I make cutlets very often - as often as there are leftovers :) This works out for me because my kids love to eat cutlets of any type. On this particular occasion I made these cutlets without using any leftovers. That is definitely new to me :) Another new thing is not using bread as the binding agent. I tried making this as a healthy snack for the kids by adding Oats and Spinach. The kids loved these and the adults at home hardly got to taste these. I guess a variety of vegetables can be used to make these much more interesting!
Ingredients -
Rolled Oats 1 cup
Potatoes, peeled, boiled and mashed 1 cup
Spinach, finely chopped 1 cup
Garlic 1 and Green chillies 1-2 , ground to a paste
Salt as needed
Coriander leaves, chopped 1 Tbsp
Oil to shallow fry
Method Of Preparation -
Pulse the rolled oats in a mixer to make a coarse powder.
Mix the powdered oats, mashed potato, finely chopped spinach, and the rest of the ingredients adding as little water as needed to make a stiff dough.
Heat a griddle/tawa and sprinkle some cooking oil. Pinch lime sized dough and make 2 inch discs with your palms and place them on the hot tawa/griddle.
Let them cook until they are golden brown on both sides and remove on to paper towels.
Continue for the rest of the dough.
Serve them with Ketchup or any other dip of your preference.
