This version of Chayote Squash/Chow Chow curry has been devised by yours truly at the spur of the moment. I was hard pressed for time and was looking in an almost empty refrigerator and had to come up with something as an accompaniment to Methi Theplas. It was polished off the bowl, and I made a note of the ingredients because I knew this would be in demand very soon. Whatever did I know that I would have to prepare it the very next day! I took the pictures also the next day :) 


Chow Chow Tomato Curry


Ingredients - 


Chayote Squash/Seemavankaya/Chow Chow Cubed 2 cups
Onion Chopped 1/2 cup
Tomato chopped 1 Cup
Green Chillies 1-2 (or to taste)
Turmeric 1/2 tsp
Coconut (Fresh or Dry) 1 Tbsp
Dhania-Jeera Powder 1 tsp
Curry Powder 1 tsp (I used Store bought)
Salt to taste
Seasoning (Oil 2 tsp, Chana Dal 1 tsp, Urad Dal 1 tsp, Jeera 1/2 tsp, Mustard Seeds 1/2 tsp, Curry Leaves few, Red Chillies 1)


Method Of Preparation -


Boil the cubed Chayote either on the stove top or in the microwave. (I cooked for 4 min in the microwave).


In a heated wok/saucepan, add oil and the rest of the seasonings . After the mustard seeds crackle and the dals get a golden brown hue, add the chopped onion and saute till they are brown.


Add in chopped green chillies and tomatoes and let the tomatoes get mushy.


Add coconut and turmeric and stir well. Add the boiled chayote and sprinkle the curry powder.


Mix well and cook for a minute or two (more if the chayote isn't tender enough).


Chow Chow Tomato Curry


Garnish with chopped coriander leaves and serve warm with roti/rice.
