Soy Chunks Kurma

I have chosen to 'cook with alphabets' for the second week of BM #25. We have been given a choice of few selected combination of Letters and I am going with S, G and N. 

This kurma is a life saver when I run out of veggies. :) Check it out. I keep changing the gravy as per my mood but most often this is the formula I stick to.

Ingredients - 


Soy Chunks 1 cup
Onion sliced 1/2 cup
Tomatoes Chopped 1/2 cup + 1/2 cup Pureed
Walnuts 5-6
Almonds 5-6
Ginger-Garlic Paste 1 tsp
Tomato Ketchup 1 tsp
Kashmiri Mirchi Powder 1 tsp
Dhania-Jeera Powder 1/2 tsp
Garam Masala 1/2 tsp
Turmeric 1/4 tsp
Salt as needed
Seasoning (Oil 1 Tbsp, Shajeera 1/2 tsp, Cloves 4-5 , Cinnamon 1 inch, cardamom pods 1-2, Bay leaf 1)



Soy Chunks Kurma

Method Of Preparation -
For the gravy -
Saute the sliced onions in 1/2 tsp oil in a hot sauce pan and keep them aside.

Roast walnuts and almonds and make a paste of them along with the sauteed onions and chopped tomatoes.



For the curry - 
Soak the soy chunks in boiling hot water for 30 min.

Wash in cold water and squeeze out the water. Set aside.

In a hot sauce pan, add oil and the rest of the seasoning. Add the Ginger Garlic paste and Saute for a few seconds.


Add turmeric, mirchi powder and dhania-jeera powder and a splash of water. Mix well and then add the gravy paste. Also mix in the tomato ketchup. Add about 2 cups of water to make it a little runny.


Add the soy chunks and salt, cover with a lid and let the soy chunks absorb the flavors.


Sprinkle the Garam Masala and adjust the taste as required and remove from fire.


Serve it hot with Roti/Naan/Pulao/Biryani.
