I was looking for options to prepare chutney for a busy weeknight and was disappointed to see an empty refrigerator with a couple of zucchinis and about half a tomato staring at me. So I went by my instincts and made chutney out of zucchini, onion, tomato and the usual spices. I felt that coriander leaves and garlic made a great deal of difference. We felt that it tasted like Green Tomato Chutney. So try it and let me know if you differ!
Ingredients -
Zucchini cubed 2 cups
Onions chopped 1/2 cup
Tomato chopped 1/4 cup
Green chillies 2-3 or as per taste
Salt to taste
Turmeric 1/4 tsp
Coriander leaves handful
Garlic pods 2-3 (optional)
Tamarind juice / Lemon juice as per taste (I didn't add)
Seasoning (Oil 2 tsp, Urad Dal 2 tsp, Jeera 1/2 tsp, Methi Seeds a pinch, Mustard 1 tsp, Hing couple pinches, Red Chillies 1-2, Curry leaves few)
Method Of Preparation -
In a heated sauce pan, add oil and the rest of the seasoning ingredients. After the Urad dal starts to brown and the mustard seeds begin to pop, add green chillies and onions.
Saute them until the onions change color. Add Tomatoes and cook till they are mushy.
Add the chopped Zucchini and let it cook al dente.
Add turmeric, salt , chopped garlic pods, chopped coriander leaves and remove from fire.
Gently mix them and grind them upon cooling.
Some like to top it off with another round of seasoning but I didn't.
I served it with Poha-Quinoa-Oats-Uthappam and later with hot rice and Palak Dal..yumm..

Zucchini pachadi is one of my fav..Would love to have some with hot steaming idlies..delicious!
