BM #93 Week 2 Day 1 - 

This week, I shall showcase some kid friendly dishes fit for a party. This month, Srivalli's blog and this event are celebrating their 10th anniversary. I shall send these dishes virtually to her party!

If you know me, I am a great fan of scones where I use whole wheat flour and very little fat. These scones are no different. These appeal to slightly older kids who prefer their treats to be on the spicier side. If these cater to the younger kids, reduce the chilies and they should be good for them.

Ingredients - 

Whole Wheat Flour 1 1/2 cups
Salt 1/2 tsp
Baking Powder 2 tsp
Coriander Leaves, finely chopped 2 Tbsp
Spinach, finely chopped 1 cup 
Onions, finely chopped 3 Tbsp 
Ginger-Garlic-Green Chili Paste 2 tsp (or as needed)
Olive Oil 2 -3 Tbsp
Yogurt / Greek Yogurt 1/4 cup + more if needed



Method Of Preparation -


In a mixing bowl, sift the whole wheat flour and baking powder. Add in salt and ginger-garlic-green chili paste. Rub in the olive oil.

Preheat the oven to 400 F.

Add the finely chopped onions, spinach and chopped coriander leaves. Mix well.

Gradually add yogurt to the flour and gently mix to get a sticky dough. 

Don't knead at all. Just gather the sticky dough and oil your fingers to pat the dough into a circular shape (about 1/2 inch thick). 

Best way to do it is to line a baking sheet with parchment paper and transfer the dough onto it. Pat it with oiled fingers and slice into 8 wedges.

Bake it for 20-22 minutes until a tester comes out clean. Remove onto a wire rack.


Slice and serve warm with a dollop of butter.

BM #91 Week 3 Day 2 - 

After the brownies which I posted yesterday, here are some savory scones for the non-sweet lovers. I love scones when I can make them with wheat flour and less fat and healthy ingredients. Better still if they are savory.

I made these a few months back and I cannot recollect the recipe source. 

Recipe Source - unknown
Ingredients - 

Whole Wheat Flour 1 1/2 cups
Salt 1/2 tsp
Baking Powder 2 tsp
Green Chili Paste 1 tsp (or as needed)
Coriander Leaves, finely chopped 2 Tbsp
Zucchini , grated 1 cup (I medium sized one)
Olive Oil 2 -3 Tbsp
Yogurt / Greek Yogurt 1/4 cup + more if needed
Fried Onions / Caramelized Onions 2 Tbsp 



Method Of Preparation -


In a mixing bowl, sift the whole wheat flour and baking powder. Add in salt and green chili paste. Rub in the olive oil.

Preheat the oven to 400 F.

Dump in the grated zucchini and chopped coriander leaves. Mix well.

Gradually add yogurt to the flour and gently mix to get a sticky dough. 

Don't knead at all. Just gather the sticky dough and oil your fingers to pat the dough into a circular shape (about 1/2 inch thick). 

[Oops, I forgot to add the fried onions. If fried onions are not in the pantry. Onions can be caramelized in a pan or totally omitted.]

I patted the fried onions on the scones.


Best way to do it is to line a baking sheet with parchment paper and transfer the dough onto it. Pat it with oiled fingers and slice into 8 wedges.

Bake it for 20-22 minutes until a tester comes out clean. Remove onto a wire rack.

Slice and serve warm with a dollop of butter.

BM #84 Week 4 Day 1 -

This week I shall post some of the bookmarked recipes from my 'magic folder'. There are a lot of recipes which I bookmark frequently and try them out at random times. I make sure I record it, take pictures and tuck them into my magic folder. I guess that is what most of the bloggers do as well.

These scones have a special place in my heart as I love to cook with coconut milk. Though the taste of coconut milk is masked in these scones, they turned out super fluffy and addictive.

Ingredients - 

All Purpose Flour / Maida 1 cup
Whole Wheat Atta 1 cup
Baking Powder 1 Tbsp
Sugar 1 Tbsp
Salt 3/4 tsp
Butter at room temperature 1/4 cup
Fresh Blueberries 1 cup
Lime/Lemon zest 1 Tbsp 
Coconut Milk 1 cup + 2 Tbsp, thick, blended until smooth 
Crystal Sugar for topping



Method Of Preparation -


In a mixing bowl, combine flours, baking powder, sugar, salt, and butter and mix well until it resembles bread crumbs.

Add blueberries, lemon zest and coconut milk until a soft dough forms.

Pat the dough into a 7-inch round onto a parchment lined baking tray. Cover it and refrigerate for 15 minutes.

Preheat oven to 400°F.


Cut the chilled dough into 8 wedges. Sprinkle each scone with a good amount of the sugar and bake until raised and golden, about 23-25 minutes.

If you are a regular reader of this space, you probably know that my family loves scones and I love to bake them as they have less sugar and lesser fat than most sweetmeats.

Here is another version this time with the tropical ingredients of mango and coconut. The coconut milk is a surprise addition which makes all the difference. This is part of Day 2 Week 3 of BM #40.

Vanilla-Date Scones

V for Vanilla Date Scones under Baked Dishes for BM #32. If you have been following my space, you would have realized that I love to bake scones. They are very popular with the kids and also I rely on them as I can make them low fat and low sugar thereby making it a healthy snack.

I saw this recipe when looking for options with V and thought it was a good idea to sneak in dates and make it without any additional sugar. The next time I would add a few more dates as I felt that there were not enough dates.

The little one was very adventurous in her toppings. She tried with sugar glaze, chocolate syrup and strawberry syrup. And the husband ate it with Tomato Chutney :).

Ingredients - 

*Self Rising Flour 1 cup
Butter milk a little less than 1/2 cup
Vanilla Essence 2 tsp
Dates 5-6 , pitted
Vegetable Oil / Butter 1 Tbsp
Brown Sugar / Raw Sugar 1 tsp for topping

* I used 1/2 cup of All Purpose Flour, 1/2 cup of Wheat Flour 1/4 tsp of Salt and 1/2 Tbsp of Baking Powder


Vanilla-Date Scones

Method Of Preparation -

Preheat the oven to 400 °F. Prepare a baking tray by lining a parchment paper.

In a bowl, mix the flours and baking powder (skip this if using self rising flour).

In a blender puree the dates along with oil, buttermilk and vanilla essence.

Knead the flour into a sticky dough by adding the pureed date mixture.

Transfer the dough to the baking tray, pat it into a 1/4 inch thick disc. Sprinkle raw sugar all over the dough.

Using a pizza cutter, make 8 wedges and bake for about 12-13 min or until a tester comes out clean.

Remove and serve warm with clotted cream or jam of your choice.

Eggless Oat And Pear Scones

We all love to have scones at home as an evening snack. But I wanted to check if we could have scones for breakfast too. And guess what, we loved it as breakfast too on a random weekend when our regular schedules went haywire!

That is when I thought these scones can work as 'breakfast on the go' with a cup of milk/coffee/tea. For the next 3 days of BM #25, I shall blog recipes which can qualify under the theme. Here are the scones for Day 1.

Ingredients - 

Whole Wheat Flour 1/2 cup
All Purpose Flour (Maida) 1/2 cup
Rolled Oats 1/2 cup
Sugar 3 Tbsp
Baking Powder 1 tsp
Baking soda 1/4 tsp
Salt 1/8 tsp
Cinnamon Powder 1/2 tsp
Cream Cheese 2 Tbsp
Pear, diced (I used 1 pear)
Buttermilk 1/2 cup (approx)
Walnuts, chopped 1/4 cup
Topping 
Cinnamon and Sugar 1 Tbsp (Optional)
Chopped nuts as needed (Optional - I didn't use)


Eggless Oat And Pear Scones

Method Of Preparation -

In a mixing bowl, sieve the wheat flour, all purpose flour, baking powder and baking soda. Add oats, salt and cinnamon powder to whisk well.

Preheat the oven to 375 F. 

Rub in cold cream cheese into the flour mixture and add in the walnuts and diced pears.

Knead into a sticky dough by adding buttermilk as needed.

With Oiled fingers transfer the dough onto a parchment lined baking sheet and pat the dough into a half inch thick circular disc.

Brush the top with buttermilk and sprinkle cinnamon powder and sugar as needed. Optionally nuts can be sprinkled as part of the topping.

With a pizza cutter or a knife make 6-8 wedges of the dough and let them stick together.

Bake for about 20 min or until the top is golden brown.

Transfer the scones onto a cooling rack and serve them warm either with jam or whipped cream. (My kids loved them as is with a side of milk !)

Vegan Savory Cilantro Scones

Magic Mingle #6 this month has the magic ingredients of All Purpose Flour and Coriander. The options were numerous but I chose to bake some Vegan scones as they are low in fat and they are well appreciated at home.


The inspiration for these  scones is from here and I am sure I am going to bakes these scones very often as these were an instant hit with the family! 


Ingredients - 


All Purpose Flour 1 cup
Whole Wheat Flour 1/2 cup
Baking Powder 2 tsp
Cumin Seeds 1 tsp
Ajwain / Vaamu  1/2 tsp
Red Chilli Powder 1/2 tsp (or as per taste)
Spring Onion finely chopped 2 Tbsp
Cilantro / Coriander leaves finely chopped 3 Tbsp
Almond Milk 1/2 cup (or as needed)
Apple Cider Vinegar 1 1/2  tsp
Olive Oil 2 tsp


Vegan Savory Cilantro Scones


Method Of Preparation -


In a mixing bowl, sift the all purpose flour, wheat flour and baking powder. Add in the herbs and spices and mix well. Rub in the olive oil too.


Add Apple cider vinegar to almond milk and set aside for a couple of minutes.


Preheat the oven to 400 F.


Gradually add the almond milk + vinegar mixture to the flour and gently mix to get a sticky dough. 


Don't knead at all. Just gather the sticky dough and oil your fingers to pat the dough into a circular shape (about 1/2 inch thick). 


Best way to do it is to line a baking sheet with parchment paper and transfer the dough onto it. Pat it with oiled fingers and slice into 8 wedges.


Bake for about 15 min then I broiled on high for a couple minutes to brown the tops. Slide them onto a cooling rack. Apply some butter on the top if you don't mind a non-vegan version (I sprayed some olive oil as I felt the tops were a bit dry).


We, adults enjoyed with a dollop of hot sauce while the kids had them with regular ketchup.




Preparation Time 10 min + Baking time 17 min + Cooling time 10 min 
Makes 8 wedges

Vegan Pumpkin Scones


I was looking for some ideas of low fat, low sugar goodies for day 5 of BM 12 and it suddenly struck me that I used to make scones and we all liked those. After taking a quick look into the refrigerator, I found a small wedge of red pumpkin begging to be used and so I googled for pumpkin scones and I tinkered around with the ingredients to suit my requirement to make it vegan. 


I thought these scones were more or less guilt-free and a small portion is good enough for a snack. Don't you think? At least my kids thought so. :)
Please feel free to unveganize, if you will, substituting with yogurt of your choice. 


Ingredients - 


Whole Wheat Flour 1 cup
All Purpose Flour (Maida) 1/2 cup
Brown Sugar 2-3 Tbsp (or as needed)
Baking Powder 2 tsp
Cinnamon Powder 1/2 tsp
Nutmeg Powder a pinch
Salt 1/4 tsp
2 Tbsp Oil (I used Olive Oil)
Pumpkin Puree 1/2 cup (I used home made)
Soy Yogurt 1/2 cup
Chopped Walnuts and Brown Sugar for topping (Optional)


Vegan Pumpkin Scones


Method Of Preparation -


Preheat the oven to 375 F.


Sieve together wheat flour, all purpose flour, baking powder, cinnamon powder, nutmeg powder and salt. Mix in brown sugar as well.


To this mixture add the oil and mix well to get a crumbly texture.


In a separate bowl, whisk pumpkin puree and soy yogurt together and gradually add it to the dry ingredients.


It should result in a very sticky dough.


Transfer the sticky dough onto a parchment paper lined baking sheet and with oiled hands pat the dough into 1/2 inch thick circular disc (approximately 6 inches in diameter).


With an oiled cutter (like a pizza cutter) make 6-8 wedges on the dough.


Sprinkle the chopped walnuts and brown sugar evenly on the dough.


Bake for about 18 min-20 min until a tester inserted in the center comes out clean. 


Let it cool on a wire rack and enjoy! If you like it a little sweeter, enjoy it with jam/jelly of your choice!

A Scone, according to Wikipedia, is a small British quick bread, which uses baking powder as a leavening agent.  That is all I knew about scones until I baked them at home recently.  After I baked, tasted and relished, I felt it was a cross between a cake, muffin and a cookie, if you will. 


I received this book 'Vegan With a Vengeance' by Isa Chandra Moskowitz as a gift in an MLLA giveaway. To be frank, I am not into cooking from cookbooks (ya, don't give me looks :) ). So this book was sitting in one corner of my bookshelf gathering dust, so to say. This theme of the current Blogging Marathon, helped me shed off my resistance to cook from cookbooks and pushed me into picking up recipes from books. Having gotten used to browsing the recipes online, reading and searching through the books sure is time consuming, what say you? 


Anyway after I went through the contents of this book, these scones caught my attention and I had an instinct telling me that these would be great as a tea time snack! To be honest, I hardly had time to make tea to enjoy these scones, these just disappeared off the parchment paper just like that..poof...


I like the fact that these scones used very little fat, a little less sugar and were a treat for sure! So for Day 3 of this marathon here are the easy to bake scones ..
