Carrot Fennel Soup

This month's Magic Mingle called for the ingredients of Yogurt and Fennel. I was set on making a soup using fennel but was still undecided on what vegetables should go in.

I finally decided that I would use apple and carrot as the base and tried it out. My husband who usually doesn't like carrots, loved the fennel flavor and smell so much that he gobbled up the soup heaping compliments :). He said it reminded him of some soup he had in a restaurant in India!

Ingredients - 

Carrots, chopped 1 1/2 cups
Apple, peeled, cored and chopped 1/2 cup
Onions, finely chopped 1/4 cup
Yogurt/Curds, beaten 1/4 cup
Salt, Curry Powder and Pepper to taste
Seasoning (Ghee/Butter 1 tsp, Fennel seeds (Saunf) 2 tsp)
Note - 

*Feel free to use crushed fennel if preferred or A fresh fennel bulb would be aromatic as well.
*Greek Yogurt can be used instead of plain yogurt


Carrot Fennel Soup

Method Of Preparation -

Boil the chopped carrots and apple until tender. Blend until smooth adding about 1 cup of water or vegetable broth.

In a pan, heat ghee and add the fennel seeds. After they start to crackle, saute the chopped onions until they are golden brown. [Alternatively crushed fennel can be added later in the simmering soup.]

Pour the pureed carrot-apple mixture into the pan, sprinkle salt, curry powder and pepper to taste and simmer for about 3-4 min.

Remove from fire and mix in the beaten yogurt and serve it warm with croutons.

Eggless Pistachio And Tea Biscotti


I had been on a long break from blogging and hence could not participate in Magic Mingle. I have since come back and ready to delve into the magic, so to say! The magic ingredients for this edition of Magic mingle #15 are Tea and Pistachio. 

When I was thinking about this combo, my first thought was of a biscotti. I was wondering if tea and pistachio could work together in a biscotti when I saw some recipes online which used tea powder. I also had thoughts of using tea decoction in the batter. But I put those thoughts aside.

Eventually I used Mystic Vanilla Chai Powder which is sweetened. The result was very good. But I would suggest that the sugar be powdered and milk be reduced to make a stiff dough.


Ingredients - 

Wheat Flour 1 1/4 cups
Maida / All Purpose Flour 1 cup
Baking Powder 1 1/4 tsp
Vanilla Chai Powder 3 Tbsp
Sugar 3/4 cup (or more if preferred)
Pistachios, chopped 1/2 cup
Almonds and Cashews chopped 3 Tbsp
Flavorless Oil 1/4 cup (I used Canola Oil)
Milk a little less than 1 cup
Apple Cider Vinegar 1 tsp


Eggless Pistachio And Tea Biscotti

Method Of Preparation -

Mix the flours, baking powder, vanilla chai powder, sugar, pistachios, cashews and almonds.

Mix apple cider vinegar in milk and set aside for a minute. Blend in the oil as well.

Gradually pour in the milk-oil-Vinegar into the flour mixture and mix to form a stiff dough. (My dough turned a bit soft so I had to bake for a few extra minutes)

Preheat the oven to 350 F and line a baking tray with parchment paper.

Pat the dough on the parchment paper lined baking tray to form a 1/2 inch thick flat rectangular log.

Bake it for 40-45 min. Remove and let it cool for about 10 min.

Cut them into 1/2 inch slices and place them in the baking tray with the cut side up. Bake them again for 15-20 min until they turn golden brown.

Remove and let them cool on a cooling tray. They will get crispier as they cool. 

Serve them with milk or tea or gobble them as is :)

Crispy Peppery Moong Dal

This month's Magic Mingle was announced with the ingredients Moong Dal and Pepper. My first thoughts were of making some variety of Pongal. But later on I was thinking that some snack would be a good choice for the kids.

I usually get the ready made Crispy Moong Dal from the local Indian stores for the kids to munch on. This time around I thought to make it a little healthy for them to enjoy and tried it the microwave way! They just disappeared in a flash!

Ingredients - 

Moong Dal 1/4 cup
Salt as needed
Pepper as needed
Oil 1/2 tsp

Method Of Preparation -

Wash and soak the moong dal for about 1-2 hours. Drain and air dry for a few minutes.

In a microwave safe bowl (preferably ceramic/glass) spray oil and moong dal. Mix well so the moong dal is coated with oil.

Microwave it on high for 6-7 minutes in 1 minute intervals stirring in between. Remove from the microwave when the dal turns crispy and changes color to light golden brown.

Sprinkle salt and pepper and enjoy !

Vegan Savory Cilantro Scones

Magic Mingle #6 this month has the magic ingredients of All Purpose Flour and Coriander. The options were numerous but I chose to bake some Vegan scones as they are low in fat and they are well appreciated at home.


The inspiration for these  scones is from here and I am sure I am going to bakes these scones very often as these were an instant hit with the family! 


Ingredients - 


All Purpose Flour 1 cup
Whole Wheat Flour 1/2 cup
Baking Powder 2 tsp
Cumin Seeds 1 tsp
Ajwain / Vaamu  1/2 tsp
Red Chilli Powder 1/2 tsp (or as per taste)
Spring Onion finely chopped 2 Tbsp
Cilantro / Coriander leaves finely chopped 3 Tbsp
Almond Milk 1/2 cup (or as needed)
Apple Cider Vinegar 1 1/2  tsp
Olive Oil 2 tsp


Vegan Savory Cilantro Scones


Method Of Preparation -


In a mixing bowl, sift the all purpose flour, wheat flour and baking powder. Add in the herbs and spices and mix well. Rub in the olive oil too.


Add Apple cider vinegar to almond milk and set aside for a couple of minutes.


Preheat the oven to 400 F.


Gradually add the almond milk + vinegar mixture to the flour and gently mix to get a sticky dough. 


Don't knead at all. Just gather the sticky dough and oil your fingers to pat the dough into a circular shape (about 1/2 inch thick). 


Best way to do it is to line a baking sheet with parchment paper and transfer the dough onto it. Pat it with oiled fingers and slice into 8 wedges.


Bake for about 15 min then I broiled on high for a couple minutes to brown the tops. Slide them onto a cooling rack. Apply some butter on the top if you don't mind a non-vegan version (I sprayed some olive oil as I felt the tops were a bit dry).


We, adults enjoyed with a dollop of hot sauce while the kids had them with regular ketchup.




Preparation Time 10 min + Baking time 17 min + Cooling time 10 min 
Makes 8 wedges

Paneer Mint Paratha


This edition of Magic Mingle # 5 has the magic ingredients of Paneer and Mint as announced by Kalyani. I had Paneer Paratha in my mind for a long time now but kept postponing it owing to my older one's intolerance to Dairy products. 


But this announcement forced me to make a small batch of these delightful parathas just for S and me.


Ingredients - 


For the Outer Cover - 
Wheat Flour 1 1/2 cups
Salt as needed
Turmeric a pinch
Red Chilli Powder as needed
Water to knead the dough
For the Filling - 
Paneer 1/2 cup
Mint chopped 2 Tbsp (next time I would add more mint)
Green Chillies 1-2 (or as needed)
Salt to taste
Red Chilli Powder to taste
Cumin Powder 1/2 tsp
Garam Masala 1/2 tsp


Paneer Mint Paratha


Method Of Preparation -


Knead the dough with the whole wheat flour, turmeric, red chilli powder and salt with as much water as needed. Make sure the dough is not too tough to handle. Keep it covered for about 10-15 min.

Meanwhile coarse grind mint and green chillies and add add it to the soft paneer. 


Add salt, red chilli powder, garam masala, cumin powder to the above mixture. Adjust the spices and salt as per taste. Knead well and divide the filling into 7-8 portions.

Make equal portions of the dough. Roll out small chapatis and fill in a spoonful of the paneer-mint mixture, close the edges and roll out the parathas taking care that the mixture doesn't fall out. 

Shallow fry in a heated pan until both the sides are done. Repeat the procedure for all the parathas. Store in an insulated container until ready to serve.

Serve with Yogurt or any gravy curry!

Vegan Carrot Raisin Muffins

This month Kalyani announced that Carrots and Raisins would be the magic ingredients for Magic Mingle #4. I asked my husband and kids what they would like to have with these ingredients and carrot raisin muffins won by 2-1. :)

Corn-Wheat Flour Calzone


When I first read about Calzones, I thought it was just another form of pizza, or folded over pizza. Then I realized the combinations can be too many and some of them might be too good to resist! So when I saw the announcement from Kalyani regarding this month's Magic Mingle #3 with Corn and Wheat as the main ingredients, I thought it was high time I baked these. I am sure I would be baking these calzones with different fillings too!


I baked these without cheese and jalopenos for my older one but for my husband definitely a spicy version! He had a field time biting into the cheesy, spicy calzones!!


Ingredients -
For the Dough -
Whole Wheat Flour 2 1/2 cups
Vital Wheat Gluten 2 Tbsp
Water up to 2 cups (or as needed)
Oilve Oil 2 tsp
Italian Seasoning 1 Tbsp
Garlic minced 1 Tbsp
Active Dry Yeast 1 Pkt (2 1/4 tsp or 7 grams)
Salt 2 tsp (Divided use)
Sugar 1 tsp
Warm Water 1/2 cup

For the Filling -
Corn Kernels 1 cup (I used frozen)
Onion chopped 1/2 cup
Carrot grated 1/4 cup
Peas 1/4 cup
Salt as needed
Turmeric 1/4 tsp
Garam Masala / Chole Masala / Pav Bhaji Masala / Curry Powder as needed
Red Chilli Powder 1/4 tsp
For the Calzone Assembly - 
Pizza Sauce (I used Home made) as needed
Grated Cheese as needed
Black Olives sliced as needed
Jalopenos sliced as needed
Milk for brushing the tops


Corn-Wheat Flour Calzone

Method Of Preparation -

For the outer cover -
In small bowl of warm water, add 1/2 tsp of salt, 1 tsp of sugar and yeast. Let it froth up in a warm place for about 7-10 min.

In another mixing bowl, add in the wheat flour, vital wheat gluten, Italian Seasoning, minced garlic and salt. To this mixture add the proofed yeast solution, water and knead into a soft pliable dough. If it gets too sticky, apply oil to your hands and knead for about 10 min. [I used up to 1 tsp of oil].

Oil the bowl and the dough (to keep the dough from drying out) and cover it with an oiled cling film. (I used a deep bowl as a lid.)

Keep the covered dough in a warm place undisturbed for about 2 hours or until the dough doubles.

To Prepare the Filling - 
In a heated sauce pan, add oil, cumin seeds and saute the chopped onions. 


After the onions are golden brown, add the grated carrot, peas and corn. (Since I used frozen peas and frozen corn, I thawed them first). Stir fry for about 2 minutes.


Add turmeric, salt, Spice powder (I used Chana Masala Powder) and mix well. Remove from fire and let it cool.


Assembly of the Calzones -
Divide the dough into 12-15 equal portions. Roll out each portion into a thin disc of about 3-4 inches in diameter.


Spread a teaspoon of pizza sauce in the center of the rolled out disc, put in the corn filling, add in the additional toppings of olives, jalopenos and cheese whichever is preferred on one half of the disc making sure the edges of the semi circle are free. See picture below.


Corn-Wheat Flour Calzone


Moisten the edges with water and carefully fold the filling free half to form a semi circle. Seal the edges by pressing the rines of the fork. Poke the calzone in multiple places with a fork to make way for the steam to escape.


Preheat the oven to 375 F. 


Arrange all the prepared calzones on a lined baking tray and keep them covered until ready to bake. [They can be allowed to rise for a second time if preferred]


Brush milk on top of the calzone. Place the baking trays in the center rack of the preheated oven. I baked them for 25 min.


Remove from the oven and be careful when you bite into the hot, cheesy calzone.

Preparation Time 1 hr + Rising Time 2 hrs + Baking Time 25 min
Makes 12-15 calzones

Almond Ginger Snap Cookies

Sometime back I saw some Ginger Snap Cookies in a supermarket aisle and was wondering how the taste of ginger would tickle our taste buds. After a look at the ingredient list I felt that those cookies are better left on the shelves than in our pantry (and eventually into our tummies). But thanks to Kalyani's Magic Mingle #2, I could make my version of Ginger Snap Cookies and satisfy my curiosity and craving.

 The cookies were not so sweet, not so gingery but just slides down your mouth with the awesome taste of almond and ginger swirling...yumm..

Ingredients - 

Almond Meal 1 cup (I cup almonds powdered fine)
Salt a pinch
Baking Soda 1/8 tsp
Cinnamon Powder 1/2 tsp
Ginger Powder 1 tsp
Cloves 4-5 Powdered
Cardamom Powder 1/8 tsp (or more)
1 Tbsp Ghee (or unsalted butter)
Honey 1 Tbsp (I used Agave Nectar)
Cinnamon and Sugar for topping (Optional) 



Almond Ginger Snap Cookies


Method Of Preparation -


Preheat the oven to 300 F and prepare a baking tray by lining it with parchment paper.

In a mixing bowl, mix in all the ingredients except honey and ghee and mix well. 

Rub in the ghee into the almond meal and mix until it resembles crumbs. Add honey and mix well to make a stiff dough.


Pinch a tablespoon of dough and roll them into thick discs (I flattened them with a fork) and arrange them on the prepared baking tray 2 inches apart as they will puff out while baking.

I sprinkled some brown sugar and cinnamon on each cookie for some extra zing!


Bake them for 12 min and carefully flip them and bake them for another 3-4 min. But be careful with the temperature and baking times as each oven might behave differently.


Cool them on a cooling rack and enjoy! But be careful when transferring onto the cooing rack. They might not be firm.


They might be soft to touch but will firm up upon cooling.


Preparation Time 5 min + Baking Time 15 min + Cooling 10 min

Corn Bread was in my to-do list for a long time now. Finally I could give it a try and found it very appealing. Though I didn't prepare the corn bread in the traditional way, we all liked it. I would have added a little more spice but stopped myself as I had to please my older one! Lucky me, as my older one was pretty impressed. 


Corn Bread

A group of bloggers are part of a monthly event called 'Magic Mingle' initiated by Kalyani wherein she announces two ingredients that need to be used in a recipe and posted during the first 2 weeks of every month. This time she has chosen Cinnamon and Chillies. So after lot of deliberation I settled for making this corn bread with the special ingredients.


I borrowed the basic corn bread recipe from here. I just halved the recipe, added in red chilli flakes and cinnamon for the 'extra punch' and lo! the recipe is perfect for a moderately spicy corn bread with a hint of cinnamon in every bite!!


Ingredients - 


Milk 3/4 cup
Apple Cider Vinegar 3/4 Tbsp
Oil 1 Tbsp
Cornmeal 1/2 cup
Maida/All Purpose Flour  1/2 cup
Sugar 1 Tbsp
Salt 1/4 tsp (approx)
Baking Powder 1/2 tsp
Baking Soda 1/4 tsp
Red Chilli Flakes 1 tsp
Cinnamon Powder 1/2 tsp


Corn Bread


Method Of Preparation -


Preheat the oven to 425 F.


Prepare a baking pan by spraying oil. [I used a standard loaf pan as I didn't have a smaller baking tin available immediately. I sprayed oil and lined the base with parchment paper.]


Mix milk, apple cider vinegar and oil and set aside.


In another mixing bowl, add the dry ingredients and mix well.


Add the Milk-Oil-Vinegar mixture to the dry ingredients and mix until just blended.


Pour the batter into the prepared baking tin and place in the center rack of the preheated oven.


Bake for about 15-18 min or until a tester inserted in the center comes out clean.
[I pulled out mine at 17 min and the crust was very crisp and crunchy - just like we love!!]


Transfer onto a wire rack to cool. Slice and enjoy! 




Preparation Time 15 min , Baking time 17 min
Makes a very small loaf
