BM #90 Week 2 Day 3 - 

To conclude this month's series 'Instant dishes', here is a personal favorite. This version of kalakand is a great way to enjoy the last few mangoes of this season.

I remember my mom slogging in front of the stove to make kalakand the old-fashioned way. Now when it is my turn to make it, I always look for easy and quick ways to enjoy such treats. 

My family and friends enjoyed this mango kalakand.

Ingredients - 

Mango Pulp 1 1/4 cup (I used store bought pulp)
*Paneer 1/2 cup
Milk Powder 3/4 cup
Condensed Milk 1/4 cup (adjust as per the sweetness of mango pulp)
Cardamom Powder and Chopped Nuts for Garnish

*I used homemade soft paneer from 1 liter low fat milk (2%). Store bought grated paneer can also be used.


Method Of Preparation -


In a microwave safe deep bowl, add the mango pulp and microwave in high power for 3 minutes.

Remove, mix and add in the soft paneer and milk powder. Whisk well and zap for another 2 minutes.

Remove, mix and cook for 2 more minutes.

Remove, add condensed milk, mix and cook for 5 more minutes in 1 minute intervals. Make sure the mixture doesn't overflow.

When the mixture is semi dry and looks grainy, it is done. Ensure that it the mixture is not totally dry.

Transfer the mixture onto a greased container. Pat it evenly. Sprinkle the cardamom powder and chopped nuts. Allow it to rest/cool for a few minutes.

Slice and enjoy.

BM #88 Week 2 Day 2 - 

After having chosen to highlight Cauliflower in this series, I had to get onto the 'Cauliflower Rice bandwagon', so to say. I bought the readymade cauliflower rice from the freezer section, added some spices and grated carrot for some color and steamed in the microwave.

Even if made from fresh cauliflower, I don't think it is a difficult one to handle. Just pop cauliflower florets in the food processor and steam and season it.

I have read in some reviews that oven roasting the cauliflower rice gives the best texture but takes the maximum time. Since we all know when salt is added to cauliflower and steamed, it leaves a lot of water making it soggy. So the trick is to add salt just before serving not giving enough time for the cauliflower to sweat.

Ingredients - 

Cauliflower rice frozen (10 oz)
Carrot, Grated 3 Tbsp
Onion Powder, Garlic Powder, Salt and Pepper as needed
Spring Onion for garnish


Method Of Preparation -


Empty the frozen cauliflower rice into a microwave safe bowl, sprinkle grated carrot and microwave it for 5 minutes.

Sprinkle Onion Powder, Garlic Powder, Salt and Pepper as needed. Fluff it, garnish with chopped spring onion and serve immediately.

I served it with some Potato Kurma.

BM #84 Week 3 Day 1 - 

The Whole Wheat Vegetable Momos which I posted last week have been widely appreciated and but for this chutney, it would have been a rather dull and bland affair. To perk up the momos, this chutney is a must have as an accompaniment.

Be warned that it is definitely not for the faint hearted, so to say. It is as fiery as it looks in the picture.

Ingredients - 

Tomato 1 big
Red Chilies 2
Garlic clove 1 
Salt, Sugar as needed
Vinegar 1 tsp

Method Of Preparation -


In a microwave safe bowl, make a couple slits to the tomato, 2 red chilies, a couple tablespoons of water and zap in the microwave for a couple of minutes.

When it is safe to handle the tomato, peel the skin and blend the boiled tomato, red chilies and add a garlic clove.

Transfer into a serving bowl, add salt, sugar and vinegar and mix well. Adjust the flavors as needed.

Serve with momos.

BM #83 Week 1 Day 2 - 

For today, I used a 1000 watt GE microwave as the appliance to make this eggless semolina cake.


If you have been following this series from yesterday,  you would understand that I am treating this series to be an experiment as I have never made a comparative analysis before. I will give my family's verdict on Day 3. So stay tuned.
I have made numerous types of mug cakes so I was fairly comfortable making this cake in the microwave.

My observations for the cake made in the microwave - 
-The taste of the cake was good in all of the appliances. Only the shape and texture were slightly different.
-The texture of the cake was good and properly cooked through.
-As with any microwave cake, the taste was best while still warm.

Ingredients - 

Semolina / Bombay Rava / Sooji 4 Tbsp
Milk 2 Tbsp 
Yogurt 2 Tbsp
Sugar 2 Tbsp
Vegetable Oil 1 1/2 tsp
Vanilla Essence couple drops
Almonds chopped 1 Tbsp + more for topping
Baking Powder 1/8 tsp


Method Of Preparation -

In a mixing bowl, add Sooji, milk, yogurt, vegetable oil and vanilla essence. Mix well and set aside for 15 minutes.

Add in baking soda, baking powder and the chopped almonds. Gently mix until well combined.

Pour the batter into a greased coffee mug or a ceramic ramekin. Microwave it for a minute. 

Remove and microwave it for another 20 seconds and leave it in the microwave for a few more seconds.

Remove the ramekin from the microwave, run a knife along the edges and gently remove the cake from the ramekin.


Enjoy the cake while it is still warm.

Eggless Chocolate Pudding

BM #74 Week 2 Day 1 - 

This week the theme I have chosen is 'Are you pudding me?'. So it is all about puddings. For today check out this chocolate pudding which was thoroughly enjoyed by my little one. 

I accidentally deleted some pictures from the camera and these were the only decent pictures I could recover. I am sure I will remember (hopefully) to update the pictures the next time I make this pudding.

Ingredients - 
*Hot Cocoa Mix 1/4 cup
Powdered Sugar 1 Tbsp (or more as needed)
Custard Powder 1 1/2 Tbsp
Milk 1 cup
Topping - Whipped Cream and sprinkles

*Hot Cocoa Mix can be substituted with 2 Tbsp cocoa powder and 3-4 Tbsp of powdered sugar


Eggless Chocolate Pudding

Method Of Preparation -


In a microwave safe bowl, mix in the Hot cocoa mix, powdered sugar and custard powder. Gradually add milk to make a lump free batter.

Microwave it for 2 minutes. Remove and stir well. Zap it for a minute more and mix well. I microwaved it for a total of 4 minutes.

The resultant pudding is shiny and firm.

Mix well and transfer into the serving bowls. Cling wrap and refrigerate for an hour or 2.

When it is time for serving, top it with whipped cream and sprinkles.

5 Minute Microwave Mysore Pak

BM #73 Week 2 Day 1

This week, I shall present some quick and easy sweet treats to please one and all.

I was talking to a friend about new ideas to make Indian sweets easier and quicker when she gave me a host of ideas, among which this 5 minute mysore pak topped my list.

It so happened that I had to make this treat for a friend and so another favorite added to our list at home!!


5 Minute Microwave Mysore Pak

Recipe Source multiple recipes online
Ingredients - 

Besan / Gram Flour / Senagapindi 1/2 cup
Ghee 1/2 cup
Powdered Sugar 1 cup
Milk 2 tsp


5 Minute Microwave Mysore Pak

Method Of Preparation -


In a MW safe glass bowl, mix besan and a teaspoon of ghee and microwave for a minute until the raw smell goes away.

Remove the roasted besan into a different bowl.

In the glass bowl, melt the ghee for a minute so the ghee is hot.

Add the remaining ingredients into the ghee, mix well so there are no lumps.

Put it back into the MW and zap for a minute. Remove and mix well. Continue for another 3-4 times in 1 minute increments. [I totally cooked the mixture for 5 minutes but I could have stopped at 3 1/2 minutes for a lighter colored mysore pak].

When the mixture turns frothy and it becomes flaky and pores are visible, transfer the mixture into a greased plate. 

[At this point, I observed that there was an excess of ghee floating, so I drained the ghee into a separate container. It was approximately 2 tablespoons of ghee which I drained out.]

Allow it to cool for a couple of minutes and then with a sharp knife, make indents to slice as needed.

After another 10 minutes, slice it and serve or store in an air tight container.

Instant Dates Payasam

BM #72 Week 3 Day 1 - 

For this week I have opted to present some milk based desserts. Typically milk based desserts would be kheer/payasam of some kind. But Let me see what else I can come up with this week.

On a weekend morning, just before we were sitting down for lunch, we felt we should have something for a dessert as well. On such occasions, I usually rely on Semiya Payasam. But unfortunately on that particular day, I couldn't locate the new pack of roasted vermicelli which I had got from the store the previous day. 

So I had to improvise and make a payasam in under 5 minutes. I served it as part of this special thali.



Ingredients - 

Dates 5-6 pitted
Cooked Rice 2 Tbsp
Almonds 5-6
Milk 1 1/2 cups
Sugar or any other sweeteneer of your choice 1 tsp (Optional)
Cardamam powder a pinch
Roasted Cashews for garnish


Instant Dates Payasam

Method Of Preparation -


Blend the almonds, dates and cooked rice with 1 cup of milk into a fine paste.

Pour the mixture in a microwave safe bowl. Add the remaining milk and let it come to a boil. [About 2 1/2 minutes]

Sprinkle the cardamom powder, add sweetener now if using. Mix well and microwave it for another 30 seconds until it bubbles up.

Remove, garnish and serve warm.

Vegan Coconut Milk Mug Cake

Week 3 Day 2 of BM #62 - 

This mug cake was an instant hit at our place. The chocolate frosting with the rainbow sprinkles made this a winner for my little one. I encouraged the kids to enjoy this super fluffy mug cake and also keep a healthy portion size for each of them :).

Vegan Coconut Milk Mug Cake

Ingredients - 

All Purpose Flour 2 Tbsp
Whole Wheat Flour 2 Tbsp
Brown Sugar 2 Tbsp
Salt a pinch
Baking Powder 1/2 tsp
Coconut Milk 4 Tbsp
Olive Oil 1 1/2 Tbsp
Chocolate Sauce / Nutella / Sprinkles for topping [Check for Vegan options if preferred]


Vegan Coconut Milk Mug Cake

Method Of Preparation -


In an 8 oz mug, whisk the flours, sugar, salt and baking powder.

Pour the coconut milk and olive oil. Gently mix until the batter is lump free.

Cook in the Microwave for 1 minute. Remove and cook for 30 seconds more.

Check to see if the cake is done.

Spread the Chocolate sauce/Nutella. Decorate with sprinkles and enjoy it warm!

To celebrate her birthday all the members of our BM family who are spread across the globe decided that we should all pick a recipe from her blogs and recreate it, post and publish on her birthday as a surprise. I believe that this group gesture will multiply the effect of good wishes we intend showering on her.

Eggless Chocolate Atta Mugcake

Ingredients - 

Wheat Flour 4 Tbsp
Sugar 4 Tbsp
Cocoa Powder 3 Tbsp (I would reduce it to 1 Tbsp)
Baking Powder 1/4 tsp
Baking Soda a pinch
Yogurt / Curds 3-4 Tbsp
Olive Oil 2 Tbsp
Hot Water 1 Tbsp


Eggless Chocolate Atta Mugcake
Here is the party platter (Cheese Sticks, Vegetable Stuffed bun, mug cake with ice cream)
Method Of Preparation -


Whisk all the dry ingredients in a mixing bowl. Add in the wet ingredients and gently mix to get a smooth batter.

Grease 2 coffee mugs and divide the batter equally into the mugs.

Microwave for a minute. Check for doneness and microwave again in 30 second intervals. I put both the mugs at the same time and they were both done in 2 1/2 minutes.

Serve it warm with ice cream for a perfect balance of taste and temperature!

2 Minute Pumpkin Spice Mug Cake

Week 1 Day 3 of BM #57 -

In this season when the leaves start to fall, I look forward to the pumpkins displayed all over; in malls, in stores, outside homes. My kids look forward to the various treats made out of pumpkin and also Halloween :)

So as soon as I saw this pumpkin spice mug cake, I was sure I could surprise my older one. So after a hectic day at school I managed to see a smile on her face which was all the reward I wanted.

Ingredients - 

All Purpose Flour 4 Tbsp
Sugar 2 Tbsp
*Pumpkin Spice 1/4 tsp
Baking Powder 1/4 tsp
Milk 2 Tbsp
Pumpkin Puree 2 Tbsp
Vegetable Oil 1 1/2 tsp

* Instead of pumpkin spice the following can be added - Cinnamon Powder 1/8 tsp, Nutmeg Powder 1/8 tsp, Ginger Powder a pinch and Cloves Powder a pinch


2 Minute Pumpkin Spice Mug Cake

Method Of Preparation -

Blend Oil, pumpkin puree and milk in a bowl and set aside.

Whisk the flour, sugar, baking powder and cinnamon spice.

Grease an oversize Coffee mug.

Mix the wet and dry ingredients in the mug gently until there are no lumps. [For another batch I divided the batter into two smaller ramekins.]

Microwave the mug for a minute. Check to see if it is done. I had to microwave it for another 20 seconds.

Scoop out and devour immediately.

2 Minute Eggless Nutella Mug Brownie

Week 1 Day 2 of BM #57 - 

What do  we do when the kids want a chocolate treat in a few minutes? If you are like me, you will quickly dish out a 2 minute microwave mug cake like here or here or this mug brownie. That is exactly what I did a few weeks back.

The kids loved it with a scoop of ice cream to the side. The other adult joined them in an impromptu celebration!!

Ingredients - 

All Purpose Flour 2 Tbsp
Baking Powder 1/2 tsp
Baking Soda a pinch
Sugar 2 Tbsp
Cocoa Powder 1 Tbsp
Nutella 1 Tbsp 
Milk 1 1/2 Tbsp
Yogurt 1 1/2 Tbsp
Vegetable Oil 1 1/2 Tbsp



2 Minute Eggless Nutella Mug Brownie

Method Of Preparation -


Grease a big Coffee mug. Add in the dry ingredients. Gradually add the wet ingredients. Whisk gently until there are no lumps. Cook in the Microwave for 60 seconds.

Check to see if it is done. If it is under cooked, cook for another 30 seconds. Leave it there for a few more seconds.

Remove from the Microwave, scoop out a portion of the brownie and serve it with ice cream for a delectable dessert.
