BM #100 Week 2 Day 3 -

To end this series of recipes starting with the letter 'B', I have here black bean burger patties which I make ahead and freeze so my kids have home made burger patties when the craving for a burger strikes them.

I am sorry for the picture of the frozen patties as I seem to have misplaced the actual pictures. The actual burger picture was found in my phone so I didn't have to assemble the burger for this post again. I pulled out the frozen patties and took a picture for this post :).

Ingredients - 

*Black Beans soaked, pre treated and boiled 1 - 1 1/2 cups
Rolled Oats coarsely ground 1/2 cup
Onions finely chopped 1/2 cup
Bell Pepper/Capsicum finely chopped 3 Tbsp
Almonds Crushed 1/4 cup
Garlic 1 clove + Green Chillies 4 crushed
Salt as needed
Flax meal 1 Tbsp + warm water 1 Tbsp
Oil 1 Tbsp
Cumin seeds 1/2 tsp
For the Burgers - 
Buns as many as needed
Mustard, Mayo, Hot Sauce, Guacamole, Cheese, Onion slices, Tomato slices as needed (Add the condiments as per preference).

*Canned Black Beans also work - Just rinse and dry the beans. Baking the rinsed beans for about 10 minutes to make them dry faster is also a great idea.

I added 1/4 cup of roasted gram powder as I felt the dough was a little runny. 


Method Of Preparation -

Mash the boiled/baked black beans.

Coarsely crush the rolled oats and almonds.

Powder flax seeds and mix in 3 tablespoons of warm water and set aside for a couple minutes.

In a heated pan, add oil and cumin seeds. Saute onions until they are translucent and saute bell peppers for a minute or two.

In a mixing bowl, add the mashed black beans, the sauteed onions and bell peppers. Add in salt, crushed garlic, crushed green chilies, crushed oats and almonds.

Knead to make a stiff dough. [I added some roasted gram powder as the dough was a little runny].

Divide into 10-12 equal portions. Shape each portion into a patty.

In a heated griddle, drizzle oil and shallow fry the patties on both sides until they are golden brown.

Remove from heat and assemble the burgers.


The patties can be frozen and reheated when needed.

To assemble the burger, toast the burger buns, place the bean patty on the base, drizzle the condiments, layer the vegetables using, top it with the other slice and serve.

BM #98 Week 2 Day 2 - 

For the second day, I have chosen this variation of a Burrito bowl with cauliflower rice.

We love such Burrito bowls where the components are all customizable. I have observed that my kids don't complain about the beans in such bowls. The kids love when the bowl is arranged with vibrant colors. 

My older one felt the spices a little bland to her taste and so I drizzled some hot sauce in her portion whereas this was perfect for my little one. Needless to say the adults needed some hot sauce as well.

This made for a wonderful weekend lunch.

Ingredients - 

Cauliflower Riced 1 cup
Black Beans, cooked 1/2 cup
Sweet Corn 1/2 cup

Mukimame 1/2 cup (I found these shelled edamame in the freezer section of the local grocer)
Guacamole 1/2 cup
Lettuce, chopped 1/2 cup
Salsa 1/2 cup

Onions thickly sliced 1/2 cup
Bell Peppers sliced 1/2 cup (I used only the red peppers)
Lime wedges as needed
Cooking Oil as needed
Spices as needed 
[I used Garlic Powder, Salt, Onion Powder, Cumin Powder, Paprika, Red Chili Powder]




Method Of Preparation -
To Prepare the Riced Cauliflower - 
Wash and grate or pulse cauliflower florets in a processor until they are riced. 

Steam the riced cauliflower until they are soft. [I cooked them in the microwave for about 2 minutes.]

In a heated pan, add a splash of oil, add the steamed cauliflower rice. Saute for a minute. Sprinkle Salt, Cumin Powder, Salsa and chopped cilantro. Mix well and remove from heat.
To Prepare the Black Beans - 
Wash, soak and cook the black beans with sufficient water. Or rinse the canned black beans.

In a small pan, add oil and toss the cooked black beans, season with salt, red chili powder and lime juice or any other flavors which you prefer.

Stir Fry the Onions and Peppers - 

In a pan on high heat, add a splash of oil and stir fry the onions until they are slightly charred but retain their crispness. 

Add in the red peppers and saute for a couple minutes. Sprinkle Salt, Onion Powder, Garlic Powder and Paprika. 

Toss them well. Remove from heat.Other Ingredients - 
Steam the sweet corn, mukimame and season as needed.
Get the guacamole ready.
Chop lettuce as needed.


Assemble the Burrito Bowl with all the components - In a bowl, add a portion of cauliflower rice, black beans, sauteed peppers and onions, guacamole, Salsa, lettuce, corn and mukimame. A splash of lime hot sauce are highly recommended. Serve immediately

BM #98 Week 2 Day 1 - 

This week I have chosen to explore the breakfast, lunch and dinner ideas from Mexico.

Our family is a great fan of Mexican food and so I thought to introduce them to other Mexican foods other than the Tacos and Tortilla Chips - Salsa they so frequently enjoy.

I found these breakfast tacos to be very filling and perfect for a lazy weekend breakfast/brunch. It is totally customizable and it can be personalized by each person. 

I let the kids personalize their tacos and you don't want to know how messy the platter and the dining table got :).

Ingredients - 

Tofu 4 ounces
Black Beans, cooked 1/2 cup
Sweet Corn 1/2 cup
Guacamole 1/2 cup
Lettuce, chopped 1/2 cup
Salsa 1/2 cup
Whole Corn Tortillas 4
Lime wedges as needed
Cooking Oil as needed
Spices as needed 
[I used Garlic Powder, Salt, Onion Powder, Cumin Powder, Paprika, Red Chili Powder]


Method Of Preparation -


To Prepare the Tofu Crumble - 
Drain the tofu and wrap in paper towels and put under a heavy skillet or pan and set aside for a few minutes so the tofu is drained out of any liquid.

In a pan, add oil and crumble the tofu. Saute for a few minutes until it turns golden brown.

Sprinkle salt, garlic powder, onion powder, cumin powder and red chili powder. Add about a teaspoon (or more) of salsa.

Mix well and cook for a few more minutes. After the tofu crumbles are coated with spices, remove from heat.

To Prepare the Black Beans - 
Wash, soak and cook the black beans with sufficient water. Or rinse the canned black beans.

In a small pan, add oil and toss the cooked black beans, season with salt, red chili powder and lime juice or any other flavors which you prefer.

Other Ingredients - 
Steam the sweet corn and season as needed.
Get the guacamole ready.
Chop lettuce as needed.
Warm the Tortillas on a hot griddle or in the microwave.

To Assemble the Breakfast Tacos - 

In a serving platter, arrange the corn tortillas, put in each of the components. Black beans, Tofu crumble, Corn, lettuce, salsa, guacamole and a squeeze of lime juice.

Wrap each of them and serve immediately.

Bean Burrito

A new month and so a new edition of Blogging Marathon. For Week 1 of BM #46, I have chosen to highlight some kid's lunch box recipes with Nuts and Legumes.

My little one cannot take nuts as a snack to her class due some nut allergies in her class. But apparently, there is a nut free table in their lunch room. So I do send some nuts in some form or another in her lunch box. But today's recipe is nut free but has legumes in them!!

Coming to the Bean Burrito, both my kids refused to take it in the lunch box but my neighbor's kids take them happily. But my kids loved these bean burritos for their after school snack and dinner. So make these burritos as dry as possible to avoid the tortillas getting soggy and individually foil wrap them.


Bean Burrito

Ingredients - 

Tortillas / Rotis
For the filling - Any or all of them as per availability/preference
*Cooked Red Kidney Beans/Black Beans
Guacamole or Avocado slices
Lettuce, Shredded
Onion, finely chopped
Bell Peppers, All Colors
Tomato, de-seeded and finely chopped
Cooked Rice (I didn't use)
Shredded Cheese 
Boiled Corn

If not using for a lunch box, mix in the sauces (Taco Sauce, Hot Sauce, Fire Sauce as needed) and sour cream 


Bean Burrito

Method Of Preparation -

Prepare the beans - 
Saute onions, tomatoes and half a cup of colored peppers add in the cooked beans, salt, paprika and 1 tablespoon of Taco Seasoning. 
Prepare the Peppers -
Saute sliced onions and sliced colored peppers. Sprinkle salt and taco seasoning. Remove from heat.
Prepare the corn - 
Saute corn until they are slightly blistered. Season with salt and pepper.

Warm the tortilla on both sides. Apply guacamole on one side of the tortilla. Arrange the ingredients of the filling as required, roll it and if needed heat it again until the cheese melts.


Preparation Time 10 min
Makes as needed

Black Bean Quesadilla

After a lot of deliberation, I finally tried out these Quesadillas (pronounced as kesediyas) and we have fallen in love with these protein packed powerhouses. 

I had a misconception that these are filled with cheese and so avoided it for so long. Thanks to this Blogging Marathon, I looked into the various varieties of Quesadillas and figured out that my family will take to these happily and I was so right!!

A few months back when we were introduced to Chipotle, a Mexican eatery Chain, we got hooked onto this veggie Bowl. I have since been making this at home often by varying the toppings/veggies as per availability at home.

I found that picky eaters at home are easily satisfied and it can be a very balanced meal as well.

'Picnic Foods' would be the theme for the fourth day of this BM #6 session 2. These black beans are sure packed with lot of protein, more fiber and less fat too. I heard / read that these black bean burgers are made for Father's day and are the preferred ones for a Father's day picnic. Surely a filling picnic food at that!! Though we don't follow the tradition of going to father's day picnics, I thought we could make these at home and enjoy the spirit of Father's day at home! I have heard that lot of Vegetarians make these in the open air grills installed at the local picnic spots / parks. So upon googling I came across many websites with different formulas for these Vegan Black Bean Burgers. Here is something I came up with ..


Vegan Black Bean Burger


Ingredients - 


Black Beans soaked, pre treated and boiled 2 cups
Rolled Oats coarsely ground 1/2 cup
Onions finely chopped 1/2 cup
Bell Pepper/Capsicum finely chopped 3 Tbsp
Carrot Grated 3 Tbsp
Garlic 1 clove + Green Chillies 2 + Coriander leaves few paste 2 Tbsp
Salt as needed
Oil 1 Tbsp
Cumin seeds 1/2 tsp
For the Burgers - 
Buns as many as needed
Mustard, Mayo, Hot Sauce, Onion slices, Tomato slices as needed


Black Bean


Method Of Preparation  -


In a wok/kadai heat oil and add cumin seeds. After they brown a little add the onions and saute them until golden brown.


Add the finely chopped capsicum and grated carrot and saute for a couple of minutes. Add in the Garlic-Green Chilli-Coriander leaves paste and salt and mix well.


Coarsely grind the cooked black beans and transfer into the veggie mix. Also add in the coarsely ground oats and mix well.


Remove from fire and let it cool. Ensure the mixture is stiff and not runny. If it is runny add some bread crumbs and if it is too stiff add some hummus or tomato ketchup.


Once the mixture is safe to touch, take a ping-pong ball sized mixture and flatten it into a disc.


Heat a griddle/tawa and spray some oil and place these flattened discs and let them cook on both sides. Though the 'traditional' way of cooking these patties would be on the grill!


Vegan Black Bean Burger


Finish making all the patties and the biggest advantage of these patties is that they freeze pretty well. Store the unused cooked patties in a ziplock bag (in the freezer) and use it within a month.


Assembling the Burger - 


Toast the Buns (Optional).


Apply Mayo, Mustard, hot sauce or any other spread which is preferred.


Arrange a few tomato slices, cucumber slices on the base of the bun, place the cooked Patty and place the top of the bun and munch away or pack it up for the picnic!!
