BM #111 Week 3 Day 3 - 

This is a simple cake with random pattern of vanilla and chocolate batters.
I made it for my older one's 18th birthday a few months back as she wanted a very small celebration at home. 
Feel free to pour the two batters in any pattern.

Ingredients - 

Yogurt 1 cup
Sugar, fine 3/4 cup
Oil 1/4 cup (I used Olive Oil)
Baking Powder 1 tsp 
Baking Soda 1/2 tsp 
Maida / All Purpose Flour 1 cup
Whole Wheat Flour 1/2 cup
Vanilla Extract 1 tsp
Milk 1/4 cup
Cocoa Powder 2 Tbsp



Method Of Preparation -

In a mixing bowl, whisk yogurt, oil, fine sugar. After the sugar is well blended, add in the baking soda and baking powder. Mix gently and set aside for 10 minutes.

In another mixing bowl, sieve the flours and set aside.

Prepare a baking tin by spraying oil and/or lining with a parchment paper. I used a bundt pan so didn't use parchment paper.

In the yogurt mixture, add the flour gradually and mix to get a smooth batter. Take care not to over mix.

I had to add about 2-3 Tbsp of milk to get a flowing consistency.

Preheat the oven to 350 °F.

Divide the batter into two portions.

In one of the portions, add cocoa powder and blend it in adding 2-3 Tbsp of milk as needed.

In the prepared bundt pan, pour 2 tablespoons of the Vanilla batter in the center and 2 Tbsp of cocoa batter, continue this pattern till a typical dark and light pattern alternates.

Bake in the preheated oven for 30-35 minutes or until a tester comes out clean.


Remove and allow it to cool before slicing it as needed.

BM #91 Week 3 Day 1 - 

This week, I plan to contribute to the baked treats theme for the Kid's Delight event.

My little one celebrated her 11th birthday a few weeks back and her request for a brownie made these treats possible. She is fond of chocolate and coconut and so this was a perfect combination for her.

I couldn't take the picture of the whole brownie but these bites were irresistible and were gone in a few hours.

It is very easy to please my little one and I hope she stays the same :).

Ingredients - 

All Purpose Flour 1 cup
Cocoa Powder 1/3 cup
Baking Powder 1 tsp
Salt 1/4 tsp
Sugar 3/4 cup
Butter  (at room temperature) 7 Tbsp
Curds / Yogurt 3/4 cup
Milk 1/4 cup
Walnuts, chopped 1/4 cup + more for topping
Chocolate Chips 1/4 cup
Shredded Coconut 1/2 cup



Method Of Preparation -


Preheat the oven to 375 °F.

Sieve the flour, cocoa powder, salt and baking powder and set aside in a mixing bowl. Toss in the chopped walnuts and shredded coconut. Mix well.

In a deep mixing bowl, whisk melted butter and sugar until it is light and fluffy.

Mix in yogurt and milk into the butter mixture.

Add in the flour into the wet mixture and gently mix until a stiff batter results. Fold in the chocolate chips.

Pour the batter into a rectangle/square greased baking tray. 

Smooth the tops of the batter and bake for about 35-40 min.
[I baked for 37 min and switched off the oven but didn't remove the baked brownie tray for about 10 min. This helped firm up the brownie]

Remove from the oven and cool on the wire racks.


Slice upon cooling as per preference. Serve with ice cream for a sinful treat.

BM #82 Week 3 Day 3 - 

For Day 3 my little one insisted I showcase these chocolate crepes. I wanted the kids to fill the crepes with some fruit jam and then layer with bananas. But they have a mind of their own. They wanted to use whipped cream and banana and chocolate syrup as they loved it with vanilla crepes.

I made these when some friends had come over. So I was not able to take good pictures. The kids were in a hurry to gobble them up and I quickly grabbed my camera and clicked a few random clicks out of which just one of them came out good owing to the lights and confusion at the moment.

Ingredients - 

All Purpose Flour 1 cup
Cocoa Powder 2 Tbsp
Salt A pinch 
Baking Powder 1/4 tsp
Powdered Sugar 2 Tbsp
Vegetable Oil 2 Tbsp
Vanilla Essence 1/2 tsp
Milk 1 1/2 cups
For Assembling - 
Banana slices as needed
Whipped Cream as needed
Chocolate Syrup as needed

Method Of Preparation -


In a mixing bowl, add the flour, cocoa powder, salt, baking powder and powdered sugar and whisk well.

Gradually add vegetable oil, vanilla essence and milk. Mix well to make a thin batter. Make sure the batter is thinner than the pancake batter.

Set aside the batter for a few minutes.

In a heated griddle, lightly spray with oil and pour about 1/4 cup of batter. Swirl the pan so the batter spreads out.

Let it cook for a couple of minutes. When it easily comes off the pan, flip it and cook for a few seconds.

Remove and continue with the rest of the batter.


To assemble - In a plate, arrange the banana slices on a crepe and layer the whipped cream as desired. Fold the crepe and drizzle with chocolate syrup and sprinkle powdered sugar.

Chocolate Cake Pops

BM #77 Week 4 Day 1 - 

This week I shall post some bookmarked recipes which my family loved.

This post was possible because of my kids and their friends. All this started with my little one who had this baking project which was to be based on a book. Of course, she chose the book 'Cake Pop Crush' and therefore we had to bake the cake pops to share in class (with added restrictions - no nuts). She had to take about 30 cake pops and the book to school the next day.

She later confessed that she wanted to make cake pops and so chose that book. When I said that she would have to bake them too, she was on top of the world. So with her friends in 
tow, she came to me saying that they were ready to bake cake pops.

I handed over the floor (flour??) to them and watched them create magic in my kitchen from the sidelines. Boy! such a mess they made of the whole place, what with chocolate sauce all over, sprinkles sticking to their little feet, the white chocolate icing dribbling from their tiny hands. Added to this their running commentary on how each of them wanted the icing and the sprinkles. The older kids were guiding the little ones on how to minimize wastage and the best way to handle the pops etc..

It was so amusing and entertaining to see them handle the mess, each one running to the sink to clean up their hands 100 times in the process. The best part was they cleaned up all the messes once the cake pops were in the refrigerator. They were so happy to polish off the leftover crumbs, candy melts and icing. Since they made about 50, they counted 30 of them, kept them aside and devoured the remaining 20 in a flash!

They even sweetly volunteered to take pictures for the blog. Can they get any sweeter?? They just made my day by taking care of the cake pops, cleaning up and even offering to take pictures. Thank you kiddos!!!

Chocolate Cake Pops

Recipe Source my little one and her book
Ingredients - 

Chocolate Cake Crumbs 4 cups (Vegan or Sponge Cake)
Cocoa Powder 2 Tbsp
Milk 1/4 cup + 2 Tbsp
Icing Sugar 2 cups
Butter 1 Tbsp
Candy Melts (I used White chocolate) 1/2 pound
Sprinkles as needed
Other items - Cake Pop Sticks 50 (or as needed), Styrofoam blocks


Chocolate Cake Pops

Method Of Preparation -


For the Chocolate Sauce - 
In a heated pan, add butter, cocoa powder, icing sugar and milk. Mix well until it is bubbly. Adjust the sugar and milk as needed.

Remove from heat and set aside.

For the Cake Pops -  In a mixing bowl, add the chocolate cake crumbs and add in the chocolate sauce as needed and knead into a stiff dough.

Pinch about a small lime sized portions and roll into a ball. Insert the cake pop stick into the center of the ball and set aside in a parchment lined tray. Continue with the rest of the material.

Freeze for about 30 minutes or refrigerate for about 2 hours until they are set.

For the Toppings -  Meanwhile, melt the white chocolate either in the microwave or a double boiler. Mix well and set aside.

Remove the cake pops from the refrigerator, dip or drizzle the molten white chocolate onto the cake pops and roll them on the sprinkles(or sprinkle the sprinkles :)).

Stick the cake pops onto Styrofoam blocks and let them set in the refrigerator.

They are then ready to be served. (Trust me, serving these pops is no easy task. Be prepared to deal with huge messes :) )

Eggless Chocolate Cupcake

For Week 2 Day 3 of BM #76, these chocolate cupcakes make their way into the picnic hamper. For my little one, the picnic is incomplete without cupcakes. So my picnic hamper this week had Grilled Caprese Sandwich, Jalapeno Bondas and these cupcakes.

I have never used coffee in any of the bakes and I used it in these cupcakes. Personally I didn't find any notable difference.

Eggless Chocolate Cupcake

Ingredients - 

All Purpose Flour 2 cups
Baking Powder 1 tsp
Baking Soda 2 tsp
Cocoa Powder 1/2 cup
Sugar 1 cup ( I used a little less than 3/4 cup)
Oil 1 cup
Hot Coffee ( 1 tsp of coffee powder in 1/4 cup of water)
Milk 1/2 cup
Yogurt 1/2 cup

Eggless Chocolate Cupcake

Method Of Preparation -


In a mixing bowl, beat the wet ingredients (oil, hot coffee, milk, yogurt and sugar).

In a different bowl, sieve the flour, baking powder, baking soda and cocoa powder.

Gradually add the dry ingredients into the wet ingredients and beat with an electric beater until the batter is smooth and well combined. Don't over mix.

Prepare the muffin pans by putting in liners or greasing them. Divide the batter into the prepared liners. [ I used a medium muffin pan (12)and a mini muffin pan (24 )]

Preheat the oven to 350 °F. Bake for 13-18 minutes until a tester comes out clean. [The mini muffins were done at 14 minutes and the medium ones had to be baked for 18 minutes.]

Eggless Chocolate Pudding

BM #74 Week 2 Day 1 - 

This week the theme I have chosen is 'Are you pudding me?'. So it is all about puddings. For today check out this chocolate pudding which was thoroughly enjoyed by my little one. 

I accidentally deleted some pictures from the camera and these were the only decent pictures I could recover. I am sure I will remember (hopefully) to update the pictures the next time I make this pudding.

Ingredients - 
*Hot Cocoa Mix 1/4 cup
Powdered Sugar 1 Tbsp (or more as needed)
Custard Powder 1 1/2 Tbsp
Milk 1 cup
Topping - Whipped Cream and sprinkles

*Hot Cocoa Mix can be substituted with 2 Tbsp cocoa powder and 3-4 Tbsp of powdered sugar


Eggless Chocolate Pudding

Method Of Preparation -


In a microwave safe bowl, mix in the Hot cocoa mix, powdered sugar and custard powder. Gradually add milk to make a lump free batter.

Microwave it for 2 minutes. Remove and stir well. Zap it for a minute more and mix well. I microwaved it for a total of 4 minutes.

The resultant pudding is shiny and firm.

Mix well and transfer into the serving bowls. Cling wrap and refrigerate for an hour or 2.

When it is time for serving, top it with whipped cream and sprinkles.

Chocolate Peda

BM #74 Week 1 Day 1 - 

This week I have chosen to highlight a few more of kid friendly chocolate based dishes. These little bites were so addictive and chocolatey that they were gone in a flash.

Ingredients - 

Khoya/Mawa ( I made it at home) 1 cup
Sugar 1/4 cup
Cocoa Powder 2 Tbsp
Nuts for garnish
Ghee/Butter to grease

Chocolate Peda

Method Of Preparation -

In a heated pan add khoya/mawa and sugar. As the sugar melts, the consistency of the mixture will be a little runny.

Continuously stir the mixture until it becomes firmer and shinier.

Sprinkle the cocoa powder and make sure it is mixed well. Cook for a minute or two and remove from fire.

When it is slightly warm to touch, pinch lime sized portions with greased palms and roll into the desired shape.

Garnish with nuts of your choice and let them cool so that the nuts stay on the peda.

Serve and enjoy!

Hot Chocolate Float

BM #73 Week 3 Day 2 -

We just got a sneak peak of spring early this year and since the kids are all playing out, they came back for a snack break and this hot chocolate float was a delightful break for my little one.

The quantities of the ingredients can be changed to fit the individual preferences.

Ingredients - 

*Hot Cocoa Mix 2 tsp (or as preferred)
Milk 3/4 cup
Ice cream (Any flavor of your choice - I used Mango) 1 Scoop

* Cocoa Powder and Sugar can also be used in desired proportions


Hot Chocolate Float

Method Of Preparation -

Boil milk , mix in the hot cocoa mix.

Gently place the scoop out ice cream in the hot chocolate.

Sprinkle cinnamon powder on top and serve immediately.

Eggless Ragi Chocolate Cake

BM #68 Day 26 - 

With this delicious cake, I conclude this Millet series as part of Cooking Carnival. This series has been a revelation of sorts for me. I never expected my family to go with these millet based recipes as much as they have. This only goes to prove that healthy food when properly disguised can be enjoyed by 'millet-haters' as well :).

I have baked this cake a couple of times so far and each time it was very well received by family and friends. I shall post a roundup of all the recipes (in a couple days) I posted this month so all the posts are at one place.


Eggless Ragi Chocolate Cake

Ingredients - 

Whole Wheat Flour 1 cup
Ragi Flour 1/2 cup
Sugar 3/4 cup
Baking Soda 3/4 tsp
Cocoa Powder 2 Tbsp
Salt a pinch
Wet Ingredients - 
Yogurt 3/4 cup
Milk 1/2 cup
Oil 1/4 cup
Honey / Maple Syrup 1 Tbsp
Vanilla essence and walnuts optional
Chocolate Sauce and MnM's for topping


Eggless Ragi Chocolate Cake

Method Of Preparation -


Sieve all the dry ingredients in a bowl and set aside.

In a different bowl add all the wet ingredients and mix well.

Grease an 8 inch round baking tin, line the baking tin with parchment paper and set aside.

Preheat the oven to 375 °F.

Mix the wet ingredients into the dry ingredients and gently whisk to get a smooth batter. Take care not to over mix.

Pour the batter into the prepared baking tin. Tap the tin on the counter to release any air bubbles.

Bake for 30 min or until a tester toothpick comes out clean.

Leave the cake in the oven for about 5 min.

Cool on a wire rack.

Place the cake on a serving plate. Pour the chocolate sauce on top and sprinkle the MnM's on top.

Slice and enjoy!!

Chocolate Sauce

BM #64 Week 3 Day 2 - 

Check out this easy chocolate sauce recipe which needs just three ingredients. It can be used to pour on top of a cake or just to make hot cocoa, drizzle on ice cream etc. It is left to the creativity of the choco-lovers on how else they want to enjoy this sauce.

My little one can lick the sauce as is :).

Ingredients - 

Milk 1 cup
Sugar 1/4 cup
Cocoa Powder 2 Tbsp (I used 100% Cacao)


Method Of Preparation -


Let the milk come to a boil. Add in the sugar and cocoa powder.

Reduce the heat to low-medium. Keep whisking the bubbling mixture for about 4 minutes or until the solution thickens a little.

Remove and store in an air tight container.

Preparation Time 15 min
Makes 1/2 cup
