BM #116 Day 1 -

We, the BM group have embarked on yet another Mega Marathon with 26 posts in the month of september. This was postponed from April 2020 owing to the Pandemic. We are glad to be resuming our Mega Marathon. 

In this edition we are off on saturdays and each week there will be a different theme. So we have the first and last weeks of September with 4 days each and the remaining 3 weeks with 6 days each.

This week I will be posting different types of platters. Today it is the High Tea Platter with Irani Samosa, Eggless Whole Wheat Custard Powder Cookies, Eggless Marble Cake, Smashed Baby Potatoes, Crunchy Puri and Masala Chai.

Keep reading for the recipe while I get the next platter ready for tomorrow.

Ingredients - 

Whole Wheat Flour 2 1/2 cups (I used Royal Whole Wheat Flour)
Custard Powder 1/2 cup (I used Vanilla flavored)
Coconut Oil 2/3 cup + 1 Tbsp
Coconut Powder 1/2 cup
Powdered Sugar 3/4 cup (I powdered the raw cane sugar)
Salt 1/8 tsp
Baking Powder 1 1/2 tsp
Baking Soda 1/2 tsp
Milk if needed for binding (I had to use upto 1/4 cup of milk)



Method Of Preparation -


Whisk the flour, custard powder, coconut powder, salt, baking powder and baking soda.

Add the powdered sugar and mix well.

Pour in the oil and combine to make a stiff dough sprinkling as much milk as needed.

Set aside the dough for a few minutes.

Pinch 36-38 equal portions of dough, roll them into thick discs, flatten with a fork and arrange in a lined baking tray.

Preheat the oven to 350 °F.

Bake the cookies for about 15-18 minutes and remove from the oven. Allow them to cool and enjoy them.

BM #106 Week 3 Day 2 - 

In the Baked Dishes series this week, here is a simple baked cracker recipe which is delicious, healthy and vegan. 

Low fat butter, Olive Oil or any other oil can be used as a substitute. I have used raw sugar but it can be substituted with any artificial sweetener as needed.

These crackers turned out very addictive and mildly sweet with a hint of cinnamon. My little one, who is a fan of cinnamon sugar, says these crackers could use a little bit more cinnamon :).

Ingredients - 

*Oat Flour 1/2 cup
Whole Wheat Flour 1/2 cup (Plus more for dusting)
Cinnamon Powder 3/4 tsp
Salt 1/8 tsp
Sugar 2 Tbsp 
Coconut Oil 1 Tbsp

* I coarsely powdered Old fashioned Oats


Method Of Preparation -


In a mixing bowl, combine the oat flour, wheat flour, salt, sugar, cinnamon powder and coconut oil. Mix well until the mixture resembles bread crumbs.

Sprinkle water as needed and knead into a stiff dough.

Pinch Golf sized portions of the dough and roll out into thick discs.

Using a cookie cutter, cut the dough into any shape. Knead the trimmed portions of the dough and continue to cut out the crackers until all the dough is used up.

Preheat the oven to 300 °F. Arrange the crackers in a parchment lined tray and bake for 25 minutes. Switch off the oven and let them remain in the oven for about 10 minutes.

Remove them from the oven and allow them to cool. they crisp up as they cool. Store them in an air tight container or serve them immediately.

BM #104 Day 24 - 

For Ooty Varky, Our fellow BM member and baking expert, Gayathri, has experimented and come out with a tried and tested recipe for this Ooty Bakery specialty. Thanks to her, we have a wonderful, crispy, crumbly and rich cookie as a snack for tea.

There is a deep fried version of these as well which I am told is not as authentic as this one and that is a street vendor version. More on this in another post.

These varky were very popular at home with the kids and the Dad too. I had planned to take these to a party at my friend's place, but they were half gone when I stepped out of the kitchen. I knew there weren't enough for the party, so I let the kids finish the remaining ones (there weren't many left) and assured them I wouldn't be taking them to the party :).

Ingredients - 
For The Dough -
Maida / All Purpose Flour 1 1/4 cup
Sugar 2 Tbsp
Oil 3 Tbsp
Salt 1/4 tsp
Water as needed
For The Layering -
Oil 2-3 Tbsp
Maida as needed


Method Of Preparation -


In a mixing bowl add maida, salt, sugar and oil to form a crumbly mixture.

Add water and knead it into a soft pliable dough.

Cover and set aside in a warm place for two hours. I left it out for 4 hours.

Preheat oven to 350 °F. Line a baking tray.

Generously oil a clean work surface and knead the dough.

Roll or pat it into a thin rectangle which should be transparent enough to see through.

Sprinkle 2-3 tablespoons of oil on the transparent rectangle and add about 1-2 tablespoons of maida.

Mix well to make a spreadable paste. Add more oil or flour if needed.

Spread the paste evenly on the entire rectangle.

Fold 1/3rd of the rectangle inside and fold the opposite side as well to form a letter fold.

Mix more oil and flour to make a paste and cover the entire surface.

Again fold twice to make a letter fold and let it rest for 10 minutes.

Roll it into a thin rectangle again.



Slice the dough into 1 inch strips (I got about 8 of them).

From each strip, pull some dough off and roughly make it into a round shape, pinching the top.

Arrange them on a baking tray. 

Bake in the preheated oven for 35-40 minutes or until they are brown.


Cool on wire rack and enjoy with a cup of tea, or as is.

BM #98 Week 1 Day 1 - 

Welcome to another edition of Blogging Marathon. This week I shall showcase recipes which are scaled down for just 2 servings as the theme is 'Cooking for two'.

After I signed up for this theme, I realized that it is a huge task for me to cook for just two without any leftovers. I took up this challenge and tried making these applesauce cookies for just two people. The oatmeal fans at home are just my little one and me. 

This idea of using applesauce in the cookies was given by my little one. She loves these Oatmeal banana cookies and when I asked her for new healthy cookie ideas, she immediately replied that I could make the same cookies with applesauce.

These cookies turned out so good - a little tart, a little sweet. I didn't want to add extra sugar and these turned out surprisingly flavorful.

My little one later on said that I should have made more cookies and frozen for later :).


Ingredients - 

Rolled Oats 1/4 cup
Apple 1 medium size
Lime/Lemon Juice 1 tsp
Almonds 7-8
Chocolate Chips 1 Tbsp

Note - A typical serving of Rolled oats would be 2 Tbsp.
  Method Of Preparation -


Coarsely Crush the rolled oats and set aside.

Wash, peel and grate the apple into a microwave safe bowl.

Add a teaspoon of lime juice and mix well.

Cook the grated apple in the microwave for about 3 minutes in 45 second increments or until the apple sauce reaches a saucy consistency. Allow it to cool. 
[I did not let it cool and so the chocolate chips I added melted and got mixed into the batter :)]

Add the coarsely crushed rolled oats and coarsely crushed almonds to the applesauce.

Add in the chocolate chips and gently mix.

Divide the mixture into 4-tablespoon portions and place on a parchment lined baking tray. Pat each of them to resemble a flat cookie.

Bake at 400°F for 10 minutes. Remove from the oven and allow them to cool for a few minutes.
[I used a countertop oven which doesn't need to be preheated but if using the regular oven, please preheat the oven to 400 °F.]

Enjoy the cookies with a glass of freshly squeezed Orange Juice.

BM #97 Week 3 Day 3 - 

These chocolate chip cookies have a dominant nutmeg and cinnamon flavors which are my little one's favorite. So these are perfect when driving long distances as well.

When we plan our road trips, the kids decide what food they would love to have. They say food is half the fun while on the road. Apart from all the junk food they get from the fast food joints on the way, they love to carry some from home.

I have posted Pasta Sandwich and Minapa Rotte the past two days which are kid approved and the third one had to be these cookies. :)

Ingredients - 

Maida / All purpose flour 3/4 cup
Baking Soda 1/4 tsp
Salt pinch
Nutmeg Powder 1/4 tsp
Cinnamon Powder 1/4 tsp
Butter 1/4 cup (Unsalted at room temperature)
Sugar little less than 1/2 cup (I used powdered Raw sugar)
Vanilla extract 1/2 tsp (I didn't use)
Maple Syrup 1 tsp (The original recipe calls for Molasses)
Semi sweet chocolate chips 1/4 cup or more
Milk 2 tsp (if needed)


Method Of Preparation -


In a mixing bowl, add the flour, salt, baking soda. cinnamon, nutmeg and mix well.

In a different bowl, beat the softened butter, sugar, vanilla, maple syrup and milk until fluffy.

To the wet ingredients, add the flour mixture and gently knead to a soft dough. Add milk a few drops at a time if needed.

Sprinkle the chocolate chips and mix so they are evenly spread in the dough.

If the dough is sticky, it is a good idea to chill it in the refrigerator for about 30 min or so. [I didn't have to]

Preheat the oven to 350 °F. 

Pinch small lime sized portions of the dough, slightly flatten them and place on a parchment lined baking tray. Continue with the rest of the dough placing them a few inches apart.

Bake for about 12-15 minutes or until the edges are brown. [I baked them for 13 minutes]


Remove from the oven and let them cool on a wire rack before devouring them.

BM #85 Week 1 Day 1 -

This week I have chosen to highlight some 3 ingredient goodies. I fell in love with these oatmeal banana cookies. The best part is, there is no added sugar, it is whole grain, with no additives, and simple yet healthy for breakfast.

I calculated that 3 such cookies with orange juice or milk would be perfect for an adult breakfast. 

My little one did this research for a persuasive essay and she was assigned the topic, "Should milk be provided at school ?" After that, she started reeling out reasons why we should not drink milk, the effects of milk on our bodies, etc. 

This is why she said she would eat cookies and freshly squeezed orange juice. Henceforth in our house it will be 'cookies and orange juice' instead of 'cookies and milk'.

*Some chopped nuts can go in there as well.

Ingredients -

Rolled Oats, coarsely powdered 1 cup
Bananas , 2 big overripe 
Chocolate Chips, mini 1 Tbsp



Method Of Preparation -


Mash the bananas in a mixing bowl. Add in the rolled oats and mix it in. Fold the mini chocolate chips.

Preheat the oven to 350 °F.

Prepare a baking tray by lining it with parchment paper.

Using a tablespoon scoop out the oatmeal dough and pat them onto the prepared baking tray. Allow an inch between the cookies.

Bake for 23-25 minutes until the tops get golden.

Remove from the oven and enjoy them warm. Store them in an air tight container for about 2 days on the counter or refrigerate for a week.

Ginger Cookies - Eggless

BM #72 Week 4 Day 2 - 

Here are another variety of cookies which I baked during the last Christmas vacation. I loved the spicy flavor in these cookies and surprisingly my little one took to these cookies as well.

I had bookmarked them from Sandhya's space but I modified it slightly to make them eggless.

Ginger Cookies - Eggless

Recipe Adapted from here
Ingredients - 

Flour 1 1/4 cup
Baking Soda 1/2 tsp
Ginger Powder 3/4 tsp
Cinnamon Powder 1/4 tsp
Cloves Powder 1/8 tsp
Salt a pinch
Butter 1/4 cup
Sugar, powdered 1/2 cup + 3 tsp
Maple Syrup 2 Tbsp
Yogurt 1 1/2 Tbsp
Lime Juice 1/2 tsp

Ginger Cookies - Eggless

Method Of Preparation -

Sieve the flour, baking soda, ginger, cinnamon, clove powder in bowl and set aside.

In a deep mixing bowl, cream butter and 1/2 cup of sugar until light and fluffy. [I used an electric mixer].

Add in maple syrup, yogurt and lime juice to the sugar-butter mixture.

When the mixture is smooth, add in the flour mixture little by little until the dough is smooth.

Preheat the oven to 325 °F.

Scoop out 2 teaspoons of dough, roll and slightly flatten, roll it in the powdered sugar and arrange them an inch apart on lined baking trays.

Bake for 13-15 minutes. Remove and let them cool on a wire rack. Store into an air tight container.

Condensed Milk Cookies - Eggless

BM #72 Week 4 Day 1 - 

This week I shall clear some of my bookmarks. I had baked these cookies 2 times in 2 days owing to its popularity. My kids were after me to bake some cookies for the Christmas season and I took that opportunity to bake 3 different kinds of cookies. 

The kids wanted to decorate in Christmas colors so I got some off the shelf frosting for them to play around. Also I took these cookies for a Christmas party and let the kids have fun decorating them.

I must say these condensed milk cookies have had very good reviews from both family and friends. 


Condensed Milk Cookies - Eggless

Ingredients - 

*Maida / All Purpose Flour 1 1/2 cups
Salt a pinch
Unsalted Butter at room temperature 1/2 cup
Sugar 1/4 cup
Condensed Milk 1/2 cup (200 gms approx)

* I used Whole wheat flour and All purpose flour in equal proportions.

Condensed Milk Cookies - Eggless

Method Of Preparation -


Sieve flour and salt and set aside.

In a deep mixing bowl, use an electric mixer to whip butter and sugar and condensed milk until light and fluffy.

Add in the flour little by little until well combined and a soft dough is formed.

Preheat the oven to 350 °F.

Scoop out tablespoon of the dough (I flattened them slightly for the second batch) and arrange them 2 inches apart on a lined baking sheet. 

Bake for 2-15 minutes. Let them stay on the sheet for a couple of minutes. Remove and place them on wire racks.

Decorate them and enjoy!!

Eggless Whole Wheat Nutella Cookies

Day 1 Week 2 of BM #55 - 

This week, I shall showcase some Nutella based recipes which have been kid and adult approved :).

These cookies proved to be very very addictive. I had to make two batches in two days just to satisfy my neighbor's kids :).


Eggless Whole Wheat Nutella Cookies

Ingredients - 

*Whole Wheat Flour / Chapati Atta 1 cup
Baking Powder 1/2 tsp
Salt a pinch
Butter at room temperature 2 Tbsp
Nutella 3 Tbsp
Brown Sugar 3 Tbsp
Milk 2-3 Tbsp
Blanched Almonds for topping (Optional)

*Just all purpose flour or a mixture of whole wheat flour and all purpose flour also works. I used the Multi grain chapati atta.


Eggless Whole Wheat Nutella Cookies

Method Of Preparation -

Cream butter, nutella, brown sugar and milk  and set aside.

In a different bowl, sift flour, salt and baking powder.

Pour the flour mixture into the creamed nutella mixture. mix and gently knead to form a stiff dough.

Preheat the oven to 350 °F.

Pinch small lime sized portions of the dough, roll and flatten into a thick disc and press a blanched almond. Continue making such disc shaped cookies and arrange on a parchment lined baking tray.

Bake for 15 minutes or until the bottom of the cookies are firm and look done.

Remove from the oven, let them cool and then enjoy them. I never had to store them but I am pretty sure they will stay put for atleast a couple days on the counter in an air tight container.
