For Day 2 Week 1 of BM #41, here is another versatile snack very well suited for picnics.
These bite sized kababs can also be grilled or cooked on a griddle. I was thinking that this would be a great idea for a camping trip where we can carry an electric griddle or a portable grill and enjoy making and eating these in the wilderness!!
Of course the material can be prepared before hand and carried in an ice box. The combinations of ingredients can be varied as per availability/requirement/preference.
Ingredients -
Green Beans, Carrots, Peas, Corn, Broccoli 2 cups
Potatoes, boiled mashed 1 cup
Bread crumbs 1 cup
Salt, Red Chilli Powder, Ginger Garlic Paste, Garam Masala as needed
Oil to spray
Method Of Preparation -
Soak about 20 tooth picks in water for about 30 minutes.
Steam or cook all the vegetables and coarsely crush.
Mix in the mashed potato, all the flavorings and the bread crumbs.
Preheat the oven to 400 °F.
Divide the mixture into bite size portions. Roll each portion into a ball or an oval shape and pierce the damp tooth pick. Spray/brush oil and arrange on a foil lined baking tray.
Bake for 25 minutes and broil for a minute under close supervision.
Remove and serve it with salad and dipping as per your preference.
