BM #116 Day 3 - 

This platter is very close to my heart as it was prepared, assembled and plated by my kids. I just took the pictures without any changes to the arrangement. So it is literally by the kids and for the kids.

One day when I asked the kids what their choice of a dream platter would be, they came up with these choices and they decided to get this together and so I let them. 

The platter they assembled - Blueberry Frozen Yogurt Open Sandwich, Strawberry Parfait, Chocolate Almonds, White Chocolate Strawberries, Dark Chocolate Strawberries, Chocolate Pretzels and Banana-Mango-Berry Milkshake.

Ingredients - 

Banana 1 
Blueberries handful
Strawberries 2-3
Mango Pulp 1/2 cup
Milk 2 cups



Method Of Preparation -


Blend the all the fruits along with milk in a blender and enjoy.

BM #107 Week 3 Day 3 - 

For the final entry to this month's kid's delight event, here is the breakfast smoothie I rely on when I don't have bananas on hand. 

My little one and I have this for breakfast on almost every weekday.

Ingredients - 

Apple peeled, cored and chopped 1 nos
Blueberries 2 handfuls
Almonds 2 Tbsp (soaked and peeled)
Greek Yogurt 1/2 cup
Milk 2 cups


Method Of Preparation -


Blend all the ingredients in a high power blender and serve immediately.

BM #105 Week 2 Day 3 - 

To conclude this theme of Kid's Delight - Anniversary Party happening at Srivalli's space, here are some delightful blueberry muffins made by my little one all by herself except handling the hot oven :).

I have made Blueberry muffins here and here . But when my little one found another recipe slightly different from the ones I have already posted, I asked her to go ahead and bake them and she was delighted that she could bake a new version.

We shared with our neighbors and they loved them too. These were gone in 2 days.

Ingredients - 

Whole Wheat Flour 1 cup
All Purpose Flour 1 cup
Sugar 1/2 cup
Salt 1/2 tsp
Baking Powder 3 tsp
Baking Soda 1/4 tsp
Blueberries 1/2 cup (We used frozen)
Buttermilk 1 1/2 cups
Apple Cider Vinegar 1 tsp
Butter, melter and cooled 4 Tbsp 
Vanilla 3/4 tsp

Method Of Preparation -


Preheat the oven to 375 °F. Line the muffin pan.

In a mixing bowl, sift the flours, baking powder, baking soda, salt. Add sugar and whisk well.

Blend Buttermilk, apple cider vinegar, melted butter and vanilla.

Pour the wet ingredients into the flour mixture and gently whisk to form a thick batter.

Gently fold the blueberries into the batter. 

[Please note that we folded the blueberries in the batter as we were using the frozen blueberries. If using the fresh ones, we would wash, pat them dry and add it to the dry flour].

Distribute the batter into the muffin cups and bake for 18-20 minutes or until the tester inserted comes out clean.

Allow them to cool and serve them.

BM #100 Week 3 Day 3 - 

To conclude this series of Kid's Delight - No Cook Dishes, here is another delightful smoothie bowl which my little one loves.

My little one and I are the smoothie fans in our place and we love to try out different versions of smoothies and smoothie bowls was on the to-do list for a while now. Finally I was able to make it and enjoy.

This is very easy to convert into a vegan version. Just replace the regular milk with any vegan milk of your choice. The most preferred is the Almond Milk.

Ingredients - 

Banana 1 
Blueberries 1 cup
Avocado 1/2 
Milk / Almond Milk 1 cup
Dates 3-4
Topping suggestion - Sliced bananas, blueberries, shredded dry coconut, chopped/slivered almonds, chia seeds etc



Method Of Preparation -


Blend the banana, blueberries, dates and avocado adding the milk.

Pour the smoothie into a bowl, arrange the toppings as preferred and enjoy. (I used sliced banana, coconut, blueberries and chopped almonds).

BM #100 Week 3 Day 1 - 

This open sandwich is a kid friendly no-cook treat made with healthy ingredients.

My little one assembled this open sandwich for us while I was away on an errand. Conception to execution was her. I just got the honor of clicking the pictures and tasting the sandwich.

I feel that kids are exposed to social media and popular food related feeds. That makes the kids very aware of new, popular, creative and tempting treats. This one is a perfect example. 

When I asked my little one to suggest a no-cook recipe, she promptly came up with this open sandwich idea and immediately got to work and by the time I was back from my errand, the sandwiches were ready to be clicked and devoured.


Ingredients - 

Graham Crackers 4-5
Greek Yogurt 3 Tbsp
Blueberries (I used frozen wild variety) as needed
Craisins (Dried Cranberries) as needed
Almonds chopped as needed


Method Of Preparation -


Arrange Graham Crackers on a tray.

Spread Greek Yogurt into a thick layer (or as preferred)

Sprinkle the toppings (blueberries, craisins and almonds).

Freeze it for an hour and enjoy the Frozen treat.

BM #84 Week 4 Day 1 -

This week I shall post some of the bookmarked recipes from my 'magic folder'. There are a lot of recipes which I bookmark frequently and try them out at random times. I make sure I record it, take pictures and tuck them into my magic folder. I guess that is what most of the bloggers do as well.

These scones have a special place in my heart as I love to cook with coconut milk. Though the taste of coconut milk is masked in these scones, they turned out super fluffy and addictive.

Ingredients - 

All Purpose Flour / Maida 1 cup
Whole Wheat Atta 1 cup
Baking Powder 1 Tbsp
Sugar 1 Tbsp
Salt 3/4 tsp
Butter at room temperature 1/4 cup
Fresh Blueberries 1 cup
Lime/Lemon zest 1 Tbsp 
Coconut Milk 1 cup + 2 Tbsp, thick, blended until smooth 
Crystal Sugar for topping



Method Of Preparation -


In a mixing bowl, combine flours, baking powder, sugar, salt, and butter and mix well until it resembles bread crumbs.

Add blueberries, lemon zest and coconut milk until a soft dough forms.

Pat the dough into a 7-inch round onto a parchment lined baking tray. Cover it and refrigerate for 15 minutes.

Preheat oven to 400°F.


Cut the chilled dough into 8 wedges. Sprinkle each scone with a good amount of the sugar and bake until raised and golden, about 23-25 minutes.

Tropical Blueberry Smoothie

BM #72 Week 1 Day 2 -

My little one is very fond of pineapple and so I always keep some canned crushed pineapple or pineapple chunks handy in my pantry. Since I am very sure that she would love to have a smoothie if there is pineapple in it, I went ahead and combined her two favorite fruits (Pineapple and blueberry) and whipped out this tropical delight!!

Tropical Blueberry Smoothie

Ingredients - 

Pineapple crushed with juice 1 cup
Blueberries 1/2 cup
Orange segments (deseeded) from 1 orange
Water and Ice as needed
Almonds and Walnuts handful
Topping -Whipped cream and chopped pistachio chocolate crushed

Tropical Blueberry Smoothie

Method Of Preparation -


Add all the ingredients except the toppings and blend until smooth. Sieve if needed.

Serve in tall glasses and add the toppings as needed.

Coconut Water - Mixed Fruit Popsicle

I was thinking about making popsicles using coconut water and was cracking my brains as to what combo would be liked by the kids. And Voila! I saw a Facebook post with a combo which was interesting. I was skeptical initially but then I thought if not the older one, the younger one would definitely like this!

So I went ahead and made this, put it in the freezer and offered to the kids when they came back from school. Surprise !! Surprise!! My older one liked it better! 

Later on she figured out that it had banana and so was very upset. She was like, "Amma you are so mean, you tricked me into eating and also liking banana". Ultimately she had to agree that banana is not always yucky and that I always strive to feed them healthy stuff. That was how my job for the day was done!!

Mixed Berry Smoothie

As we are still looking forward to some sunny weather, I pulled this recipe from my drafts from last summer when we were reeling under some high temperatures.

I made this for my little one who is a major fan of smoothies and juices in all its variety! She is more fond of chewing on crushed ice be it summer or winter!!

So cool it with this super tasty, easy to make smoothie for Day 3 Week 3 of BM #27.

My little one is very fond of blueberries. So we always have a packet of frozen blueberries in our refrigerator. I found that snacking on these frozen blueberries reduces the urge to eat other cold desserts like ice cream.  So a win-win situation!


One afternoon, my little one was asking me for blueberry pancakes. We used to get the ready made mix for these pancakes. So I thought I should try out the home made version and check if the kids like them. Like them they did for sure!!


Vegan Blueberry Pancakes


Recipe Source
Ingredients - 


Whole Wheat Flour 1/2 cup
Maida / All Purpose Flour 1/2 cup
Baking Powder 1/2 tsp
Baking Soda 1/2 tsp
Cinnamon 1/2 tsp
Salt a pinch
Sugar 2 Tbsp
Olive Oil 1 tsp
Soy Yogurt 1 cup
Soy Milk 1 cup
Blueberries 1/2 cup (or as needed)


Method Of Preparation -

In a mixing bowl, take Whole wheat flour, All purpose flour, baking powder, baking soda, salt, cinnamon, sugar and mix well.

To the dry ingredients add the soy yogurt and soy milk. Mix gently until there there are no lumps to a thick batter. Take care not to mix them briskly.

Set aside for about 10 min. Meanwhile prepare a hot griddle/tava.

On the hot tava, take a ladleful of batter and pour in the middle and let the batter take a circular shape. Don't try to spread the batter with a ladle.

Sprinkle some blueberries and press them gently so they don't make a mess.


When the bubbles on the pancake pop(after about 2 min or so), its time to flip it on to the other side. Flip them carefully and cook on the other side for a few seconds.

Continue with the rest of the batter and serve them with maple syrup or honey and trust me they would be an instant hit (if they have a sweet tooth!!).

Eggless Berry-Yogurt Upside Down Cake


Here is a delightful cake which came out real fluffy and mildly sweet, perfect for our taste. I tried to make it vegan but I didn't have soy yogurt on hand and moreover I wanted to try yogurt as an egg-replacer.


Enjoy the berry cake for Day 4 of BM #14.


Recipe Inspiration from here.
Ingredients - 


Whole Wheat Flour 1 cup
All Purpose Flour 1/2 cup
Cornstarch 2 Tbsp
Baking Powder 1 1/2 Tbsp
Baking Soda 1/2 tsp
Banana Over-ripe 1 medium size
Yogurt 1 cup (I used plain home made)
Sugar 3/4 cup (I used brown sugar)
Any flavorless Oil 1/4 cup
Berries 1 cup (I used strawberries and blueberries)
More Berries and Brown Sugar as needed to spread on the baking pan.


Eggless Berry-Yogurt Upside Down Cake


Method Of Preparation -


Preheat the oven to 350 F. Prepare a baking pan by greasing it. 


Spread the sliced strawberries and blueberries (don't slice the blueberries)  on the greased pan and sprinkle brown sugar as needed.


In a mixing bowl, whisk the flours, cornstarch, baking powder and baking soda. Toss the berries in the flour and keep aside.


Blend banana, oil, yogurt and sugar and slowly add it to the flour  mixture and gently mix it so there are no lumps.


Pour it onto the prepared pan and bake in the center rack for 45-47 min or until the tester inserted comes out clean.


Remove from the oven and let it cool in the pan for 10-15 min. Run a knife around the cake to loosen the edges and invert onto a wire rack to cool.


Slice and enjoy upon cooling.

As part of summer activities for the kids, I had planned a few baking sessions with kids. This experiment is part of the plan too as my daughter's friend had come over for a play date. I love to see the enthusiasm and the sense of pride in their innocent faces. I don't mind the mess, the time and effort (in making sure they do the job the right), not to forget the cleanup! 


I should say the preparation time in this particular instance was more than an hour keeping in view that I had to equally distribute the work of assembling the ingredients, measuring them, mixing them and filling the muffin cups. The kids in their excitement seem to have overly 'folded' in the blueberries and so the muffins were 'blue' all over. Never mind the color, the fluffy and airy texture certainly can deceive you into thinking they were baked using eggs!!


Eggless Blueberry Muffins


I couldn't take the pictures of the mini muffins as they were gone as soon as they came out of the oven!! [I thought it would be cruel to ask them to wait :)]

Ingredients - 


All Purpose Flour / Maida 1 cup
Whole Wheat Flour 1 cup
Baking Soda 1 1/2 tsp
Salt 1/2 tsp
Lemon Zest 2 Tbsp
*Blueberries 1 1/2 cup 
Milk 1 cup
Sugar 3/4 cup
Melted Butter 1/3 cup
Apple Cider Vinegar 1 Tbsp


Notes - 
* The original recipe used 2 cups All purpose flour.
* I used the frozen wild blueberries and next time I would reduce them to 3/4 cup. I understand that the wild blueberries bleed a lot. [Can't blame the kids for their folding technique :)]
* Canola Oil can be used instead of butter, rice milk can be used instead of dairy milk to make it vegan.


Method Of Preparation - 


In a mixing bowl, sift the flours, baking soda and salt and mix in lemon zest.


In another bowl, whisk the liquid ingredients (milk, sugar, melted butter, apple cider vinegar) until frothy.


Preheat the oven to 375 F. Prepare the muffin pan either greasing them or lining them accordingly.


Add the liquid ingredients to the flour mixture and mix gently with a rubber spatula. Do not over mix.


Gently fold in the blueberries. Do not mix too much as you don't want them to bleed.


Eggless Blueberry Muffins


Carefully fill the lined muffin tins until they are 2/3 full. 


Place the muffin tray in the center rack of the oven


Let them bake until a wooden tester comes out clean when inserted in the center. Ours were ready in 24 min.


Let them cool for 5-10 min before you devour them!
