Homemade Rava Idli Mix

For Day 3, week 1 of BM #37, Here is a life saver for the weekday morning rush.

I have taken refuge in this simple homemade mix umpteen number of times over the past few years. This mix stays good for about a month in the refrigerator (I haven't tested beyond a month :) ). 


Homemade Rava Idli Mix

Ingredients - 

Sooji / Bombay Rava / Semolina 1 cup
Onions, finely chopped 1/4 cup
Carrots, grated 1/2 cup (Any other vegetables can be added)
Nuts, chopped 2 Tbsp (I used almonds and cashews)
Salt as needed
Ginger, grated 1/2 tsp
Green Chillies, minced 1/2 tsp (or as needed)
Coriander leaves, finely chopped few
Seasoning (Oil 2 tsp, Mustard seeds 1/2 tsp, Urad Dal 1 tsp, Chana Dal 1 tsp, Jeera 1/2 tsp, Asafoetida 2 pinches, Curry leaves few)

* Note that the vegetables and nuts are all optional. They just make it tastier and add more nutrients. :)


Rava Idli

Method Of Preparation -

In a heated pan, add oil and the rest of the seasoning ingredients.

After the mustard seeds crackle, saute the onions until golden brown. Also add the shredded carrots, grated ginger, minced green chillies, coriander leaves and chopped nuts.

Saute all of them until they are cooked through.

Add the Sooji/Rava and saute until it changes color.

Add salt, mix and remove from fire.

Upon cooling, transfer into an air tight container and refrigerate for further use.

When ready to use, add a pinch of baking soda/ENO fruit salt and mix the batter with buttermilk/yogurt. Pour into idli moulds and steam for 15 min. Let it cool for a few minutes and serve with a chutney of your choice.
