After a lot of deliberation, I finally tried out these Quesadillas (pronounced as kesediyas) and we have fallen in love with these protein packed powerhouses.
I had a misconception that these are filled with cheese and so avoided it for so long. Thanks to this Blogging Marathon, I looked into the various varieties of Quesadillas and figured out that my family will take to these happily and I was so right!!

Ingredients -
Tortillas 4
Black Beans, soaked and cooked 1 cup
Salsa 1 cup
Onions, finely chopped 1/2 cup
Tomatoes, finely chopped or pureed 1/2 cup
Salt and Green Chillies as needed
Cheese, shredded as needed
Sour Cream as needed
Oil 2 tsp
Method Of Preparation -
To season the black beans -
Heat oil in a sauce pan and saute the onions until they are translucent. Add in the tomatoes and cook until they are mushy.
Mix in the green chillies and salt. [Alternatively add any seasoning/flavors of your choice]. Add the boiled black beans, mix and remove from fire.
To Prepare the Quesadillas -
On a heated griddle / tawa place a tortilla (This time I used a home made small roti (for the kids) which tastes about the same).
On one half of the tortilla, spoon about 2 tablespoons of the black bean mixture, top it with the salsa and cheese on top. Close the other side of tortilla to make a semicircle.
Alternatively, Use one full tortilla , add the filling all over and cover with another tortilla. But be careful when you flip it to the other side.
Cook on one side and then flip it carefully to cook on the underside as well. The tortilla tends to become a little crusty which adds to the bite and taste as well.
Remove it from fire and slice it into two halves.
Continue with the rest of the tortillas.
Serve it with Sour cream on the side.

Another one of my family favorite.. We love it and I try to differ the fillings too -- our favorite is sauteed spinach, roasted/ grilled veggies etc.
