I have tried a variety of scones as that happens to be my kid's favorite after school snack. This time tried a healthier version which I thought was very filling as well.
Here they are as part of day 2 week 3 of BM#31.
Recipe Source - The Vegetarian Mother's Cookbook by Cathe Olson
Ingredients -
Rolled Oats 2 1/2 cups
Whole Wheat Flour 1 cup
Baking Powder 1 tsp
Cinnamon Powder 1/2 tsp
Cardamom Powder 1/2 tsp
Ginger Powder 1/4 tsp
Sea Salt / Regular Salt 1/4 tsp
Walnuts and Almonds, chopped 1/2 cup
Oil 1/4 cup
Apple Juice approx 3/4 cup for kneading
Method Of Preparation -
Preheat the oven to 350 F.
In a mixing bowl add all the ingredients except apple juice. Pour apple juice gradually to knead into a stiff dough.
In a parchment lined baking tray, place the dough and flatten it into a 1/2 inch thick disc. Cut the disc into 8 wedges.
Bake for about 25-28 min.
Serve with jam or fruit preserves while still warm.
