Mixed Fruit Jam

Week 4 Day 2 of BM #61 - 

Back when I was a child, my mom attended a workshop where she learned to make jams, preserves and the like. She was dishing them out every so often. So when it was my turn to make them at home, she just gave me a broad idea and asked me to try it out. 

But when I looked up online, most of them asked for pectin. I wanted to make it all natural and so digged a little deeper. I then came across that addition of citrus peels is a good way to substitute pectin.

My family loved the home made jam and I am going to make more this summer. I used the fruits I had on hand and they blended in quite well.


Mixed Fruit Jam

Recipe Source amma
Ingredients - 

Papaya, ripe, chopped 3 cups
Plums 2, pitted and chopped
Banana, 1 medium
Apple, peeled, cored and chopped 1 cup
Sugar 2 cups
Lemon Juice 1 Tbsp
Lemon Zest 1 tsp


Mixed Fruit Jam

Method Of Preparation -


Coarsely blend the fruits along with lemon juice and zest. I had about 5 cups of puree.

In a flat bottomed but deep non stick pan, pour the puree and add sugar and cook in medium heat.

Be careful as there will be lots and lots of hot splatters. I partially covered the pot for about 45 minutes and mixed occasionally. (But still ended up with a burn blister :(()

When the splatters almost die down, It is most likely that the jam is ready. The jam should come together as a coherent mass and should be a little firm.

Remove and transfer into a glass jar after it is slightly cool.

Oriya Thali

Day 10 BM #56 -

Today I have a very popular dish from the state of Odisha. Dalma, is a very comforting protein filled dish which has the signature spice of Panch Phtana or Panch Phoran.

As Suma points out in her post, we also felt the lack of a tangy agent in the dish. I read that in a typical Oriya Thali, there is always green chili, lemon wedges and salt placed. So I guess these things can balance any taste preferences, right?

Ingredients - 

Toor Dal 3/4 cup
Vegetables, chopped (I used raw papaya, plantain and pumpkin) 2 cups
Ginger, grated 1 tsp
Salt, Turmeric, Red Chili powder, cumin powder, sugar as needed
Garnish with fresh coconut and cilantro
Seasoning (Ghee 2 tsp, Panch Phoran 2 tsp)


Dalma

Method Of Preparation -


Pressure cook toor dal and the vegetables adding ginger and turmeric and about 2 cups of water.

Prepare the seasoning. Heat the ghee and add the panch phoran. After the spices splutter, transfer the seasoning into the cooked dal.

Add salt, red chili powder and cumin powder as needed and let it simmer for a few minutes.

Remove from heat. Garnish with fresh coconut and cilantro and serve hot with rice.

Papaya Salad - Vegan

P for Papaya Salad aka Som Tam, a Salad from Thailand. So this qualifies under the International Cuisine for BM #32.

My sister told me about this salad which happens to be their favorite from a local Thai food joint. That was when I scoured the web to arrive at a combination which we loved a lot. I have since prepared this salad umpteen number of times.

The fact that it is low sodium (barring the sodium in Soy sauce) with the goodness of papaya and carrots makes it a really healthy option. Apparently it is a very popular street food in Thailand.


Papaya Salad - Vegan

Ingredients - 

Green Papaya , peeled, seeded, jullienned 2 cups
Carrots, peeled, jullienned 1/2 cup
Tomato, cut into strips 1/4 cup
Beans, french cut, steamed 1/4 cup (Optional - I didn't use)
Spring Onions, finely chopped 2-3 Tbsp (I omitted)
Coriander leaves, finely chopped 2 Tbsp
Garlic, minced 1 clove
Dressing - 
Lemon Juice 1 Tbsp (or as needed)
Soy Sauce 1 Tbsp (or as needed)
Garnish - 
Peanuts, roasted handful
Crushed pepper as needed

* Add some moong sprouts for an extra burst of flavor. 
*Add crushed green thai chillies for an extra spicy salad!


Papaya Salad - Vegan

Method Of Preparation -

Mix all the ingredients together in a bowl, drizzle the seasoning and garnish with peanuts and crushed pepper as needed.

Serve immediately.

What is there not to like in Carrot Halwa? Okay, there is sugar and the ghee component. But then if they are controlled, we all can indulge once in a while, don't you all agree? So to make it much more healthier, I sneaked in raw papaya and trust me, no one can tell the difference!

That is what I did and the kids polished the bowl leaving me spell bound!!

For Day 6 of BM 10, it is this delectable Halwa. While here check what my fellow marathoners are up to in this edition of Blogging Marathon.

Papaya-Carrot Halwa

Ingredients -


Raw Papaya grated 3 cups
Carrot grated 1 1/2 cups
Sugar 1/2 cup [use as per taste]
Milk/Mawa Powder 1 cup [could use khoya/khova instead]
Milk 1/4 cup [adjust according to need]
Cardamom Powder 1 tsp
Ghee 1 Tbsp [[use more if preferred]
Roasted nuts for garnish


Papaya-Carrot Halwa

Method Of Preparation -


In a non stick kadai / sauce pan or wok, add 1 tsp of ghee and fry the papaya and carrot until the raw smell disappears. (about 5-7 min)


Add sugar, mawa powder, milk and keep stirring until the halwa, while adding the remaining ghee.


Sprinkle cardamom powder and remove from fire when the halwa comes together as a single mass.


Garnish with roasted nuts for a great dessert!

Papaya Curry was made almost for the first time in my kitchen the other day. The recipe was shared by Jaya (read : Jaya's MIL) and the thought of adding the ingredients which she told me made my mouth water. So I had to try it out. I put aside all my apprehensions that papaya generates lot of heat etc etc..and the next veggie-shopping trip surely saw me get home a green papaya. S helped me peel, remove the seeds and the white center portion and also grated it for me. He likes to take the credit for the delicious curry :) on a rare occasion that he helps me in the kitchen!! The taste of this curry somehow reminded me of Mamidikaya Pulihora, as the spices are almost the same. The tangy flavor of tamarind gave this curry a unique flavor and sure is a winner, hands down!!


Papaya Curry


Ingredients - 


Papaya grated 5-6 cups (medium size papaya)
Green Chillies Chopped 2-3 
Tamarind Juice 2 Tbsp
Turmeric 1/4 tsp
Salt to taste
Seasoning (Oil 2 tsp, Chana Dal 1 tsp, Urad Dal 1 tsp, Jeera 1/2 tsp, Mustard seeds 1/2 tsp, Dry Red Chillies 1-2, Curry Leaves few)


Method Of Preparation - 


Boil Papaya (al dente) in the microwave or stove top. Squeeze out the extra water and set aside.
Papaya Curry




In a wok/kadai, add oil and the rest of the seasoning. After mustard seeds pop and the dals are brown, add the papaya, turmeric and green chillies.


Stir well and squeeze in the tamarind juice and mix in salt as per taste. 


Remove from fire and serve it warm with rice/roti.

Serves 4 Adults

I almost stopped buying jam for my son since he never really liked it and also I didn't want to invest in the artificially flavored so-called fruit jams for my family. So, when my MIL said she would show me how to make jam at home, I was more than happy to learn. I still remember my mom used to make different kinds of jams and jellies at home but it didn't really strike me that I could make it on my own. The natural flavors of the fruits especially that of Papaya made it very appealing. Added to this was that it was such a simple process.


Ingredients -
Papaya 1 medium (peeled, deseeded and cubed)
Banana 2
Apples 3 (peeled, cored and cubed)
2 cups of sugar
Mixed Fruit Essence (Optional)

Method of Preparation -

Boil all the cut fruits with very little water in a pressure cooker and grind the mixture (or mash them into a paste) when cool so there are no lumps.

In a wide pan, boil sugar and water till it reaches one-string consistency. Add the fruit paste into the sugar syrup and stir slowly till it comes together into a thick mass. You could alternatively add just sugar into the fruit paste and boil them till it thickens instead of making a sugar syrup.

Add the mixed fruit essence to get a nice flavor and if needed some color too. If you are not comfortable with adding the essence and the color, you could just skip this step.

Cool the mixture and remove it into a glass container. Refrigerate it as you would do with any jam and enjoy!

Preparation and Cooking Time : 1 hr
Makes approx. 3 Cups
