I am sure you all enjoyed the Poha Dhokla from Gujarat. Now it is time to explore the state of Haryana and yet another healthy, Diabetic friendly recipe from their realm.
Haryana has been carved into a separate state from Punjab in 1966. So it is very difficult to separate the cuisine of Haryana from Punjab. But my friend, Pooja, who hails from Amritsar, has helped me in this regard by guiding me through the process of identifying the typical food made by Haryanvis.
While you slurp this filling Khichdi I shall hop over to Himachal Pradesh and see if everything is ready for your trip there!
Recipe Source - here
Ingredients -
Bajra 1/2 cup
Moong Dal 1/4 cup
Ginger, grated 1/2 tsp
Green Chillies, chopped as needed
Salt to taste
Seasoning (Ghee 1 tsp, Cumin seeds 1/2 tsp, Asafoetida 2 pinches)
Method Of Preparation -
Coarsely crush the Bajra to remove any husk. Wash and drain properly.
Heat ghee in a pressure cooker, add the cumin seeds and asafoetida. After the cumin seeds start to crackle, add turmeric, ginger and green chilli.
Then add bajra and moong dal, fry for a couple minutes and 2-3 cups of water and salt to taste. Close the pressure cooker lid and cook for about 25 min or 4-5 whistles depending on the type of cooker you use.
After the cooker cools down, check to see if the Bajra is cooked through and the consistency is what you like. I had to further cook for 10 min on the stovetop to achieve the consistency I like.
Serve it warm with Raitha or Kadhi or plain curds/yogurt.
Preparation Time 40 min
Serves 2
