When we eat out in any Indian restaurant here, 99% of the time we order Naan and relish the heavenly taste of the buttery Naan with any gravy curry. Naan is basically a kind of leavened Indian bread made with all purpose flour, yeast and curd (yogurt) traditionally cooked in a clay oven. Since we don't have clay ovens, I always thought that Naan making is best left to the restaurant chefs. But I had to change my mind when I saw this recipe in Aipi's USmasala. This is a keeper of a recipe and surely it had to be my next experiment!

So here I am, beaming with pride after a successful attempt at making Naan at home. Barring a couple of them which got over cooked owing to my little one's crankiness, I am pleased with the results. I admit I was a little nervous when I was kneading the sticky dough and also when the dough didn't rise enough even after 1 hour. I forgot that cold weather has already set in and that I need to keep the oven warm for the dough to rise well. Anyway I will be more confident and careful the next time (and sure it will be made often in my kitchen!).

Ingredients -

All purpose flour 3 1/2 cups + 1/2 cup (when kneading the sticky dough and also when rolling the naan)
Active Dry Yeast 1 tsp
Warm Water 1 cup
Warm milk 1/4 cup
Salt 1 tsp
Sugar 1 tsp
Yogurt (well beaten) 4-5 Tbsp
Vegetable Oil 2 tsp + 2 tsp (used while kneading)
For Topping I used
Garlic finely chopped 1 tsp
Coriander leaves finely chopped 1 Tbsp

Method Of Preparation -

Preparing the dough -
In a small bowl, add yeast, sugar, salt, warm water, warm milk and oil. Let the yeast dissolve and froth up in about 10 min. (If the yeast doesn't froth, then the yeast is best discarded!).

In a mixing bowl, add all purpose flour (Maida) and slowly add the yeast mixture to knead into a sticky dough. Also add in the yogurt. Add some more flour if the dough is unmanageable.

Knead for about 3-4 min until the dough is pliable. Grease your palms with oil if needed. (Trust me you will need the oil!!)

Sprinkle some oil on the dough and cover it with an oiled wrap or foil. Keep it in a warm place for the dough to double up. It usually doubles up in about an hour. But mine took 2 hrs as I forgot to put it in a warm place.

Punch down the dough to release the trapped air and make 8-10 portions of the dough. Keep them covered until ready to be rolled.

Baking the Naans -

Put the oven in the high broil mode.

On a floured surface, roll out each portion of the dough into an elongated oval disc about 1/8 of an inch in thickness and about 6-8 inches in length. Sprinkle chopped garlic and coriander leaves and roll gently.

Place the rolled out naan on a foiled cookie sheet and put it in the oven. Make sure it is in the top most shelf in the oven. And if the cookie sheet can accommodate more than one rolled out naan, please use the extra space for more naans.

Let them bake for 3-4 min or until brown spots appear and then pull them out (be sure to wear oven mitts) and flip them onto the other side. Let them bake for another 2-3 min.

Tip: Don't forget to keep an eye on the oven as broiling burns the dough faster than we imagine!

Take them out and brush some butter generously and serve with any gravy curry..yumm yumm..
