BM #104 Day 4 - 

These sweet corn boorelu are made out of sweet corn, rice flour and jaggery and trust me when I say these are addictive.

Initially I had Ariselu jotted down for today but when I checked my pictures folder, I found that the pictures were taken in poor light and were in no shape to be used. So I switched gears and made these boorelu and thought they were a good adaptation.

I was in two minds if I should deep fry or shallow fry them and then decided shallow frying to be a better option as sweet corn tends to absorb too much oil. But with 2 tablespoons of oil, I was able to get away with 8 boorelu and about a tablespoon oil left in the pan.

Ingredients -

Sweet Corn Kernels 1 cup (Frozen or Fresh)
Rice Flour 1/4 cup + more as needed
Coconut Powder 2 Tbsp
Jaggery Powder 2-3 Tbsp (Adjust as per taste)
Cardamom Powder 1/4 tsp
*Oil for shallow frying (about 2-3 Tbsp)

* They can be deep fried but I chose to shallow fry them.

Method Of Preparation -

Thaw the frozen kernels, drain any moisture and grind into a coarse mixture without adding any water. [I got about 1/2 cup of the mixture].

In a mixing bowl, Add the sweet corn mixture, rice flour, jaggery powder, coconut powder and cardamom powder.

Mix well and form a stiff dough adding more rice flour as needed.

Pinch 8-10 equal portions of the dough and pat into 2-inch flat discs.

In a flat griddle, add oil and shallow fry the discs so both the sides are golden brown. Please ensure they are fried on low heat.

Remove onto kitchen paper towels to drain the excess oil.

Garnish with chopped nuts and serve warm.
