BM #67 Week 4 Day 2 -
For today, check out one of my favorite versions of the curry. It takes me down the memory lane as I have grown up eating this version of carrot fry (or dry curry let's say). My mom used to have peanut powder separately in a box just for us, as my dad avoids any kind of 'extras' in the curries.
So now I make the version I like for my kids and they love it too!!

Ingredients -
Carrots, grated 3 cups
Salt, Turmeric, Red Chili Powder, Sugar as needed
Seasoning (Oil 2 tsp, Chana dal 2 tsp, Urad Dal 1 tsp, cumin seeds 1/4 tsp, Mustard seeds 1/2 tsp)
To Grind -
Roasted Peanuts 3 Tbsp
Coriander leaves few
Curry leaves few
Dry Coconut Powder 1 tsp
Method Of Preparation -
In a heated pan, add oil and the rest of the seasoning. After the mustard seeds pop and the dals are golden brown, add in the grated carrots.
Saute the carrots until they are tender but still retain the bite.
Meanwhile coarsely grind the ingredients listed under 'To Grind'.
Sprinkle the Peanut mixture into the carrots. Sprinkle salt, turmeric, sugar and red chili powder as needed.
Mix well and remove from heat.
Serve warm with rice.

Never tried adding peanuts with carrot, this curry sounds excellent to enjoy with some rotis.Thanks for sharing.
I agree with Priya.. never tried that ground peanut masala. but i bet it would have been a great combo. thanks for the idea.
