I have been experimenting with oats in idlis for a long time now. I tried it with Wheat Rava, Quinoa, Couscous and now it is the turn of just plain oats and sooji/semolina. These are just different versions of the typical Rava Idli we are used to and therefore are all very well appreciated at home. Inspiration for this version of Idli comes from here. Each one of them results in a different texture but the same yummy taste.
I hope the healthy idlis with the carrot garnish will cheer up my mood today. The day started off real bad and I don't like it that way(who does, right?). I got up late (blame the lousy weather), spilled the breakfast milkshake all over the kitchen floor and my older one had to go without breakfast to school (can't digest that!) as she was getting late too , then got late to the little one's school (by 3-4 min , but still I can't accept being late). Hoping for a decent day today..

Sooji/ Bombay Rava/ Semolina 3/4 cup
Yogurt/Curds 2-3 cups
Baking soda 1/2 tsp
Carrots grated 1/2 cup
Green Beans finely chopped 1/2 cup
Cashew bits 2 Tbsp (Optional)
Coriander leaves finely chopped 2 Tbsp
Green chillies 1-2 (as per taste)
Salt as per taste
Seasoning (Oil 2 tsp, Chana dal 1 tsp, Urad dal 1 tsp, mustard seeds 1/2 tsp, jeera 1/2 tsp , curry leaves a few, Asafoetida/Hing 1/8 tsp)Method Of Preparation -
Grind Rolled oats to a coarse powder.
In a heated skillet, add oil and the seasoning and after the mustard seeds splutters, add the grated carrot, beans and finely chopped green chillies. [Toast the cashew bits too in the mix.]
After the carrots are sauteed, add the coarsely powdered oats and the sooji and fry until the powder changes to a light brown color.
Switch off the flame and in a mixing bowl, transfer the contents of the skillet and let it cool.
After a few minutes (5-6 min) add the baking soda and mix well. Then add curd and water and mix well to make a batter (like idli batter).
Leave the batter aside for 10 min. Mix in the coriander leaves too.
Grease the idli plates and put a ladle-ful batter into each of the moulds and steam them for 15-20 min.
Check to see if the idlis have cooked well. The idlis shouldn't stick to the spoon. If it feels a little sticky, steam it again for 5-10 min.
Upon cooling a little, take them out and enjoy with chutney of your choice. We enjoyed with peanut chutney!
