I am proud to be a part of this Blogging Marathon Group who have consistently been together for about 25 months now. Srivalli deserves a huge round applause for steering this group to adapt to our changing needs. Though I have been absent for a few months due to personal reasons, I am glad to back for this special edition.

For the next 3 days I shall blog my kid's favorite 'Lunch Box Recipes'. I am sure these are very easy to make, no-nonsense kind of everyday recipes which all moms make at home. We all know our kid's preferences and cook according to their tastes as we just long to see those smiling faces morning, noon and night! Here is a simple combo of Chapati and Chana Masala which very often goes into my older one's lunch box. Whereas the little one is happy with a little yogurt with chapatis!


Chapati with Chana Masala


Ingredients - 
For Chapati - 
Wheat Flour 1 cup (I used Aashirwad brand Whole Wheat flour with multi grains)
*Beaten Yogurt as needed
Salt as needed
Oil / Ghee as needed

* I sometimes use milk instead of beaten yogurt. This is just another way to sneak in some additional calcium !

For Instant Chana Masala -
**Pre-cooked Chana or canned Garbanzo beans 1 cup
Onions chopped 1/2 cup
Ginger Garlic Paste 1 tsp (Optional)
Tomato Chilli Sauce 1 Tbsp (or any tomato based sauce)
Punjabi Chole Masala as needed
Salt as needed
Turmeric 1/8 tsp
Red Chilli Powder as needed (Optional)
Seasoning (Vegetable Oil 1 Tbsp, cumin seeds 1/2 tsp)

** I usually soak, pre-treat and cook the beans and freeze them upon cooling so I have them available instantly.

Method Of Preparation -
To make Chapatis - 
Knead the chapati dough adding salt and beaten yogurt to make a suitably soft dough, cover and set aside for 10-15 min

Make 5-6 equal portions of the dough.

For each of the portion of dough, roll into a thick disc, apply oil, fold the disc into semicircle and then a triangle. This will ensure some layers in the chapati.

Roll each of the oiled dough triangles sprinkling wheat flour into slightly thin chapatis and gently place on a heated griddle/tawa.

After bubbles appear on the heated chapati, flip onto the other side, spray/apply oil or ghee and gently press with a ladle and allow it to puff up as much as possible.

Flip it again spray oil /ghee , make sure it is cooked on both the sides and remove from fire. I like to store them in a hot case to retain their warmth and also keeps them soft.

Continue for the rest of the dough. 

To make Instant Chana Masala - 
In a heated pan, add oil and cumin seeds. After the cumin seeds are brown, saute onions until they are translucent.

Add the tomato-chilli sauce, the precooked chana salt, turmeric and chana masala and mix well for a few minutes and remove from heat.

Off they go into their respective boxes to be devoured by the kids at school!

  24. As you said, no nonsense kind and breezy for moms if everything is prepared in advance. My 11 year old acts like a toddler when it comes to side dishes for lunch box and so I try to incorporate veggies / dal in the roti dough itself.
