BM #99 Day 3 - 

This is a flavorful adaptation of our traditional coconut rice or Thengai saadam as it is called in Tamil.

We are slowly trying to replace out rice intake with millets and in that process trying out the traditional dishes replacing the rice with different variety of millets.

It is sometimes getting difficult for us to source different millets but Foxtail Millet is always available in health food stores (like Whole Foods and Fresh Thyme). 

Ingredients - 

Fresh Coconut, shredded 1/2 cup + more if preferred
Foxtail Millet / Korralu / Thinnai 1 cups 
Salt and Green Chilies as needed
Seasoning (Coconut Oil 1 Tbsp, Mustard seeds 1 tsp, Chana Dal 2 tsp, Urad Dal 1 tsp, Cumin Seeds 1/2 tsp, Peanuts few, Cashews few, Asafoetida 2 pinches, Curry leaves few, Red Chilies 2)


Method Of Preparation -

Soak the Foxtail Millet for at least 4 hours. Cook the millets in about 1 1/2 cups of water either in pressure cooker or on stove top until the millets are cooked through and fluffy. I cook them in the Instant Pot for 4 minutes on Manual or Pressure cook mode.

Spread the cooked millets on a wide platter to cool.

In a pan, heat oil and add the rest of the seasoning ingredients. After the dals and nuts are evenly browned, add the coconut, green chilies and salt. Saute for a minute (just to warm the coconut a little). Remove from heat.

Mix in the coconut and seasoning mixture into the rice and mix well.


Adjust the flavors if needed and the coconut rice is ready to be served.
