Keeping in view our love for scones, I tried another version of scones with Apples and Cinnamon. I knew that we would love these scones as Apple - Cinnamon is our favorite combination of flavors.
Ingredients -
Whole Wheat Flour 1 cup
All Purpose Flour 2/3 cup
Sugar 2 Tbsp (more if desired)
Salt 1/8 tsp
Cinnamon Powder 1 tsp
Baking Powder 2 tsp
Cold Butter 2 Tbsp
Apple, diced 1 cup (a medium sized apple)
Yogurt 1/2 cup
Milk 2 Tbsp
Topping -
Milk 1 Tbsp
Sugar 1 Tbsp
Cinnamon Powder 1/2 tsp
Method Of Preparation -
In a mixing bowl, sift the all purpose flour, wheat flour, cinnamon powder, salt, sugar and baking powder. Rub in the butter and mix until the butter is incorporated in the flour mixture.
Preheat the oven to 400 F.
Mix in the chopped apple.
Whisk milk and yogurt together and set aside for a minute.
Pour the yogurt-milk into the flour mixture and gently mix to get a sticky dough.
Gather the sticky dough and oil your fingers to pat the dough into a circular shape (about 1/2 inch thick).
Best way to do it is to line a baking sheet with parchment paper and transfer the dough onto it. Pat it with oiled fingers and slice into 8 wedges.
Brush some milk on the top and sprinkle sugar and cinnamon powder.
Bake for about 20 min then I broiled on high for a couple minutes to brown the tops.
Slide them onto a cooling rack and enjoy them warm.
