For Day 3, Week 1 of BM #41, here is our family favorite which we look forward to every summer.
Enjoying these grilled veggies add an extra oomph factor for a a delightful picnic! Last camping season, one of our friends got some marinated veggies. We grilled them as a group and thoroughly enjoyed munching on them sitting in front of the campfire!
The pictures in this post are from the summer of 2013 and the grill is my husband's forte :).
Ingredients -
Vegetables of your choice - We used Zucchini, Yellow Squash, Peppers, Corn, Onion (Paneer and Tofu work well too) 4 cups
Marinade -
Yogurt 2 cups
Ginger-Garlic Paste 1 tsp
Red Chilli Powder or Flakes as needed
Chaat Masala, Garam Masala as needed
Dried Mint 1 tsp
Salt as needed
Method Of Preparation -
Mix the ingredients of the marinade and set aside. Soak the wooden skewers in water for an hour.
Dice/ chop all the vegetables and soak them in the marinade for about 1-2 hours. Marinating it overnight in a refrigerator is also a great idea.
Arrange all the vegetables in individual skewers and grill them.
Enjoy them hot and sizzling to make a fantastic picnic!
