My kids are fond of Cauliflower and so it is often cooked in many forms. It so happened that we had too much of cauliflower at home and they were all bored eating the same thing again and again.
Even after freezing a portion of cauliflower I had to think about using the rest of it. I looked up my bookmarks and other resources for inspiration/ideas when I found this.
These bread sticks were a little too cheesy for my taste but the kids and the husband did full justice to these.
So for Day 1 Week 4 of BM #43, here is a bookmarked recipe which is also a kid approved one.

Ingredients -
Cauliflower , Florets about 1 1/2 cups
Cheese, shredded 1 cup
Tofu, pureed 3/4 cup (I used extra firm tofu)
Oregano 1 tsp
Garlic Salt 1/2 tsp
Olive Oil 1/2 tsp
I was tempted to add some pepper flakes but didn't add as per the kid's request!
Method Of Preparation -
Steam the cauliflower florets for about 5-7 minutes. Grated them into a mixing bowl.
Add the pureed tofu, shredded cheese, oregano and garlic salt and mix well.
Preheat the oven to 425 °F. With an oiled hand, pat the mixture into a 3/4 inch rectangle on a parchment lined baking tray.
Bake for about 30 minutes or until the top layer is browned.
Slice using a pizza cutter. Be careful as the bread sticks are not as firm as the regular flour bread sticks. They firm up as they cool.
Serve warm with a sauce of your choice.

Makes 10 -3 inch sticks

Cauliflower is my husband's favorite though the rest of us manage to eat it. :) The sticks are looking so appealing that it may become our favorite too.
BTW what variety cheese did you use?
And we enjoyed your roti sandwich bites. I tried with peas parathas and just added salt and chili powder to besan. Everyone loved it.

What a delicious treat harini, I love cauliflower too and wanted to make a pizza with it for the low cal theme, the base didn't stay put as I was in a hurry!..this sounds so wonderful..and a great way to sneak it to the kids..:)
