric.

After the onions are sautéed well add 1/2 cup of yogurt, salt, coriander-mint leaves, biryani masala powder and the cooked raw jackfruit cubes. 

Cook well on low heat. Remove half the mixture into a small bowl and reduce the heat. 

In a huge pot boil water adding cloves, cinnamon, elaichi , oil and salt. When it comes to a rolling boil, add the drained rice and cook on high heat for 10-12 minutes.

When the rice is 80% cooked, drain the water and gently spread the rice on top of the raw jackfruit mixture in the pan. Top it with mint-coriander leaves, fried onion. Also sprinkle some rose water and the saffron infused milk. 

Add in the the raw jackfruit mixture that was set aside and the remaining rice with some more fried onions and coriander-mint leaves. Sprinkle some rose water and the saffron infused milk.

Cover making sure the steam doesn't escape and cook on the lowest heat setting for about 10-12 minutes. Remove from fire and allow about 10-15 minutes for the flavors to blend. 

Fluff gently just before serving with Raita.

BM #104 Day 10 - 

Another unique recipe from the state of Odisha using Raw Jackfruit. I understand that the use of raw jackfruit is very unique to certain regions of India.

When we lived in Assam in the later half of  70's, I remember we had a huge jackfruit tree in our yard. But my parents weren't too keen on the jackfruit and would always gift it to our neighbors. Even today, I am sure my parents don't have any particular affinity to the fruit. 

But I have recently grown to admire this fruit in quite a few recipes both raw and as a fruit. So when Aunty mentioned a cutlet with raw jackfruit, I immediately tried it out and we loved the flavor immensely.

Ingredients - 

*Raw Jackfruit shredded 2 cups
Potato , boiled 1 cup (I medium sized)
Bread Crumbs 1 cup
Salt, Red Chili Powder, Green Chili, Ginger, Garlic as needed
Amchur Powder 1 tsp (Or fresh grated raw mango 1 Tbsp)
Chaat Masala 1 tsp
Dhania Powder 1/2 tsp
Jeera Powder 1/2 tsp
Garam Masala 1/2 tsp
Onion finely chopped 1/2 cup
Peanuts, roasted and coarsely crushed 1/4 cup
Oil to shallow fry as needed
(Traditionally Mustard oil is used but I have used Coconut oil)

*I have used frozen shredded raw jackfruit. If using fresh raw jackfruit, chop and pressure cook along with salt and turmeric and use in the recipe.



Method Of Preparation -


Thaw the frozen jackfruit. I microwaved for 5 minutes and mashed it in a processor.

Peel and boil potato and mash. set aside.

Pulse the bread slices to make crumbs.

In a mixing bowl, add the mashed jackfruit, mashed potato, salt, turmeric, finely chopped green chili, grated ginger, grated garlic, red chili powder, dhania powder, jeera powder, garam masala, chaat masala, amchur powder, coarsely crushed peanuts and bread crumbs.

Knead the mixture well and form a stiff dough. If the dough happens to be runny, add some gram flour (which I didn't have to add).

Pinch equal sized portions (12-14) of the mixture, pat them into thick discs and shallow fry until they are golden brown on both sides.

Fanas Ki Sabji

BM#63 Day 6 -

Here is another authentic recipe from the kitchen of my friend's mom. I understand that in the coastal region of Maharashtra, they use a lot of coconut, jack fruit and mango apart of many other spices.

Lot of my friends were surprised that I made this raw jack fruit curry. Apparently they were not aware that the raw jack fruit was available in the canned form.

I had made a similar recipe earlier which had more of the coastal Andhra touch. It is here, if interested.

Ingredients - 

Tender Jack Fruit, chopped 2 cups (I used a canned version)
Peanuts and Cashews handful each soaked for a few minutes
Salt, Turmeric and Red Chili Powder as needed
Seasoning (Oil 2 tsp, Mustard seeds 1/2 tsp, Asafotida a pinch)

Method Of Preparation -


Drain the cashews and peanuts. Add them to the chopped jack fruit and steam cook them.

In a heated pan, add oil and the rest of the seasoning ingredients. After the mustard seeds crackle, add in the cooked jack fruit mixture.

Sprinkle salt, turmeric and red chili powder. Mix well and remove from heat.

Serve it as an accompaniment to rice and dal.

This is the first time I have ever seen, cooked or tasted raw jack fruit in my life. I know some of you might be very surprised. Just as one of my friends said "It cannot be true, I cannot imagine someone not having tasted panasa pottu koora". But then here I am :).

Anyway my cousin, Mallika shared this recipe and urged me to make it and she was positive that we would love it and sure we did!! Apparently it is a treasured recipe from one of her friends. I later on came to know that it is a traditional dish in some parts of Andhra. 

Since I was not sure of the authenticity, I asked one of my friends to taste it and let me know if it came close to the traditional. She gave her stamp of approval and so it appears here !! She says that there are many ways of preparing this curry and most of them include addition of tamarind pulp. The variations are for another day. 

Here is the fry for you to enjoy as part of Day 3 Week 2 of BM #27.

Ingredients - 

Raw Jack Fruit / Panasa Pottu finely chopped 2 cups [I used the canned variety]
Cashews broken pieces, roasted 2 Tbsp
Salt as needed
Turmeric 1/4 tsp
Red Chilli Powder as needed
Mustard Powder 1 tsp
Coconut Powder 1 tsp
Seasoning (Oil 1 Tbsp, Chana Dal 1 tsp, Urad Dal 1 tsp, Cumin Seeds 1/2 tsp, Mustard seeds 1/2 tsp, Curry leaves few)

Method Of Preparation -

This is what I got after draining the raw jack fruit and washing it. 




I used a food chopper to chop the raw jack fruit to required size.

In a heated pan, add oil and the rest of the seasoning. After the mustard seeds pop and the dals are brown, add the chopped raw jack fruit and fry for about 10-12 minutes until they are cooked and tender.

Sprinkle salt, turmeric, mustard powder, red chilli powder, cashews and coconut powder.

Mix well and cook for a few minutes more and remove from fire.

Serve it warm with steaming hot rice and enjoy!
