BM #127 Week 2 Day 1 -

This week I shall highlight some Kid's party Menu Ideas. I heard from a friend that Fusion Tawa Burgers are a craze in the street food world in many metro cities in India.

So I have tried recreating the recipe at home and it is very popular with the kids and adults. It is easy enough to assemble for a party.

For a Party, instead of cooking the burgers on a griddle, I arranged a bunch of them on an aluminum foil tray greased with butter, sprinkled red chili powder and coriander leaves and baked them for 25 minutes at 400°F. But keep an eye on the cheese between the burger buns after 15-20 minutes. As soon as the cheese melts it is ready.

The griddle method can be done for a smaller crowd.

Ingredients - 

Burger Buns 4-6
Onions finely chopped 1/2 cup
Potato boiled and mashed 1/4 cup
Tomato finely chopped 1/2 cup
Bell Pepper finely Chopped 2 Tbsp
Paneer cubed 1 cup (I prefer smaller cubes in this recipe)
Coriander leaves finely chopped as needed
Salt, Turmeric, Red Chili powder as needed
Schezwan Sauce 1 Tbsp
Tomato Ketchup 2 tsp
Shredded Cheese as needed
Garlic crushed 1 tsp
Butter as needed [to fry the veggies and to toast the burger buns]

Note - Green peas, Shredded Cabbage, Shredded Cauliflower etc. can also be added.



Method Of Preparation -

To Prepare the Filling - 
In a heated pan, add butter and saute crushed garlic. After the flavor is infused, add onions and saute until they turn golden brown.

To the above mixture add the remaining vegetables, sprinkle salt, turmeric and red chili powder as needed. Mix well and let the vegetables cook through. 

Add the Schezwan sauce, tomato ketchup and the paneer cubes, cover and allow the flavors to blend and make sure the mixture is not too runny.

Remove from heat and set aside for a few minutes.

To assemble the Burger - 

Apply butter on the insides on the burger bun. 

Place about 3-4 tablespoons of the filling on the lower portion of the bun, sprinkle chopped coriander leaves and shredded cheese as needed.

Top it with the upper portion of the bun and gently slide it onto a heated and buttered griddle. Sprinkle some red chili powder and chopped coriander leaves on the bun and toast the bun on both sides until they change color.

Repeat the assembling for the remaining buns and serve them warm.

BM #89 Week 2 Day 1 - 

I have chosen to highlight some 'Stuffed Dishes' for this week. To make the best use of the puff pastry sheet in my freezer, I made these pinwheel puffs with a paneer-spinach filling which was an instant hit with the kids and adults alike. I found a variation of this recipe on the box of the frozen puff pastry sheet.

My little one likes to be surprised by such goodies when she comes back from school. So another winner of a recipe here.

Ingredients - 

Puff Pastry Sheet 1 (I used the frozen one)
Spinach 1 cup
Paneer 1/2 cup
Mixed Nuts, Crushed 2 Tbsp
Green chilies 2 or as needed
Salt, Red Chili Powder as needed
Onion Powder, Garlic Powder a dash each
Pasta /Pizza Sauce 2 Tbsp
Shredded Cheese (Optional - I didn't use)



Method Of Preparation -


Thaw the puff pastry sheet for 40 minutes as per the instructions on the package.

Blanch spinach and drain excess water. Chop finely. If using frozen spinach, pulse it in a food processor. Crush Paneer, mixed nuts, and green chilies.

In a mixing bowl, add in the paneer crumble, pulsed spinach, salt, red chili powder, onion powder and garlic powder. Mix well and set aside.

Preheat the oven to 400 °F.

Line a baking tray with parchment paper.

Spread the puff pastry sheet on a clean, floured work space and roll it slightly to stretch it.


Spread the Pizza/Pasta Sauce evenly on the puff pastry sheet. 

Spread the paneer-spinach mixture evenly all over the puff pastry sheet.

From one side tightly roll the sheet like a carpet or jelly roll.



Make 18 slices 1 centimeter apart and place the slices on the prepared baking tray. 

Bake for 18-20 minutes or until they become golden brown.

Serve with any sauce or as is.

BM #88 Week 4 Day 1 -

My brain was working hard to come up with something healthy for a snack when this idea of making Bajra cutlets struck! Actually it all started with me soaking bajra one night confident that I could come up with something  the next day. 

I typically think about making cutlets as they are very forgiving. Anything (?) can be mixed with Potato and bread and the usual masala to make cutlets and they surely turn out good! So my first choice for a healthy snack is to make cutlets. Moreover they are very much favored by kids at home! So here we are with these delicious and healthy cutlets..

Edited - In an attempt to update some old posts which are close to my heart, I am here with some better pictures.




Ingredients - 


Whole Bajra/Sajjalu/Pearl Millet 1/2 cup
Potatoes boiled and mashed 1 cup
Mixed Vegetables (Carrots, Corn, Peas and Beans) boiled 1/2 cup
Bread Slices 3-4
Salt as needed
Mirchi Powder 1/2 tsp or as needed
Garam Masala 1/4 tsp or as needed
Amchur Powder 1 tsp
Coriander leaves finely chopped 2 Tbsp


Method Of Preparation - 


Soak the Bajra over night and pressure cook. Please note that Bajra takes a lot more time to get cooked.  (About 5-7 whistles in the pressure cooker I use).


Gently mash the cooked bajra in a food processor. 


Make a powder of the bread slices. Usually bread is dipped in water and the water is squeezed. The wet bread is then added to the cutlet mixture. In this recipe, it needs to be powdered because the mashed bajra has water in it.


Add mashed potato, powdered bread slices and mashed mixed vegetables in a mixing bowl. Pour the mashed bajra and the rest of the flavorings as needed. Adjust taste as desired. 


Make a stiff dough and pinch a portion of the dough and make a disc (about 2 inches diameter) and set aside. Continue making the discs with the rest of the dough. 


On a hot tava, spray a little oil and spread these discs and cook on both sides until they get golden brown on both the sides.


Serve hot with ketchup or chutney of your choice or as we prefer make a chaat out of these cutlets!

BM #83 Week 3 Day 3 - 

The stuffed cheesy schezwan pav is the ultimate fusion of the both the Indian and Chinese flavors. I can imagine these cheesy pav being served at a street food joint in Mumbai. Mouthwatering view, right?

Trust me on this. The fusion of the flavors is mind blowing. The filling can be prepared in a few minutes and just account for the baking time and a steaming hot and tempting snack is ready.

With this I have presented three Indo-Chinese Street food options (Schezwan Fried Rice, Chinese Bhel with Air Fried Noodles and Stuffed Cheesy Schezwan Pav) and my family has thoroughly enjoyed this theme and I have since made all the three at least 2 times each. Schezwan sauce has now become a permanent resident in my refrigerator.

Note - I shall update the pictures as soon as possible. I had to take them at night and so the quality.

Ingredients - 

Pav buns a pack of 12 (unsliced dinner rolls)
For the Filling - 
Cabbage, finely chopped 1/4 cup
Carrots, finely chopped 1/4 cup
Bell Peppers (all colors), finely chopped 1/4 cup 
Onions, finely chopped 1/4 cup
Salt as needed
Schezwan Sauce 2 Tbsp (or more as per taste)
Green Chilies, finely chopped 1 tsp (Optional - I didn't use)
Topping - 
Butter, melted 3 Tbsp
Spring onion greens, finely chopped 1/4 cup
Garlic, grated 1 tsp


Method Of Preparation -


In a heated pan, add a teaspoon of oil and saute the onions until they are translucent. Add in all the remaining vegetables and saute for a couple of minutes. They should not be cooked just a little to remove the moisture. remove onto a bowl and allow it to cool.

In a mixing bowl, add the sauteed vegetables, shredded cheese, salt and schezwan sauce. Mix them well and adjust the flavors as needed. This is the filling we need to stuff into the pav buns.

In a separate bowl, mix in the melted butter, grated garlic and finely chopped spring onion greens. Set aside.

Place the pav buns on a long aluminum foil (so that it can be wrapped around the pav buns sealing the whole slab of pav buns).

Using a sharp knife, make horizontal and vertical slits from the top on all the buns.

Carefully put the stuffing into the slits making sure it is evenly stuffed in all the slits.


Preheat the oven to 400 °F.  [This can be done on the tawa as well.]

Brush the butter mixture evenly all over the top surface of the buns.

Cover the stuffed pav buns with the foil to seal well.

Place the wrapped foil onto a baking tray and bake it in the middle rack for about 12-15 minutes.


Remove from the oven and carefully unwrap the foil, slice and enjoy while still warm.

Grilled Caprese Sandwich

After a month long Baking Marathon, I took a much needed break and back to the regular posting schedule. Here I am with a new series this week, 'The Picnic Hamper'. 

Now that the weather is improving, my little one has started pestering me for Popsicles , ice creams and the like. In no time she will start asking for picnic hampers for her and her friends. I made these sandwiches without any pepper flakes and she loved it. I think it is a great idea for the picnic hamper, is it not?

Ingredients - 

Bread Slices 4 (I used Honey wheat Bread)
Fresh Mozzarella Cheese 4-5 (1/4 inch) slices
Tomato Slices 4-5
Basil (paste, dried or fresh) as needed
Garlic Salt, Pepper and Red Pepper Flakes as needed
Butter to spread on all the slices


Grilled Caprese Sandwich

Method Of Preparation -


Apply butter to both sides of the bread slices.

On two of the slices, arrange the cheese and tomato slices as needed.

Sprinkle basil, garlic salt, pepper and red pepper flakes. Top with the plain buttered slice.

Heat a grill pan/panini press or sandwich maker. Grill the sandwiches and serve them hot.

Peanut butter banana sandwich

BM #67 Week 1 Day 3 -

Here is a no nonsense and hassle free recipe. If the kids love peanut butter sandwiches, then it is very likely that they will like it with bananas as well. 

Ingredients - 

Bread Slices 2
Peanut Butter and Banana as needed

Peanut butter banana sandwich

Method Of Preparation -


Slightly toast the bread slices, apply the peanut butter on one side of both the slices. 

Arrange the banana slices on the peanut butter and top it off with the other slice.

Grilled Chocolate Sandwich

Week 1 Day 1 of BM #62 - 

The first week of this edition will be all about kid friendly chocolate dishes. There are multiple versions of these sandwiches all over the internet. But these are the ones I found that our kids loved the best. A lot of versions use Nutella as well. So go with what the kids like and make them happy!!

Ingredients - 

Bread Slices 4
Chocolate Chips 2 Tbsp
Butter as needed
Chopped Nuts (I used Almonds and Cashews)


Grilled Chocolate Sandwich

Method Of Preparation -


In a microwave safe bowl, add 1/2 teaspoon of butter and the chocolate chips. Nuke them in increments of 30 seconds whisking them in between until all the chocolate melts.

Spread butter on one side of the bread slices and set aside.

Place 2 slices of bread, buttered side down on a heated grill pan. 

Spread the molten chocolate on the bread slices and sprinkle the chopped nuts. 

Spread the chocolate sauce on the remaining slices and place on top of the chopped nuts. 

Grill them until they are golden brown on both sides.

Slice them and enjoy!

Avocado Open Sandwich

Week 4 Day 2 of BM #60 - 

If you are looking for a healthy breakfast with no fuss, look no further. Breakfast cannot get easier and tastier than this. This works out best if you are out of time and need to grab and go or gulp down breakfast in a few seconds :).

The gulping down of breakfast sounds all too familiar, right? There is no exact recipe here, just follow the idea and go as per the dictates of your tongue.

A slice of this open sandwich, a glass of milk and a few slices of fruit would be an ideal portion if you want to eat healthy.

Ingredients - 

Avocado 1 nos
Whole Grain Bread 4 slices
Cheese (Shredded or single slices)


Avocado Open Sandwich

Method Of Preparation -


Toast the bread slices.

Cut the avocado. Scoop the flesh removing the pit. 

Slice/chop/mince (as per preference)  the avocado.

Spread the avocado evenly on the toasted bread slice.

Sprinkle cheese as needed and serve it immediately.

Apple Walnut Sandwich

Day 2 Week 4 of BM #55 - 

When I saw this recipe at Sneha's space, I was tempted to try it out the same day. I keep an eye out for such simple sandwiches for the times when I am in a time crunch and not in a position to make an elaborate breakfast.

These serve well even as an after school snack. Jalapenos are optional but we liked with them.


Apple Walnut Sandwich

Ingredients - 

Bread Slices 2
Apple, Grated 2 tsp
Cream Cheese, softened 2 tsp
Jalapenos, finely chopped 1 tsp
Walnuts, toasted and chopped 1 tsp

Method Of Preparation -


Slice off the crust from the bread slices.

In a bowl, mix in the cream cheese, grated apple, chopped jalapenos, chopped walnuts.

Apply the cream cheese mixture on to the slices, layer them, slice into required shape and size. Enjoy with fruit and milk.

Grilled Paneer Sandwich

Day 3 Week 4 of BM #52 - 

If you are thinking it is very similar to the Grilled Cheese Sandwich, I would urge you to think again. There is hardly any resemblance between the two. This version of sandwich had a burst of flavors from the paneer, jalapeno and the coriander leaves. 

My husband commented that it is fit for a kid's party if the jalapeno is taken off.


Grilled Paneer Sandwich

Ingredients - 

Bread slices 2
Paneer, grated or crumbled 3 Tbsp
Jalapeno, minced 1 tsp or to taste
Red Bell Pepper, finely chopped 1 tsp
Coriander Leaves, finely chopped 1 Tbsp
Salt and Butter as needed


Grilled Paneer Sandwich

Method Of Preparation -


In a mixing bowl, add grated paneer, minced jalapeno, finely chopped red bell pepper, coriander leaves and salt. toss them gently and set aside.

Butter both the slices of bread on both sides, spread the paneer mixture on one slice of the bread and top it off with another slice and grill/toast until crisp.

Serve it with ketchup for a filling breakfast/snack.
