For Day 3 Week 1 of BM #18, I made these impromptu sweet ponganalu which disappeared in a blink of an eye!
I wanted to make these with carrot but then I saw some sweet potatoes which I thought needed my attention and so made these. These tasted very rich and crispy and melt in the mouth!!
Ingredients -
Idli Batter 2 cups
Oil as needed
For the Filling -
Sweet Potato grated 1 cup
Sugar 1/4 cup
Almond Milk 3 Tbsp
Cardamom Powder 1 tsp
Method Of Preparation -
To prepare the filling - or make Sweet Potato Halwa
Cook the grated sweet potato with the almond milk in the microwave until tender (about 5-6 min).
Add sugar and cardamom powder to the mix and continue to cook in the microwave for another 7-9 min in 1 min intervals stirring in between.
It would come together as a single mass. Make 15-18 portions of the filling and set aside.
To Prepare the ponganalu /paniyaram -
In a heated paniyaram pan, add 1/2 tsp oil in each of the slots and reduce the flame.
Add 1/2 tablespoon of batter and push in one portio of the filling and cover it up with some more batter.
Fill in all the slots and cover. When the undersides are brown flip them and cook for a few seconds if needed.
Continue with the rest of the batter to make as many as possible with the batter and the filling you have on hand.
Enjoy them warm and crispy!
