Beetroot Kichadi

Let us cool off a little in Kerala today. Kerala also known as 'God's Own Country', is a coastal state in South Western India. I identify it with its Backwaters, Elephants and Coconuts. Oh! don't forget Kathakali (a dance form) and Onam.

I have chosen to present a simple Sadya recipe from Rajani's space. As I understand, Sadya means a festival menu. And they have an array of dishes and are supposed to be made and served in a particular order.

Kichadi is otherwise known to us as Raitha/Perugupachadi. I had never heard of Beetroot Raitha and so tried it out.

Check it out while I travel to Madhya Pradesh just a day ahead of you to check out the place!

Recipe Source - here
Ingredients -

Beetroot, chopped 1 cup
Yogurt/Curds, beaten, up to 1 cup
Coconut 1/4 cup
Green Chilies 1-2 (or as needed)
Ginger 1 inch piece
Mustard seeds 1/4 tsp (I used the mustard seed powder)
Seasoning (Oil 2 tsp, Mustard seeds 1/2 tsp, Asafoetida couple pinches and curry leaves few)

Beetroot Kichadi

Method Of Preparation -

Wash, peel and cube the beetroot. Grind the cubes, ginger, coconut adding as little water as possible, until it becomes a coarse paste.

In a heated pan, pour the above mixture along with the mustard seed powder and cook for about 2 minutes. Remove and set aside to cool.

Meanwhile, beat the yogurt to a smooth consistency. Add the cooled beetroot mixture. Adjust the taste as needed.

Prepare the seasoning by heating oil in a small pan, adding mustard seeds, curry leaves and asafoetida. Remove after the mustard seeds crackle.

Pour this seasoning in the beetroot-yogurt mixture.

Serve it with rice as part of a meal.
