Finally a banana bread which won our hearts today! I have been looking all over the internet for a banana bread which seems just right for us. I found one recipe (online which has been taken offline since) which satisfied all our taste buds this evening. 

A perfect healthy snack or maybe good for breakfast too. A little fruit jam/jelly takes this bread to a different level !! My experience in making breads is very limited and I am certainly going to make this as often as I can (or as often as I have over ripe bananas in my fruit bowl, lets say!). 

I thought that the list of ingredients was a little too long, but we can't complain after having polished off the whole bread. 

Also I found it very interesting that this bread had very little fat and yet came out really moist, porous and yummy! It was not too sweet not too bland. So adding a few raisins or any other dried fruit should be good too. 

However, I have one question for anyone who is experienced in baking. The top of the bread had a huge crack (check the picture which the shows the crack I am referring to). Why did this happen? Anything I did wrong or is it normal? I got to look for answers.. Feel free to drop in suggestions/advice...



Note - One tip I found interesting is that the quantity of dry ingredients should be equal to the quantity of wet ingredients for quick breads. So measure carefully while adding the ingredients.


Ingredients - 

Dry Ingredients - 
All purpose Flour 1 cup 
Whole Wheat Flour 1/2 cup
Baking Powder 3 tsp
Salt 1/2 tsp
Nutmeg 1/2 tsp
Ginger 1 tsp
Cinnamon 1 tsp
Chopped Almonds 1/2 cup
Cornstarch 2 Tbsp 

Wet Ingredients - 
Over-Ripe Bananas  2 Big (should equal at least 1 1/2 cup of mashed banana)
Sugar 1/4 cup
Lemon Juice  2 Tbsp
Water 2 Tbsp
Vegetable Oil 1/4 cup



Method Of Preparation - 

Preheat the oven to 350F.

Measure all the dry ingredients and mix them in a mixing bowl. Chop, measure and mix the almonds to the dry ingredients. 

Make banana puree adding the over ripe bananas, oil , lemon juice, sugar and water.

Mix the wet and dry ingredients and gently mix them. The batter shouldn't be too runny. 


Prepare a bread pan either by spraying oil or by spreading a parchment paper. I found using the parchment paper very easy.

Bake for about 40-45 min. I baked mine for 39 min and switched off the oven and left the pan in the oven for 5 more minutes. 

Make sure the top is brown and firm and a toothpick inserted in the center comes out clean.


Cool on a rack in the pan for about 5 min and then slice it after it cools completely.
